Beef with Broccoli

Beef with Broccoli

Ingredients:
( r* A  M9 q" I4 g* _8 D( z3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces2 {2 p5 {/ N3 ?4 W% o

Marinade for Beef: : `* L( b5 Y5 R! z3 b
1 egg
: D( j( |$ v' x* c1/3 tsp (1.5 mL) salt
& U4 a/ I$ W- ]5 c9 S1 Tbsp (15 mL) cooking wine, W& Q: C1 ?$ d) \1 X) ^5 H- T
1 Tbsp (15 mL) cornstarch$ Q) A3 Z" o4 \9 P3 b; D1 v9 b
2 Tbsp water
; r2 R1 e% I9 h* b, E4 z4 u5 _+ p! u
1 1/2 Tbsp (20 mL) oil
. I6 V* X4 n) B; t! |% R; [8 F$ [7 X
1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices/ J. s7 A9 d, J: O+ v4 |2 g
1 cup (250 mL) cooking oil
# I* }' O, q5 m4 J# _2 l% j2 1/2 Tbsp (30 mL) oyster sauce: Q! \1 o+ ^: E- E
2 Tbsp (25 mL) light soy sauce
2 f, p$ m3 \+ {, a6 O3/4 Tbsp (10 mL) dark soy sauce
& e1 [6 y8 P0 J2 N7 E1 Tbsp (15 mL) sugar
& Q5 F# u- f( J' U- i' u7 p; `a few drops of sesame oil
& U( h' d! ]+ l" a* B2 cloves garlic, crushed2 U; ]" U, C8 _  m& ?- u. P! O
1/2 cup (125 mL) chicken broth
  X3 ^6 m3 @$ k" p* N" ]2 Tbsp cornstarch (if desired)
! h3 q; @- t" E# r( i' o* P1 P' w, X
Directions:8 V5 ?* m( J  W3 Z
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. ( _( {% n7 Q8 C; |/ o6 y5 i
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
. X7 K/ x0 n% l( d7 f$ wAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  0 ]- F/ Y$ O* l
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

! v" g' Z4 N6 r: M*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
