Beef with Broccoli

Beef with Broccoli

Ingredients:, f2 s3 ^- l/ ^5 Z: Q- u4 W: q
3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces
+ Z$ j- Y3 s; Q5 R$ [6 W( R' r8 ~$ f$ l+ c2 T" p! `
Marinade for Beef:
: ?' t4 H# ?& ~& J+ f1 egg 8 q0 k# p. _1 p9 I
1/3 tsp (1.5 mL) salt
+ t8 \: j4 n* u$ z. v5 N1 N4 ]1 Tbsp (15 mL) cooking wine8 T0 Q6 ?, q' ^' `2 }# V/ K
1 Tbsp (15 mL) cornstarch
8 w* i1 w' h/ _# u/ h" L2 Tbsp water

5 F; }2 X& Y: Q/ D' a, Z1 1/2 Tbsp (20 mL) oil

1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices2 _( Q4 {  ~  }* A0 V7 g. K  r2 g
1 cup (250 mL) cooking oil
- L' T+ Y; b1 r+ f5 ~" E2 \2 1/2 Tbsp (30 mL) oyster sauce. y0 Y/ M! x# |) _, A$ X
2 Tbsp (25 mL) light soy sauce. n% ]: j; X  u# L( J2 f
3/4 Tbsp (10 mL) dark soy sauce
% A$ s0 [& p$ P: o) N4 [# m2 V1 Tbsp (15 mL) sugar
% ^" B& E. u- S. a) i3 W/ c% aa few drops of sesame oil
( q* @$ o: \- c$ w. C2 cloves garlic, crushed8 r" I! a" r: N8 R5 F) |) g' _
1/2 cup (125 mL) chicken broth( j3 K0 `+ k3 i% R# Y6 D$ D
2 Tbsp cornstarch (if desired)
0 E, S; O, }3 ?5 y5 G: s4 c
0 r9 G  U$ m6 H, Q- V: O% H0 XDirections:/ d# G) S/ j" I1 N2 p  [2 S$ W
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
9 ~, ?+ C! Z" K4 J& _Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
& e8 `2 D5 t( q: h7 ?Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
8 x6 R1 T, X* ~5 `5 THeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

  d3 D) U; \4 i/ d*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
