Beef with Broccoli

Beef with Broccoli

8 L/ _, y/ K, r# v, H% [- V% h5 p3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces$ H$ l/ S8 S% g# j& }$ j3 I

1 Q2 w; l5 Z5 o6 MMarinade for Beef:
' l% c8 P: n$ X" Q8 E- S8 ]1 egg
; F1 s8 w% D" W7 E1/3 tsp (1.5 mL) salt2 C* B0 C6 ^) @0 A
1 Tbsp (15 mL) cooking wine
1 G  Q+ c( r$ [7 m- q) X' f1 Tbsp (15 mL) cornstarch0 v& Z! T- M3 q2 D  {9 J; s
2 Tbsp water
9 b& |6 g4 p# [! s+ u
9 |  m* P0 S6 e1 1/2 Tbsp (20 mL) oil
; l; [, f7 [% l3 H3 M3 `" _; W
3 @! f/ g7 R' L9 K5 Z1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices5 h, Q# M' `7 p% n. k
1 cup (250 mL) cooking oil
+ I2 z$ F  u, y1 h7 J2 1/2 Tbsp (30 mL) oyster sauce
! e1 h& W+ B; k3 l- g; G$ c2 Tbsp (25 mL) light soy sauce
, R. r. n% j/ g3 ]  j# m! a3/4 Tbsp (10 mL) dark soy sauce
* V8 U' _8 j8 r/ g7 _1 X1 Tbsp (15 mL) sugar. f0 O/ Q( q0 P8 n9 a$ z
a few drops of sesame oil, _, r$ A# E9 @& r: G3 p* ]3 W) Q% x
2 cloves garlic, crushed( J; r3 f5 ~1 V' z
1/2 cup (125 mL) chicken broth
0 Q! ]! A; A% O( Q5 m2 Tbsp cornstarch (if desired)
1 M: k3 z# s5 G2 c+ f. H: T/ _4 m8 m! g: V( P4 F9 j% Z1 O4 v5 C
Directions:! Y& ~3 W8 q" {. z$ _- ~
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. / [  j6 K' |. J8 G: T
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
% E- h* h2 [7 Q5 HAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
! g& l9 Y5 I6 y4 BHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

Variations
$ l+ L& B0 i8 I  z3 a*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
