Beef with Broccoli

3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces

1 s$ x- o0 x: g# A1 egg $ _3 v% u! I2 Q- m* ^6 [; i
1/3 tsp (1.5 mL) salt0 I2 I4 D3 l* V& N3 h: w
1 Tbsp (15 mL) cooking wine
% R# m( s9 X" U* N' ?0 K) }& z1 Tbsp (15 mL) cornstarch2 E- Z( q3 c' Y) F, O
2 Tbsp water

2 V/ M4 R& C) c1 c$ Q# Z# W  l1 1/2 Tbsp (20 mL) oil

$ P8 X6 q1 x# R/ n  ~" {& q% V1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices& U0 {) {0 ]0 m$ l! w5 Y
1 cup (250 mL) cooking oil
' r/ u5 G' P. o1 m2 1/2 Tbsp (30 mL) oyster sauce/ F6 Q3 Z2 d% l. F5 g
2 Tbsp (25 mL) light soy sauce
5 K. b/ i& ]' H+ O$ C, u) A5 j; @9 d- b$ N* l3/4 Tbsp (10 mL) dark soy sauce% b9 Z( K$ ]$ _1 o: M0 Q+ S
1 Tbsp (15 mL) sugar
8 T+ T4 P2 k, p0 {  @# Ba few drops of sesame oil! t9 A# J& }: C# R8 Z
2 cloves garlic, crushed" T2 M; b9 u5 B
1/2 cup (125 mL) chicken broth
* u  c& z1 E1 U7 f2 Tbsp cornstarch (if desired)

  U, T/ B: T; G. z5 E0 S; TDirections:5 H9 t2 d7 O4 X, T  f; M& s
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. ! q/ v6 `4 W4 O8 R9 [* [2 b, c5 D
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
: q: h6 C  T% C1 I; C4 J& pAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
' t7 w: B4 i- ^5 D! v" JHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.7 U" }7 |* x4 a6 I% i

8 o& m3 K. ~# K+ N# W0 h1 c*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
