Beef with Broccoli# l: S! l! G0 g& N

Marinade for Beef:

1 Tbsp (15 mL) cooking wine

1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices0 x0 X4 x4 F9 U! B& o3 J
1 cup (250 mL) cooking oil! i9 C* q' u9 }+ `2 W! i7 C
2 1/2 Tbsp (30 mL) oyster sauce
# T3 N/ s2 X' ]' s p2 Tbsp (25 mL) light soy sauce
3 V% Q, Z" m2 P+ x5 V1 ^3/4 Tbsp (10 mL) dark soy sauce
6 q: ^. Y2 }1 w$ G) i1 Tbsp (15 mL) sugar, t: s# U& ^5 a$ B. O% K+ L8 }
a few drops of sesame oil
( V, C+ r) T) Q- w- t1 }0 E2 cloves garlic, crushed. r" h: [. C2 k j0 i$ U5 ~3 w
1/2 cup (125 mL) chicken broth
+ C8 f! |$ ~( O' J% L; @2 H2 Tbsp cornstarch (if desired)8 C: C% k0 g5 y" Q

Directions:( z8 G6 V. X: S
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
! x! R A4 J& F6 eHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
( V" q' d$ u0 b' J2 c7 bAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok. / a. @( k2 U. ~$ L3 V# z
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients. Serve hot.: l2 d D/ D7 l& m2 A

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water). |
