Beef with Broccoli

Beef with Broccoli

Ingredients:
. a( Z6 A6 S3 O3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces" t4 n4 \) z* u

Marinade for Beef:
7 v! H* A+ D  ^# {: V/ B3 Y1 egg
! M+ P% E1 g" d6 n8 M- S  h+ J1/3 tsp (1.5 mL) salt" w3 f+ ?* q* J
1 Tbsp (15 mL) cooking wine  p% S# o8 T: c* `' H) l' y3 r
1 Tbsp (15 mL) cornstarch
% C3 n# A/ E5 g6 |2 Tbsp water
8 y8 Y# Y; v9 s( v- J( g1 b* j3 V
- a9 V, Z* B) f' L0 n  u- e1 1/2 Tbsp (20 mL) oil
* e. @2 r% n! M( o+ T: b, T3 J' w) k% g6 D% I: E# l4 k3 h
1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices& U+ i+ \6 K6 I: P# ^
1 cup (250 mL) cooking oil6 e  p. w+ X6 t- o2 ^1 P' S
2 1/2 Tbsp (30 mL) oyster sauce
0 F" X1 f% s: G; k. Z2 Tbsp (25 mL) light soy sauce9 K& g' M; g$ X2 k) s+ X' f  w
3/4 Tbsp (10 mL) dark soy sauce9 h6 L: S" S1 i! h# P9 \% d
1 Tbsp (15 mL) sugar
& X0 F: m: Z# n; }a few drops of sesame oil9 P7 H( x) t9 m4 }; y( D+ Z# [
2 cloves garlic, crushed
, R% I* u' W# S& p0 ?# N# b1/2 cup (125 mL) chicken broth: s) U% k$ D0 [! _/ @
2 Tbsp cornstarch (if desired)) C' q& a+ s( }, U8 n  {
1 f8 f8 q+ L2 r- r4 ]2 B
Directions:
  W8 Z( p" I2 [7 a2 U: \Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
* b/ D' G7 u/ M, mHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
  K" u% ]1 S$ a" HAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
, I- T. _3 ]: y6 N8 |+ @, j! a2 ^Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.5 ]& C/ U; ^: W8 |: Y2 v

Variations
. ]) W* U" b& S' A) {* V9 |: d*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
