Beef with Broccoli

Beef with Broccoli! H- w5 \% G2 G
Serves 3 to 4

; W% q+ S: K  |0 |; p$ s6 {3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces

2 u- k6 x3 C* cMarinade for Beef: # q" u. t- g) ^% \
1 egg
, E1 ~  o8 G+ \2 b- G1/3 tsp (1.5 mL) salt
6 t5 o4 y6 d* O+ _* d+ h1 Tbsp (15 mL) cooking wine6 E4 v7 j) }. b3 r& h0 J* y
1 Tbsp (15 mL) cornstarch- k: K9 {- N5 ~( R1 k) H* d4 C
2 Tbsp water% _7 S' }- |! O' I' j, V& a

: y& J5 g/ c/ H& @3 Q1 U1 1/2 Tbsp (20 mL) oil

0 X/ D! U! m3 H+ F0 d1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
2 J5 i3 M! I, w3 d, \0 S) q1 cup (250 mL) cooking oil
+ i4 F7 K+ R( }5 F% M$ p2 1/2 Tbsp (30 mL) oyster sauce1 A9 w4 m5 K! P/ Y4 _# N
2 Tbsp (25 mL) light soy sauce
' K  Y! |; T' X0 ^: ?1 `) ^3/4 Tbsp (10 mL) dark soy sauce
, T7 P+ Q: j# r* A3 ~9 D1 Tbsp (15 mL) sugar3 I! U4 S, E! o. a9 C8 H4 m$ i
a few drops of sesame oil! ~; Y) n5 j2 M6 y1 a
2 cloves garlic, crushed
# O' F' V: q8 @6 S$ X5 {& n" v1/2 cup (125 mL) chicken broth) K6 I6 y- |7 [# W4 t% m  ^
2 Tbsp cornstarch (if desired)
9 Y  s7 w) q# t" k# V5 d3 I: h* x; E$ E' t* h8 j
Directions:4 m& e+ ]8 s  @3 v/ ?
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
  H1 ~5 [6 I3 A# ]( L% XHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel." T4 L5 D6 q, d* b6 n" L
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
$ m# J+ ]1 s% q; P- y1 ZHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.7 G- y8 Z/ Z' C% h3 q
