Beef with Broccoli

Beef with Broccoli% h5 q8 t7 Q3 _
Serves 3 to 4& e" e" W' @* W. Z  ~# A2 L: ^

$ T6 E6 |) y% \  M3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces

; M* ~  D1 E: p* TMarinade for Beef:
% L/ P9 Q# u6 o8 A& F. G1 egg ' E' F* {2 {! e
1/3 tsp (1.5 mL) salt) G1 k8 ~6 ^3 d, F1 L
1 Tbsp (15 mL) cooking wine; h3 @5 i. j. v
1 Tbsp (15 mL) cornstarch
0 Q6 \8 o( [; E* S2 Tbsp water

1 1/2 Tbsp (20 mL) oil
1 H6 H# E% l1 |) o* U" D! w# [5 b9 s+ X- M. I
1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices  F; [* d: A, L! s) o
1 cup (250 mL) cooking oil! Y  Y6 q' H( P3 Y. ]
2 1/2 Tbsp (30 mL) oyster sauce0 J7 a) I2 u' x/ L& E/ ?5 f0 ~
2 Tbsp (25 mL) light soy sauce1 @4 _0 K" }0 v6 q/ i, i, O$ w
3/4 Tbsp (10 mL) dark soy sauce) L: l0 w6 z4 ?! a9 p
1 Tbsp (15 mL) sugar0 r; d# N/ ^) n. h0 N' _
a few drops of sesame oil
$ U8 k: }$ @  b3 C  Z# S2 cloves garlic, crushed
) Q. P1 T  J- x1/2 cup (125 mL) chicken broth( w2 L4 a' J  `! x# [) n
2 Tbsp cornstarch (if desired)8 r# C- @$ N; E8 @* N0 X

3 t9 U: k2 |' Z* D7 M* L/ D" z% eDirections:
: }4 q2 f& w4 n% ^. JSlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
3 j5 i; y% ?8 [0 z9 K$ Y! o8 ~5 vHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.' {, N4 P: l3 m) t9 ^! G2 I1 K
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  9 O  R( x; }! A
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

  t7 G7 H7 |6 y' c& E0 O( }*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
