Beef with Broccoli

Beef with Broccoli1 _- L# w% O8 m# q+ d
Serves 3 to 4

Ingredients:' G1 H( d/ F$ y1 ~
3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces6 Q% G( T% B/ ?! B. `
1 Y7 D+ t. j: k2 a7 ^/ X
Marinade for Beef:
0 S! Z+ R4 a$ Q0 \# |1 egg % E+ Q& H4 r" E7 f, o3 ]
1/3 tsp (1.5 mL) salt
8 j4 v. y2 \# o1 Tbsp (15 mL) cooking wine- ?& a( T2 x4 f* G9 G$ e! W( [
1 Tbsp (15 mL) cornstarch* h$ B6 f) X6 s1 v
2 Tbsp water# f8 e7 ?) h1 q& Z. C: E' e
9 c, |. w3 f0 k: q* f" P
1 1/2 Tbsp (20 mL) oil
0 t; C% z- N! H: w1 T! |
$ @0 D" Q/ e4 L% x2 |' }1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices4 ^& G. Z0 y; D. q
1 cup (250 mL) cooking oil# H! P3 a& @: |- {% K" M
2 1/2 Tbsp (30 mL) oyster sauce0 X. _! H% M0 u  L' h
2 Tbsp (25 mL) light soy sauce
6 a" U2 @  `9 |3/4 Tbsp (10 mL) dark soy sauce
9 x6 K9 p) Y* s/ m5 \5 d/ V! H2 X6 }1 Tbsp (15 mL) sugar
/ M4 x) n5 N, P9 ^& }: f/ v' G( wa few drops of sesame oil
1 U5 F3 f% x+ t, O8 T: w& @8 A2 cloves garlic, crushed, B3 N5 k  \( ^2 g( y- A' C% [( C
1/2 cup (125 mL) chicken broth
5 S4 P2 W) o* \2 b  V+ r9 y2 Tbsp cornstarch (if desired)3 d. p. A( ~# r7 Z

Directions:
+ _: @; `  h! `8 a. ~Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
8 _$ [& |2 b# x" MHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
% a# }( ~& w+ `4 KAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
# d5 _" S/ Q3 E3 D- N8 SHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot." z" M4 m3 G6 J$ g, y- C

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
