Beef with Broccoli

! i, v) Q, ~$ @! i6 j3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces; p$ e" V! k4 W1 t3 l

Marinade for Beef: 5 c9 Z- a, [/ I& g' T
1 egg
0 \9 Z& R/ c8 \/ D1/3 tsp (1.5 mL) salt4 u; |1 G3 e7 f! ]& f8 E
1 Tbsp (15 mL) cooking wine
  C  A9 y' }. R& S0 K  U1 o8 }1 Tbsp (15 mL) cornstarch

1 1/2 Tbsp (20 mL) oil

1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices0 B4 D+ w6 s* P6 z6 ^; Y+ w! u
1 cup (250 mL) cooking oil! o+ q( {! x1 ^4 m1 `
2 1/2 Tbsp (30 mL) oyster sauce
$ P# I4 |+ q& H& d9 _5 ?2 Tbsp (25 mL) light soy sauce
& U0 B* ?2 o5 d: ^2 }; `* D3/4 Tbsp (10 mL) dark soy sauce1 b/ R! k/ T) s
1 Tbsp (15 mL) sugar
% p2 U) S( p2 E- I! F2 {a few drops of sesame oil" n& b4 A# \2 c  [6 O5 \
2 cloves garlic, crushed+ b' W7 h/ N; `4 J8 N
1/2 cup (125 mL) chicken broth2 `; k( g( K! ]
2 Tbsp cornstarch (if desired)
4 c' _% O1 J1 [$ {' T2 @
; x% M) I. H  k" ?* SDirections:' o3 \; m( }3 \4 S6 Y' m
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
2 h+ Y/ o( A1 G6 Z: o/ D- j+ sHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
1 F# s  w1 x& |" U+ n/ A: a; `9 ~Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  * |; c7 d' K; G6 b. H  `' F/ \/ }
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.3 a0 C- ~; c5 I9 u( ]

Variations
" |1 R8 m/ q/ ^*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
