Beef with Broccoli

Serves 3 to 4+ a& a- Q( w9 s0 w

Ingredients:
: a& x. G* L( T, s! H3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces3 h7 k; F# M. {: h

6 W& A8 ~1 g5 Z& K. t- l% G0 T6 cMarinade for Beef: . q6 T" k  i  @8 `1 H
1 egg ; T1 m: y, ^7 d1 J( r
1/3 tsp (1.5 mL) salt
7 G+ i* t& ~1 ~5 ~  s1 Tbsp (15 mL) cooking wine
: S% d& `! S+ Z* j4 u& ~1 Tbsp (15 mL) cornstarch
# \) a# s8 u2 {1 G9 {) `4 l2 Tbsp water
$ h+ `) t% w* T/ u* L# F6 r% W5 L; L+ O3 Q4 u* j
1 1/2 Tbsp (20 mL) oil
' J3 ^/ ?8 z. l8 ]0 [( I
. z( i% i" l2 y+ x1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
! k9 X" Z5 R& M  g: r1 cup (250 mL) cooking oil: B, z6 y& v5 Q8 E) H
2 1/2 Tbsp (30 mL) oyster sauce8 _' D7 Q; a- e# r5 X
2 Tbsp (25 mL) light soy sauce
8 Y- D2 \' m' I  m7 \8 ?3/4 Tbsp (10 mL) dark soy sauce' ?  O% ~5 F  R2 G& y- w: s/ b
1 Tbsp (15 mL) sugar
# h4 n6 n5 Q" w) M  b9 S$ u& `: U0 p2 Ya few drops of sesame oil
# x7 L% Y: T3 x7 V2 cloves garlic, crushed
  Q: X# t; \& f. }: d1/2 cup (125 mL) chicken broth
3 v' U7 C& d9 g. E) P6 q2 Tbsp cornstarch (if desired)7 O+ I' |) \9 z9 v
; q9 n* v7 R7 ]* v+ a( T* `8 @
Directions:; G2 G- t# j  V
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. 0 s& a# b' S7 I( e: w: W
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.( I* A: e: e$ l2 B# u# x6 p. z
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
1 S4 Q+ t+ z! J) U5 W# x- C5 q  qHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

Variations
7 R) P: r: j- N*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
