Beef with Broccoli

3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces

Marinade for Beef:

1/3 tsp (1.5 mL) salt
+ F ]6 j9 ]! e" V6 X1 Tbsp (15 mL) cooking wine5 o( T9 \- H, n" A! Q, P
1 Tbsp (15 mL) cornstarch
9 ]7 A3 c+ F, c5 [8 n0 P2 Tbsp water9 K m, J3 X) D+ F
4 Z+ C4 m4 K: E6 j1 1/2 Tbsp (20 mL) oil

1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices

2 1/2 Tbsp (30 mL) oyster sauce- A; g1 X5 U8 ?9 L3 S1 |
2 Tbsp (25 mL) light soy sauce
9 W6 U! F y/ `' E( K+ w- f7 i8 H! J3/4 Tbsp (10 mL) dark soy sauce

0 w" D1 b5 p$ ]% u2 cloves garlic, crushed

2 Tbsp cornstarch (if desired)
) t/ j/ r5 D3 a; i3 W8 X* }8 p3 m! Y; w/ b- ~4 e9 j! R
Directions:
: n8 X3 R* b' l+ `3 z2 F- G" ]1 S/ JSlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. ( c! @0 M1 B7 X9 m
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
0 G* j5 J' i2 k& qAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.
4 {+ a& d! n7 _ b+ p2 @4 {- KHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients. Serve hot.
