Beef with Broccoli

Beef with Broccoli

3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces) J: z3 u6 _, E/ L; R! J. @& a

6 q( N: B6 I& S2 c8 _; j9 gMarinade for Beef: 2 k9 b# ?" }& s2 [$ X7 }' x0 \
1 egg 5 b: J" Y# Y$ c* ~8 @
1/3 tsp (1.5 mL) salt
1 l8 B, l6 Y2 }* t1 Tbsp (15 mL) cooking wine
* w9 b" V6 c; `& _# G( |9 h8 }1 Tbsp (15 mL) cornstarch
# F" y7 Q+ U  S0 N; H" x2 Tbsp water
* p1 l2 _, z9 r- `& m' \
. ~# ^% P1 S9 \3 B0 z( r1 1/2 Tbsp (20 mL) oil

! N" C  d6 ?, D8 L8 }8 }1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
* t# t+ }. y" i( l% l1 cup (250 mL) cooking oil' l" J! {$ U; ~5 ^
2 1/2 Tbsp (30 mL) oyster sauce
5 @$ n6 ]# ^3 y, @. x; _  P1 S2 Tbsp (25 mL) light soy sauce
: ]0 R% U, l* N; T$ g8 a4 d3/4 Tbsp (10 mL) dark soy sauce
4 N7 [* X( T+ U; _8 `3 o. Q1 Tbsp (15 mL) sugar
; K0 y. v5 r; `a few drops of sesame oil+ n5 J! [9 V3 m# Z! K
2 cloves garlic, crushed
1 s' c/ N& y* Z1/2 cup (125 mL) chicken broth
( W" C  n) f* r& k+ ^9 }2 Tbsp cornstarch (if desired)
/ M* W+ {# k! i& X' w. Q/ n0 ^) k6 H
Directions:
' [# N4 R# d0 j& o4 G. O, S. sSlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
% B  [; z# x) j& p: oHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
3 H3 Y& W+ [8 d# r! n  M$ YAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
4 X! B9 K6 \3 y4 C! S2 x: }Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
