Beef with Broccoli

Beef with Broccoli

Ingredients:
7 b1 X7 e  p9 N: B. l6 P3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces

Marinade for Beef:
: D! z+ {5 p) p" X; z1 egg
. b1 ~  h1 b# ]5 P0 Q1/3 tsp (1.5 mL) salt* U9 \# a  i) W. h) o& E
1 Tbsp (15 mL) cooking wine$ l2 L. h: Z2 i. c% ?) C+ Y
1 Tbsp (15 mL) cornstarch
# C+ F& `: H5 g5 N. i% A1 n5 d2 @2 Tbsp water
$ t1 u$ l$ [" C/ E/ M; U3 r- J7 i
' y, X1 v: U' W8 f1 1/2 Tbsp (20 mL) oil% }. h. }+ |9 [9 X5 |5 c
& e! K6 U2 |  O
1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
; j7 F1 ?+ b7 h$ a- M, F# `1 cup (250 mL) cooking oil9 \8 u+ N" A  B7 W9 W
2 1/2 Tbsp (30 mL) oyster sauce
( l( [" s4 J/ S  h$ v  L; V2 Tbsp (25 mL) light soy sauce
8 R% S. {% Q( L* i3 g3/4 Tbsp (10 mL) dark soy sauce3 m$ g( ?- D3 G( b  E/ G' L
1 Tbsp (15 mL) sugar
' a* x2 @+ [; k0 E9 K; |% Ta few drops of sesame oil4 U2 Q6 p2 L# q! o
2 cloves garlic, crushed8 i4 Y* B6 `- l
1/2 cup (125 mL) chicken broth9 K- k# e. ]" L4 M
2 Tbsp cornstarch (if desired)
! {$ F6 o/ ]. P/ Z$ F; g" x& O( ^& X7 n4 D
Directions:
# R% v" T7 ?' f5 ?Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. 9 d% N$ S! M  m& t; r/ F
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.+ w! i0 l0 `/ @1 y6 D( ?, }8 E; Z4 L
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
6 \/ g0 s% P# IHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

Variations
; v" d$ S6 k  I6 \+ j) @*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
