Beef with Broccoli

Beef with Broccoli

Ingredients:
) O8 Z1 A: ]: W. X4 b! |' O" i1 Q3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces

2 A7 d( h0 S: |  ^Marinade for Beef: ) {1 D& M/ |! W) }+ a
1 egg
& `8 @# M% W- |7 D, D1 |1/3 tsp (1.5 mL) salt
  g- J  _+ C/ i6 x1 Tbsp (15 mL) cooking wine; j) Z. e4 A& U% U. j
1 Tbsp (15 mL) cornstarch( `  d  ]. ^: d; z
2 Tbsp water
* }5 E% U1 s+ _# u+ ?( V) {# i
# v' R5 K: G( I$ {! e" I% L. @1 1/2 Tbsp (20 mL) oil

' Y+ ]5 ]; C  t. e: p2 O1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices9 r$ m# u: r1 N4 l
1 cup (250 mL) cooking oil
  |/ Z  W2 o; |6 P6 \2 1/2 Tbsp (30 mL) oyster sauce
3 \- @6 }; h, J4 Q% I% J3 s2 Tbsp (25 mL) light soy sauce5 L9 y- ~- G  U4 y3 S- A: u
3/4 Tbsp (10 mL) dark soy sauce
3 z. M- R8 ~* j+ T) R1 Tbsp (15 mL) sugar
; l( N/ o; z+ [  d( F8 |$ Ha few drops of sesame oil
# [  G* Z8 j/ J" r& s* ~5 D+ [( }/ ~2 cloves garlic, crushed$ X1 B! s* k- G* |2 }
1/2 cup (125 mL) chicken broth5 C+ i/ i8 u; K3 z' T8 B
2 Tbsp cornstarch (if desired)

% f. h! R. s1 T# f; Y$ c' pSlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
- n  \- ?* q4 T1 T: a( pHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
. g, W) @; I3 L2 a2 z5 f/ mAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  : Q' h5 F6 W$ p# N
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
