Beef with Broccoli

Beef with Broccoli

3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces7 n8 i+ ?$ k' _1 [' O: M! T
' m6 V1 X- s; y; v7 S9 ?
Marinade for Beef: # u8 z) l* }& m+ [
1 egg % W2 O5 t5 ~$ T
1/3 tsp (1.5 mL) salt
6 F3 E4 c) x+ e# I  M4 k; q1 Tbsp (15 mL) cooking wine
- {5 |( O5 I9 s% ]* g1 Tbsp (15 mL) cornstarch
0 Z9 v4 F, Y" e1 S' y) y2 Tbsp water
  a5 I$ }. F' d4 [4 s1 S( ?! [& O. s/ f
1 1/2 Tbsp (20 mL) oil
7 x# e. E7 F2 @3 @6 I/ }! D0 C. ]- `
1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices$ _: c" e" p5 X2 M
1 cup (250 mL) cooking oil% p& C. ?+ v5 B- I! o7 z) ~4 K: u5 P
2 1/2 Tbsp (30 mL) oyster sauce
7 Y3 c0 D! |. G; f4 q2 Tbsp (25 mL) light soy sauce' @1 _: R# L( @% ~1 c* _  H) g9 O
3/4 Tbsp (10 mL) dark soy sauce
* b; ]; S2 i) B4 f% a1 Tbsp (15 mL) sugar" @0 _3 z. A' F6 w" T, b8 ?) X
a few drops of sesame oil
' F( N" N% e8 n2 cloves garlic, crushed
- u! @: ]( t% a6 C, n* c9 a% A! a1/2 cup (125 mL) chicken broth
; k# m( t8 S  k1 b' k2 Tbsp cornstarch (if desired)
4 O' C. `, P7 l! i% N7 F& ?/ I# _+ f6 y" Q" Q
Directions:! K# M6 W( `2 R* @! s
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
: l4 e: I2 c5 L9 ^% D: xHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
7 ?" Q4 h/ l# @$ E( CAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
. k1 I: r1 |2 m4 tHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.9 @- I! k3 }$ L/ n. H/ t" Q; @

  H* S" }7 N5 e+ @* E' D) @*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
