Beef with Broccoli

Beef with Broccoli9 v& r- k. _# a. i% s. j
Serves 3 to 4. f6 g4 \- q5 u' j9 H, l4 f

/ L: o% u# g% o/ C8 {Ingredients:- G$ l& A8 J& B* ?% D' S
3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces
7 E# D6 `- y$ r$ y
0 `6 O' i5 {( G9 N  o' p) CMarinade for Beef:
8 Z7 b; V  e* L1 egg ! ?3 N& j2 V/ ~5 L( i
1/3 tsp (1.5 mL) salt" a$ b8 g% C, H8 Z3 i4 x3 U5 V
1 Tbsp (15 mL) cooking wine3 L9 v* P# y# w
1 Tbsp (15 mL) cornstarch- V9 B( Q; n& Z: Q1 u- H+ l
2 Tbsp water
& Y) U! V/ i, U9 l! y4 `) N) f9 Z+ @5 Y
1 1/2 Tbsp (20 mL) oil/ ^( f. j- \+ T: W* F
) g) A6 P9 u( Z* w  c- F
1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices7 ~' y7 i) S& o
1 cup (250 mL) cooking oil
8 S. c  w% f5 d2 1/2 Tbsp (30 mL) oyster sauce) l! L/ T7 j- @6 U* e
2 Tbsp (25 mL) light soy sauce* {- n( P6 I0 g4 o& `
3/4 Tbsp (10 mL) dark soy sauce9 ~' x5 L% r( I  ?/ t+ J0 I7 Q  o
1 Tbsp (15 mL) sugar5 M, ]/ ^8 Z5 i/ c' M0 f
a few drops of sesame oil* A0 k7 u6 U) v! [1 Q8 x
2 cloves garlic, crushed
. d& {% ?" Q9 Y. N3 v  {1/2 cup (125 mL) chicken broth) k! e* n, Z  W9 A- M" k' W" ~6 U: b) X
2 Tbsp cornstarch (if desired)6 ]' D& P; o+ o2 C6 [. {9 k

( ^: r3 s8 U, a* a$ z! b6 {Directions:
4 n+ W4 L% V0 C+ Z' e- KSlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
+ Z# y( R, S; uHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
. D; f' P3 Y- _Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  9 e- m5 r+ m' U5 {+ z
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

Variations
6 j% V, F3 Y# j8 P# n! @2 N- x*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
