Beef with Broccoli

Beef with Broccoli* s- S; K- D$ ]. W- z
Serves 3 to 4/ G$ V/ N- [' [$ r4 Z; K

Ingredients:  \) R+ ]: b5 ~
3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces2 }( O. z5 T, j6 ]! b8 a" Y0 \1 o2 U

Marinade for Beef:
! m+ F/ W% q2 J# f" M9 g% H8 q# t" }1 egg 6 C2 g% O) ^" p' t8 K4 x
1/3 tsp (1.5 mL) salt5 O: [1 a, y" T; L
1 Tbsp (15 mL) cooking wine  r  p2 |' @2 j8 x1 ?
1 Tbsp (15 mL) cornstarch' V% p7 e' b  y! ^6 T9 ~9 w
2 Tbsp water& {0 Y5 k% V& u( \1 o2 @
9 i( \! }% n" V# `5 ?& |- ]# u2 f
1 1/2 Tbsp (20 mL) oil2 h$ a' S3 d/ V# L% ?5 \5 `
. ^1 k1 c( l, B; Y& _
1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
% \! j6 L0 z  m' V6 g4 h  C4 L$ C1 cup (250 mL) cooking oil
1 J; X! f: w2 d- ?. F3 u5 @2 1/2 Tbsp (30 mL) oyster sauce6 Y, q$ g$ ~  v' b7 C( s
2 Tbsp (25 mL) light soy sauce
) [, J( X- y: J. O+ u3/4 Tbsp (10 mL) dark soy sauce
% p! L/ ?% M$ f5 k- v$ i6 [1 Tbsp (15 mL) sugar
# w: z& W" g5 F+ w) Fa few drops of sesame oil
3 y9 R8 z1 @  ~: _+ C% a2 cloves garlic, crushed4 l; S9 e( R$ T3 x- U& Q
1/2 cup (125 mL) chicken broth  |& `" ~) g% q/ y1 y- i& [
2 Tbsp cornstarch (if desired)4 t& G) f) c* h7 s. I

Directions:0 A7 D, v2 ?: W. @
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. 5 Y  I6 A% m+ }! L. b
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
- s8 {6 D- e' uAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  % ^, p: n& T( c6 \7 e
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.& p  B$ `, t3 R0 T! J, V

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
