Beef with Broccoli

3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces

1 Tbsp (15 mL) cooking wine/ h( I% N3 U o, Y
1 Tbsp (15 mL) cornstarch5 c" x' _8 d' e- E; p

1 1/2 Tbsp (20 mL) oil9 ^# R4 [& l7 Z1 @0 w
" k. F1 j5 c7 i/ j1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices

2 1/2 Tbsp (30 mL) oyster sauce% z8 Y; E! u' t9 g; u2 w/ `
2 Tbsp (25 mL) light soy sauce$ c. ~! j/ M6 Q# m0 L' s$ S
3/4 Tbsp (10 mL) dark soy sauce& H5 q1 a4 e, _& }
1 Tbsp (15 mL) sugar. n$ V7 a* h" A
a few drops of sesame oil- d% l4 N* d3 c. X% ]
2 cloves garlic, crushed
# V- j' o' W; q& B1/2 cup (125 mL) chicken broth" b7 F; V2 p* \0 y
2 Tbsp cornstarch (if desired)

Directions:
8 w" l" Z9 G: I# I3 WSlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
4 T0 }7 ]6 n0 A7 c1 j0 sHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.( h) ?1 e1 y( r- l9 Q% t
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.
2 X1 H4 U. ~" z: THeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients. Serve hot.8 ~7 T2 L! t0 s# s% e9 T
