Beef with Broccoli

Beef with Broccoli# V1 N/ H% K6 K  O, q. p$ R; B. f& j
Serves 3 to 4

Ingredients:
3 `) @+ p. j3 M8 V' b7 v3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces3 W9 j6 }( k( `0 P6 z% x* Z4 N0 p& @

5 Q; L7 `0 ?  J9 kMarinade for Beef: ) s3 A8 d: Z; e! g
1 egg
) b0 v  W, N1 T1/3 tsp (1.5 mL) salt4 K: [, `5 D  R5 t: \
1 Tbsp (15 mL) cooking wine
+ t/ m: ~! s# ~+ O, I1 Tbsp (15 mL) cornstarch
+ e( A$ D! K4 Z) o( r# {( P. G2 Tbsp water
$ V: L4 ^8 D# H" f* _- B( W4 r* \: o% F/ e" C
1 1/2 Tbsp (20 mL) oil
* T0 t0 U# e. x, q0 A
9 {$ g$ f7 W7 ~/ K. p2 ?. f/ I1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices2 M7 q* `  f' S5 s, j. P0 {
1 cup (250 mL) cooking oil
* `8 M9 A: [$ E; V. q& r: N, r2 1/2 Tbsp (30 mL) oyster sauce* X  [3 [& L3 [! n
2 Tbsp (25 mL) light soy sauce4 M5 R- {/ o5 W# q+ q8 ~) p; v2 x
3/4 Tbsp (10 mL) dark soy sauce$ C) V: S9 M# B0 O6 R$ m- |
1 Tbsp (15 mL) sugar8 i) F. T9 `8 [  A7 c
a few drops of sesame oil
* Q5 e6 t" L- Q  |6 ]! t2 cloves garlic, crushed
( L) C* @: r. t1/2 cup (125 mL) chicken broth4 w: W- q$ X# Y! @4 {8 c
2 Tbsp cornstarch (if desired)$ I; c! r! ~9 M3 y9 |( e  k
+ \8 h, [2 G$ [" a7 z/ z* N
Directions:
' l8 F3 h9 I0 @7 T% g' c; eSlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. / q0 {1 k$ t. X& h% n
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
2 R7 S+ I" \2 X: l- ZAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  ! B4 G: a+ b9 I7 E
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.) y$ B+ C# F) t) l' \! i

Variations
# F% S, j% L5 r, l*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
