烤蛋糕
INGREDIENTS:

• 1 cup sugar
! O6 z& i) f0 E( n2 ]0 X: N% _• 1/2 teaspoon vanilla extract (if you like the flavor, otherwise, none)
1 Y) J2 U) K U3 r% ^, i3 l• 1 1/2 cups sifted flour or all purpose flour (former is better)" j( N" d( ?! J, L& v" j
• 1 1/2 teaspoons baking powder

PREPARATION:6 A$ D8 ]- e) @4 D
Beat butter; gradually add sugar, beating until light and fluffy. Beat in vanilla. Sift together the dry ingredients; add to cream mixture alternately with beaten eggs, beating well after each addition. ) V5 N6 ~* i8 z, ]
Turn into greased and floured 8-inch tube pan or 9 x 5 x 3-inch loaf pan.
+ g0 n" m" H" B- ?Bake in a preheated 350° oven for 45 to 50 minutes. Cool for 5 minutes in the pan then turn out onto a cake rack. Cool and glaze or frost as desired. Store tightly covered.

8 Z9 I) X# r! R* W这是yellow cake,我最喜欢的,又简单。ingredients 我一般比较严格执行,否则变味,但是我通常要把糖的用量减至3/4到2/3,洋人用糖量太大,太甜了。但如果你认为cake mix的甜度适合你的口味,就用上述的量。% A; Q) H! G% N; n/ v) N
beating,要用mixer, 一般的$10左右的hand mixer 就可以。烤蛋糕,面包,或做土豆泥等都用得上。

检查是否烤熟的办法: 用牙签插一下cake中间,若没有什么粘在牙签上就熟了。 |
