Beef with Broccoli

Serves 3 to 4

Ingredients:
* {* V3 Q- t9 w6 j$ Y# W4 i3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces: g6 f+ d7 |  K
+ k* C. y9 E* z9 n
Marinade for Beef: ) j5 F; D" d/ s1 w
1 egg
. X% R" ?# h, _. J! f5 D3 G6 {# x1/3 tsp (1.5 mL) salt3 W/ ^8 x4 m- K" O3 X
1 Tbsp (15 mL) cooking wine- X4 ^0 ^. ]) T1 W
1 Tbsp (15 mL) cornstarch5 z. x$ B6 \0 W% Z! R
2 Tbsp water% e# T, g  ?/ C$ n7 D& @) o7 \

2 T! T4 h5 x# r" Q3 |6 L1 1/2 Tbsp (20 mL) oil
* U0 \; M+ @9 {; Z" j, y! [$ B6 f9 y  |1 `/ p  J
1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
& K/ M( `5 W/ _; e! v6 R% a! b1 cup (250 mL) cooking oil
# G, O/ K3 [- q7 \2 1/2 Tbsp (30 mL) oyster sauce
2 X/ Z6 ^8 O- V2 [) X) N2 Tbsp (25 mL) light soy sauce) E! A) x2 N' d8 a" y* }7 j$ T
3/4 Tbsp (10 mL) dark soy sauce* E, O2 `0 m& K5 [- y% C: ^
1 Tbsp (15 mL) sugar6 a& q# e* X, x% C" r+ L+ y
a few drops of sesame oil
( Q) R2 ^! O3 x4 T% d% O2 cloves garlic, crushed
# `# ^7 r- l2 J; ~1/2 cup (125 mL) chicken broth/ q. _$ k* o5 Q# @% ^0 v
2 Tbsp cornstarch (if desired)
: k; P4 g( F- b* E5 O' k" T- n! v$ N* u, d' a4 }% A
Directions:
, Q1 L: w: f& O: s3 LSlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. 1 z9 _3 H* Y4 @  {- l. ]6 D, k  B
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.% x8 N8 t# z6 X$ s  M0 T( `6 @* {5 s9 m
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
' ~7 Z1 y8 j  x9 M, S- _6 FHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot., F# X& W6 C2 ]

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
