Beef with Broccoli

1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices, o7 Z' {1 `7 j% F/ @
1 cup (250 mL) cooking oil1 p# J- ?5 {7 a9 Y& l. h* E
2 1/2 Tbsp (30 mL) oyster sauce
1 k; @& M8 ^8 H! F$ f2 Tbsp (25 mL) light soy sauce, F+ c( |6 q+ w& j
3/4 Tbsp (10 mL) dark soy sauce" M( }4 k3 r" O. }! P. s$ o
1 Tbsp (15 mL) sugar# ~! W0 ~+ a: N! z! X1 M, T0 k
a few drops of sesame oil& V# U; A- A- ^; a }4 U. V
2 cloves garlic, crushed- O# L( Z6 d, r9 B& y% E N h
1/2 cup (125 mL) chicken broth/ [! T! M/ J0 c3 k6 k7 w
2 Tbsp cornstarch (if desired)* Q% Q+ s8 z, J6 Y6 Y! _9 [) r8 ]; Y

: m2 N6 K, Z, h3 aSlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
/ V! m0 C7 l7 o% C. l$ M% THeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.0 l5 ~2 R& ?4 j2 ~! J
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.
2 C6 O' B: `6 X- v% _' g$ ~Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients. Serve hot.* L2 B$ n% {) I
