Beef with Broccoli

Beef with Broccoli# S% V( G4 q  J1 F' W

3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces4 V, X* \  K* s
; x, r$ e# p( ]
Marinade for Beef:
1 y  ?' v: ^' Y; C+ j) m  W3 `1 egg 7 i6 }* C: c8 o2 \0 u
1/3 tsp (1.5 mL) salt
3 g! y8 Z1 @& n  o( d1 Tbsp (15 mL) cooking wine
* a5 u1 `! U% }2 l- |" a- W1 Tbsp (15 mL) cornstarch. ?7 i. W% J; N- k( k
2 Tbsp water
! D3 A7 Y4 ~7 E5 f' L/ }7 A% X' Y" D
1 1/2 Tbsp (20 mL) oil
: Z3 V, l  u7 b8 o( y0 X. X* m! e% r
1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices- j6 F( w9 i$ C' Y8 x. W
1 cup (250 mL) cooking oil  h8 q# N6 t( B0 K+ F2 S' _. X6 z
2 1/2 Tbsp (30 mL) oyster sauce7 X* L* X) {2 ]8 ?
2 Tbsp (25 mL) light soy sauce
9 Y9 S8 E! h0 _7 w9 }6 h0 ^3/4 Tbsp (10 mL) dark soy sauce
8 d, O& a1 F1 C- Z, H! n$ g2 w1 Tbsp (15 mL) sugar
" z/ ^/ ~, |  t( P- P# ia few drops of sesame oil# Y+ O: V+ k9 `3 k( d' }
2 cloves garlic, crushed$ B* Q. ?( o9 g6 o6 O7 [
1/2 cup (125 mL) chicken broth
0 i: W' a+ x  F& S2 Tbsp cornstarch (if desired)
" e$ ^: Y+ U4 B% k% [8 A( T6 w( \2 U, r& Y4 `) S1 g8 p
Directions:
8 z- l/ p( ?6 R: r/ YSlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
3 K6 D7 G5 V: t  u1 `$ t' K) yHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.4 L" o$ D3 M, q/ U+ w- p
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.    S, [* Q: \% z+ z
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.+ d9 L; @- G! N" q" A6 M' U

Variations
6 ?( }6 r- U& T1 G' h3 \*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
