Beef with Broccoli

% H0 N+ N0 z9 B5 Y: Q3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces& g3 S, i& s# A+ \' A- k5 C" }

% d2 Z0 X5 F0 c, ?- ^4 VMarinade for Beef: ! d2 n" D: l  w2 W
1 egg . ]: `/ ^: }  s( |2 A6 q2 M
1/3 tsp (1.5 mL) salt  K5 x6 w2 h; v1 U" A$ O9 B: s
1 Tbsp (15 mL) cooking wine
' O/ G. H' }2 L; F& }1 Tbsp (15 mL) cornstarch, `; ^4 R! N% e6 l1 X: W
2 Tbsp water4 v" y* z2 R2 _+ [0 F

/ _9 D6 B5 t) ?& |8 E3 ?' n1 1/2 Tbsp (20 mL) oil: J- G5 s* S6 R" a0 ?% n- ^
% h+ z" b% b5 r( S
1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices' {6 L" Q- v0 l& K5 m' |, U
1 cup (250 mL) cooking oil
! J, \4 ~9 e. i7 }2 1/2 Tbsp (30 mL) oyster sauce
# i: j# X, q' U* ~. b- _2 Tbsp (25 mL) light soy sauce5 e* ~' k0 M4 N  o+ S
3/4 Tbsp (10 mL) dark soy sauce
  H- C- m; l4 R* S  G" O1 Tbsp (15 mL) sugar8 L7 U; u* m& X. K/ m
a few drops of sesame oil% T8 Q/ N, S  f0 {
2 cloves garlic, crushed* A3 U5 g2 m4 c
1/2 cup (125 mL) chicken broth
1 _2 A) b6 g3 M" V' |- m2 Tbsp cornstarch (if desired)% \' W$ Q) t* C, W8 y. I
& [( E6 d, {' h0 U# e; \
Directions:
+ N- o  b1 P& H9 W0 sSlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
1 g5 m! I& {$ ^* E9 VHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.7 Y0 L% l- ^: U/ _: k
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  1 U4 m7 E5 g% \& \- A
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.3 k  S% D  l* H0 u
