Beef with Broccoli

Serves 3 to 4

Ingredients:
: x, N# Z% z, Y3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces$ f! x  Q' M* a4 w, s* R

0 f* B4 e4 k0 d, ~Marinade for Beef:
/ Y; A: j9 O! F7 F* T! C# H$ j1 egg % Y* Z, p8 v: k' j% t4 _
1/3 tsp (1.5 mL) salt& j& ?5 O% l) g" L
1 Tbsp (15 mL) cooking wine
6 L7 }! Q4 Y" c6 y/ w& [' |8 S1 Tbsp (15 mL) cornstarch
+ I( t* [" x5 c1 F, Q& L2 Tbsp water; v3 P% J) \! F0 |5 b
" o7 X6 }" x% Z2 Y; N. R% x3 Z2 Q% i
1 1/2 Tbsp (20 mL) oil
8 n" L, R; Y: b4 l5 t# R* U6 K: S" v6 R2 T/ G% l3 y
1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
) D+ T. [+ v$ R; D5 T1 cup (250 mL) cooking oil
+ [: a9 v- w$ J3 Q& U2 1/2 Tbsp (30 mL) oyster sauce
  N6 x3 B3 x# c5 U) @: f  }2 S2 Tbsp (25 mL) light soy sauce
& ~; r. m& e9 D0 R! B  d) i6 N3/4 Tbsp (10 mL) dark soy sauce7 G2 V8 e- A% m6 S& v
1 Tbsp (15 mL) sugar
. k# l  }+ Y; [/ I: B2 Ua few drops of sesame oil  _/ ?+ l; c. Y+ ~, u  W
2 cloves garlic, crushed
  g6 y8 S/ D9 {( t: Z# {0 N$ q4 }. x1/2 cup (125 mL) chicken broth
4 Y. q* G  _/ O* ]) t2 Tbsp cornstarch (if desired)

7 |. k# {5 ^3 G+ B& USlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. * Q/ J% ~, r6 {2 e( D
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.2 h2 T* z0 v3 D3 ?4 y  e: F
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.    ]' B; m# x1 o
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot., ]2 w8 f4 o; d
