烤蛋糕

• 1/2 cup butter

• 1/2 teaspoon vanilla extract (if you like the flavor, otherwise, none)
" b/ G/ h- f. f" D& S7 Y• 1 1/2 cups sifted flour or all purpose flour (former is better)

Beat butter; gradually add sugar, beating until light and fluffy. Beat in vanilla. Sift together the dry ingredients; add to cream mixture alternately with beaten eggs, beating well after each addition.
% l1 S4 t% ?/ rTurn into greased and floured 8-inch tube pan or 9 x 5 x 3-inch loaf pan. & |( S8 Y: W5 o& q' d" P% J" x
Bake in a preheated 350° oven for 45 to 50 minutes. Cool for 5 minutes in the pan then turn out onto a cake rack. Cool and glaze or frost as desired. Store tightly covered.) r& y9 K8 W! t% ~

这是yellow cake,我最喜欢的,又简单。ingredients 我一般比较严格执行,否则变味,但是我通常要把糖的用量减至3/4到2/3,洋人用糖量太大,太甜了。但如果你认为cake mix的甜度适合你的口味,就用上述的量。- g/ h3 u9 ^5 Z e1 z
beating,要用mixer, 一般的$10左右的hand mixer 就可以。烤蛋糕,面包,或做土豆泥等都用得上。
