Beef with Broccoli

Beef with Broccoli

Ingredients:
( u$ M1 V: h6 P4 H* w* D% i. L3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces# y2 T/ Z& p8 ^! t2 ?- X

% [  w4 S( K1 \9 S+ k$ eMarinade for Beef: 1 J& i8 l& ^7 x0 Q* O, U9 `
1 egg
4 e- o: n+ h5 n- P6 m1/3 tsp (1.5 mL) salt( Q" S9 z' Q) [
1 Tbsp (15 mL) cooking wine4 I8 z* \2 d  z8 T! e  ^
1 Tbsp (15 mL) cornstarch. a9 F! }. @0 r  z0 t
2 Tbsp water
! h. S9 ?6 J2 H6 X
6 B& Q# s  R; {7 I% U1 c& Y1 1/2 Tbsp (20 mL) oil! B( B% \# i9 O! D! Y

1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices, e  D# @0 [0 V; _
1 cup (250 mL) cooking oil0 t( n$ `/ {! n; a( Z$ A; v" D) Z
2 1/2 Tbsp (30 mL) oyster sauce" ?+ k) v) z0 V& c0 k
2 Tbsp (25 mL) light soy sauce
' @# M# P1 u7 x, Q" g. Y+ ~3/4 Tbsp (10 mL) dark soy sauce
8 F- J# J; w) o/ o1 Tbsp (15 mL) sugar
/ X. n, W& O* U& Sa few drops of sesame oil
1 t' o$ m4 j7 f2 cloves garlic, crushed
) F( ]/ \1 L1 k7 L4 ?1/2 cup (125 mL) chicken broth3 [! i2 W2 V9 p; L6 D& h1 F- K) \
2 Tbsp cornstarch (if desired)
& ?' K! K* F: ]2 ^6 r
+ S9 q1 f; F% s/ iDirections:3 U: X1 u; |  u3 K* {$ ^9 {0 R  Y
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. 6 s3 U  X# j! s( t- K
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
# S9 c) {# v" }9 G" T  tAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
. d6 z. D& e0 P5 T3 ?+ d3 \* _Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.6 w/ N* \: a  j6 J0 U

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
