Beef with Broccoli

( D, c2 J, M& }/ _3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces) z. R& z, E# k1 z5 A

% E) i) {; y* E; AMarinade for Beef:

1/3 tsp (1.5 mL) salt' Y7 }) d6 ~7 b
1 Tbsp (15 mL) cooking wine' V; B9 c) `$ h, g
1 Tbsp (15 mL) cornstarch
0 \- u8 `+ b( G( ]- ^, [" |2 Tbsp water
% }! N3 S' Y" n7 F. z
6 B. G0 }! a: X0 v) J1 n5 f1 1/2 Tbsp (20 mL) oil. J3 }  c: U! r: i% |6 y5 c2 W
5 ?" v8 Z, z6 G! D, m. ?
1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
& x0 t6 c) ~! T2 p8 X1 cup (250 mL) cooking oil6 Z/ v1 P- [" Z' G' J/ r" V
2 1/2 Tbsp (30 mL) oyster sauce
0 f; y* z& F/ Z  C2 Tbsp (25 mL) light soy sauce' R1 S4 |: ^& q
3/4 Tbsp (10 mL) dark soy sauce
: ]8 E( \/ s* c1 F: z! q# W+ r1 Tbsp (15 mL) sugar
( a3 m# z) Q5 s: ?, ]" ]a few drops of sesame oil% l! c! A, }+ z
2 cloves garlic, crushed
8 G, C( d  a% O1/2 cup (125 mL) chicken broth
5 X5 ]% S3 W9 r+ @, |8 f2 Tbsp cornstarch (if desired)
' J$ }( X! y6 u, T0 [# d0 n  p4 z$ K+ F7 L) J
Directions:
+ C; K- x: T1 @6 B; i9 TSlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
4 |" ?6 v( A, VHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel., G3 F8 {0 w% B+ b8 q
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  : f* D. n  M$ D, g
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.( e( z# G: G& Y; \0 r2 E* y

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
