Beef with Broccoli

Beef with Broccoli" H% l4 Q' b( t1 i7 N0 x
Serves 3 to 4  ?. @" s1 ^: K$ ^# C- S$ L0 I: q

" E' r$ p6 x# c+ z3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces# f$ s4 {7 b: a. S" m

. X- z& r: T/ N3 yMarinade for Beef:
, C+ ?1 J5 Q3 j6 q5 j2 v1 egg
9 j  r$ Y3 q- C8 P, G5 l& ]1/3 tsp (1.5 mL) salt
; E* \" u$ @' I- w1 Tbsp (15 mL) cooking wine
% b7 Y" t) j7 t! R/ L# E+ a1 Tbsp (15 mL) cornstarch
3 r  U5 w1 F( U6 Z% q. z% U2 Tbsp water4 }$ z! w2 q4 C, F, f
" z$ c" x) |7 n/ a6 j" t
1 1/2 Tbsp (20 mL) oil
- W9 g* p$ P2 U, F
& o) B9 V6 d: T# @4 C1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
! l7 Y  D+ {. ^% T1 cup (250 mL) cooking oil( L: F8 |5 q( Y0 D
2 1/2 Tbsp (30 mL) oyster sauce
% H* ?) s' y. ]% R: {2 Tbsp (25 mL) light soy sauce/ z4 h$ r8 ?  j4 ^) c7 o
3/4 Tbsp (10 mL) dark soy sauce
" f6 R3 Z0 P0 q8 G1 Tbsp (15 mL) sugar
. ]+ N0 q. K9 G4 o( s. U. J2 `a few drops of sesame oil
  _. ^% x: S5 H, f5 x* d8 M+ g2 cloves garlic, crushed
1 B: Y) z# \. ]5 }% C2 w5 s2 ^1/2 cup (125 mL) chicken broth
) ^" w, [4 W' @2 Tbsp cornstarch (if desired)
! @6 n% C+ t7 S  y% j2 Z, `$ B  ]% C6 L. W7 K
Directions:* B5 D, \  l/ v5 h$ q# X
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
% R6 B% m% ]  l- L. ~Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.8 z3 W2 e9 C4 E
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
; X  w# x2 ~, S4 J. e9 ~Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

* I, O' p+ j, H, p*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
