Beef with Broccoli

Beef with Broccoli

Ingredients:5 l- [5 N& A- T9 c: j) J" \
3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces
0 l" u; J' s* ^" T5 j" p/ n
% n$ O% q! \( Z" v% d4 L5 ]Marinade for Beef:
3 |) T6 J0 w6 p  W9 q1 egg 0 c: B3 c5 Y9 K2 ~9 p+ ~- q
1/3 tsp (1.5 mL) salt
6 q: U( r) B# |% k+ B4 O4 ]1 Tbsp (15 mL) cooking wine
) D4 E+ m4 @( I4 ?8 J1 x1 Tbsp (15 mL) cornstarch
8 H3 g, H" u9 A. |; l+ F1 j2 Tbsp water
1 n5 n# {7 s/ r: V% D+ I# q2 e* `5 {( U3 `) E
1 1/2 Tbsp (20 mL) oil
- T2 V1 v9 T6 Q! v+ a# q1 P* z1 c# q0 c7 {) C/ b* y
1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices2 E+ B) m0 d$ ^7 ?' n* }; n
1 cup (250 mL) cooking oil
, v( C' H* b0 |& z! C+ F9 R, l; o2 1/2 Tbsp (30 mL) oyster sauce
+ k: H( X5 o* j/ v$ V2 Tbsp (25 mL) light soy sauce
. z  b4 N% M8 f- V0 r3/4 Tbsp (10 mL) dark soy sauce( J$ |9 s6 {; P( c2 ]& Q+ v
1 Tbsp (15 mL) sugar7 x5 i+ P/ A, y
a few drops of sesame oil* @# |% H* |$ z9 P9 t
2 cloves garlic, crushed
( N/ D4 J9 P# {% @, H1/2 cup (125 mL) chicken broth9 Y; }$ x  K" x  i3 G* N% F- N
2 Tbsp cornstarch (if desired)  [! h( m5 U% E3 {% ~! Z+ ~) \

Directions:  P! w" K. l. {9 ]0 v! {" l
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. 5 N0 ^$ j7 o  i) Y
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
' j% N: n* i$ G. t, pAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  " m2 G: H' ~5 ^5 p# v- G4 i0 _
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.. v- g; p4 T, F

( J8 H5 s9 z& W* \2 j  d*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
