Beef with Broccoli

Beef with Broccoli3 Y3 V+ {: R$ T$ s. O+ Q* x' }
Serves 3 to 4

Ingredients:; Z3 g$ i, u$ G1 C
3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces# T" g0 `8 p+ E7 e% r' {; h+ v8 B3 `

( d2 X* ~9 y9 P- L3 {Marinade for Beef: 0 ?$ @& x3 o3 b/ d( l+ c" k5 `0 t
1 egg
: W  F. O& @( K" t1 A1/3 tsp (1.5 mL) salt& ^' G3 p' [9 k4 Q, J4 T
1 Tbsp (15 mL) cooking wine+ b  t) ^5 g8 G+ o- M* n
1 Tbsp (15 mL) cornstarch' @0 t2 H- ]6 B! Y  l* g' X! G2 c
2 Tbsp water
! F2 O6 q6 c$ m* ?; o/ k/ f$ A5 o9 @
1 1/2 Tbsp (20 mL) oil- v/ a, m* A* b

: N8 Q* `+ P+ |) T9 h6 e1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
; s" n, _6 d  c* E1 C+ E1 cup (250 mL) cooking oil* {1 r) i& q$ S! M9 q) |
2 1/2 Tbsp (30 mL) oyster sauce
, @' q% A# Q9 K+ z2 Tbsp (25 mL) light soy sauce
. o3 x9 R' ~9 _( E6 \& |# J+ @: q& ^3/4 Tbsp (10 mL) dark soy sauce5 ~0 p" K0 e6 z& M
1 Tbsp (15 mL) sugar
) v+ Z0 B( d  U7 {0 sa few drops of sesame oil3 `7 @7 L1 y/ c4 R  U
2 cloves garlic, crushed9 Z0 B& D* U; \6 F1 V
1/2 cup (125 mL) chicken broth* C3 @9 J! q' N  e$ B2 Q
2 Tbsp cornstarch (if desired)
( s( Q7 g  U# S3 s0 q/ C% ]9 P* @- q
7 c* E0 x2 s8 b. _" ~2 g4 n3 `7 u& LDirections:
/ r0 i5 u6 z+ u$ kSlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
. t# a! D" @4 ~0 i: G8 {Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
1 b6 m8 a$ g' ?. g8 I/ XAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  ; v0 n5 a$ O) p, h& ^, G
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.! @0 i5 G( Y! o  h* x6 e

Variations
2 G1 S8 F6 V- A, m*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
