Beef with Broccoli

Beef with Broccoli

3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces1 J% ], e+ M% D6 W

Marinade for Beef: % y. N. }6 D) O( R* W3 t
1 egg 7 x* c' a2 u. d1 a; N: Q; l
1/3 tsp (1.5 mL) salt
8 }; w$ a+ V8 H. t4 ^1 Tbsp (15 mL) cooking wine
- N) w1 h' X* j5 o1 Tbsp (15 mL) cornstarch- {; K' Z. A" I0 r2 k
2 Tbsp water
+ ^3 `" p% x/ z7 i. o+ b* E* I2 @. Q4 {: r0 }6 o8 f" l- B0 {0 t  b
1 1/2 Tbsp (20 mL) oil0 g$ H; U2 M; V' f. ^

3 E* F) x. p8 P1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices+ b- J: Y6 b  o& n. B
1 cup (250 mL) cooking oil
, {3 ^, ?, T4 @& e2 f2 1/2 Tbsp (30 mL) oyster sauce
# P( I# E' @! _% V, A4 m2 Tbsp (25 mL) light soy sauce
4 o+ e/ u+ T) b4 u* Z8 b1 U) g1 y! m3/4 Tbsp (10 mL) dark soy sauce
/ c8 [2 D% X; a" ?% {' C1 Tbsp (15 mL) sugar
8 e% ]; \; j5 ]8 c% \4 O" E& j8 [a few drops of sesame oil1 |6 x; f2 v) }* s. z
2 cloves garlic, crushed
4 }8 k& Q6 f; @) D: |1/2 cup (125 mL) chicken broth
' K* [  Z% r; \5 I- E3 c; S0 Q2 Tbsp cornstarch (if desired)( `: N( h( F/ @. q2 |& W, x  E
# R/ K0 ^* y. R, y: |6 c; o, `
Directions:( |7 z7 G. I& M8 i! H0 V) R
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
6 m* ]8 v( |6 _+ N3 f9 T9 p) cHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
- s( b! F  j' U- H: nAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
9 G8 ?* o1 h4 c8 X) B) U1 fHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
