烤蛋糕

• 1/2 cup butter

• 1/2 teaspoon vanilla extract (if you like the flavor, otherwise, none)) P* ^6 k7 Q( u, ^
• 1 1/2 cups sifted flour or all purpose flour (former is better)5 Z5 D% `- p- L& q
• 1 1/2 teaspoons baking powder ; N8 @* J6 a* N: `/ Y
• 4 eggs, well beaten

9 R9 r4 d6 c- \: c$ ?, L0 @2 fBeat butter; gradually add sugar, beating until light and fluffy. Beat in vanilla. Sift together the dry ingredients; add to cream mixture alternately with beaten eggs, beating well after each addition.
" }% n* v: ^, @3 x$ dTurn into greased and floured 8-inch tube pan or 9 x 5 x 3-inch loaf pan.
* q6 [+ b$ d1 V! O( zBake in a preheated 350° oven for 45 to 50 minutes. Cool for 5 minutes in the pan then turn out onto a cake rack. Cool and glaze or frost as desired. Store tightly covered.

这是yellow cake,我最喜欢的,又简单。ingredients 我一般比较严格执行,否则变味,但是我通常要把糖的用量减至3/4到2/3,洋人用糖量太大,太甜了。但如果你认为cake mix的甜度适合你的口味,就用上述的量。$ u" T6 T- H2 }
beating,要用mixer, 一般的$10左右的hand mixer 就可以。烤蛋糕,面包,或做土豆泥等都用得上。0 `, K2 I; f; T3 B g9 @ v

检查是否烤熟的办法: 用牙签插一下cake中间,若没有什么粘在牙签上就熟了。 |
