Beef with Broccoli

Beef with Broccoli  R1 y  y5 A. x( b
Serves 3 to 4

9 O, e5 a( A2 `: H5 z0 d2 K4 {3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces# V7 i* D' r: l

Marinade for Beef: 1 A" `, j: N. A( w; U" W
1 egg
. @+ C- n. K8 i7 H# ?" g* A5 Q1/3 tsp (1.5 mL) salt
6 w& _" p8 N- I# p7 o8 ]6 W6 V* ]9 Q1 Tbsp (15 mL) cooking wine
- e# R# w; N" R. S2 k/ _& c6 s# k1 Tbsp (15 mL) cornstarch% }3 Q+ `* j( ~* y3 L
2 Tbsp water9 e6 F7 [: r) f2 {5 X
6 t6 F/ {4 }& B! N: O0 W% E
1 1/2 Tbsp (20 mL) oil
/ V' ]) }9 A$ `, }$ E8 ~; G( b) l  c" C- S- e4 b3 l4 X0 {- x' O( J
1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices$ @# g' Z) d# _( y  z) q  r
1 cup (250 mL) cooking oil" b- ^* e$ v0 s8 i
2 1/2 Tbsp (30 mL) oyster sauce5 n9 ]8 t0 V. A& K
2 Tbsp (25 mL) light soy sauce! n' i4 |  G4 S" S
3/4 Tbsp (10 mL) dark soy sauce
. Z( W6 @' ^  H8 j- }1 Tbsp (15 mL) sugar7 N- P7 K. l6 p; A) ]( Z' e
a few drops of sesame oil" j. w+ D, c4 k" ?$ A2 c
2 cloves garlic, crushed
+ }" |! ]; H3 L: e9 P. e1/2 cup (125 mL) chicken broth: W1 ^/ |$ y0 _- [3 u9 t" |  Q+ d
2 Tbsp cornstarch (if desired)
% e% U" o" i8 g# o
, v5 k  c7 ~( X4 g: TDirections:; N  ], c* M1 S; s8 |% V
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
+ X* V( s8 p5 P; n3 X8 eHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.& @; e. {5 K6 c  u, Q* \
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  * M% k( M. i0 \0 |& \4 G* M, F
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.7 X6 C, U( a) i! N  M5 K- N) S

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
