Beef with Broccoli

Beef with Broccoli9 K1 A( ^3 U3 ?. w4 U
Serves 3 to 4) j% `2 F8 e* Z4 k  D3 e

Ingredients:
9 G9 U7 w0 ?0 i( }3 {0 y0 S  D1 w3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces
+ m2 i8 k3 D) r8 w! C( t0 I6 h. @0 Y2 j5 D. Y, j& |
Marinade for Beef:
1 k) m2 h' K- @( P1 egg 3 c1 Z; Z* E6 V0 P+ o# J- M4 ~! t
1/3 tsp (1.5 mL) salt) h1 P6 Q+ f. t1 y) A* F. ]
1 Tbsp (15 mL) cooking wine
8 z; w- F3 \* F. \9 {6 p$ x2 D1 Tbsp (15 mL) cornstarch1 t6 a, |0 Z& X% Y" L+ u
2 Tbsp water" H- t/ e. Y' P$ d8 y& Q6 V

" @6 l: `) h3 M. n# g* j1 1/2 Tbsp (20 mL) oil$ I4 W! k1 P/ N
" E, o* v4 z  O6 w: q
1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices! J) t7 Z( {1 V- a5 K
1 cup (250 mL) cooking oil
) z. m; r: H$ J' W4 o' w0 ?2 1/2 Tbsp (30 mL) oyster sauce& U7 _% i6 `! U
2 Tbsp (25 mL) light soy sauce" `# @. Z1 b; ~/ ]3 {9 i" B
3/4 Tbsp (10 mL) dark soy sauce
7 r( L3 j: C) ?( O0 f- G( R1 Tbsp (15 mL) sugar) ~% C6 \: N& ]8 `/ W. ^
a few drops of sesame oil- k1 {% x4 k; Y* H6 ^* @& ?
2 cloves garlic, crushed# \( _: L! a7 [) x2 a" k
1/2 cup (125 mL) chicken broth# Z8 K) ^: I4 U
2 Tbsp cornstarch (if desired)
! k  p' J, E* I7 Z. G8 F! u) [
4 e6 Q: U+ S2 }/ o$ l, `, WDirections:+ s! Q8 A8 U/ `! }
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. 4 G. ?4 P1 }- }, T' X
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.# a$ s4 s# m9 q3 H5 e! h, e  r2 j
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
+ w' _! f' n/ V) L: s; ~5 oHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

Variations
7 I0 m3 f8 C# R' b& S*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
