Beef with Broccoli

Beef with Broccoli

Ingredients:
3 ^( y7 s8 j" N" [& N3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces0 q: k1 J2 y2 h. H: `! T8 e4 `

2 b" H) E/ i' mMarinade for Beef: 4 o/ N( u5 I% R' D
1 egg . c, M3 c% ]- c
1/3 tsp (1.5 mL) salt4 o0 |0 ~) `6 F2 v# j" ~
1 Tbsp (15 mL) cooking wine* v# T8 I( O, F# E& j
1 Tbsp (15 mL) cornstarch+ h; J1 }9 W" E3 O4 e# g1 S" v
2 Tbsp water

4 k3 L% Z6 K1 e1 1/2 Tbsp (20 mL) oil
3 ?( m1 i  }+ w6 Q/ y9 D& R8 a; e2 q: a! Q" L( D- G# X
1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices5 d& {, y1 V9 H5 W" z" {
1 cup (250 mL) cooking oil
' \* E5 y  d, T* W5 {, r  O  f7 K2 1/2 Tbsp (30 mL) oyster sauce
$ K7 j0 ^4 l; ~. x+ y4 p6 s- T' J2 Tbsp (25 mL) light soy sauce
1 j# ^' C! v3 |4 _+ r3/4 Tbsp (10 mL) dark soy sauce
# }0 Q3 J2 `  ?2 X- G9 o1 Tbsp (15 mL) sugar
* w' x6 m% t1 G3 v' za few drops of sesame oil# t& g) a' T7 }: T
2 cloves garlic, crushed
# }1 Q3 H3 B8 |: \" w9 h1/2 cup (125 mL) chicken broth
. b8 d: v' x$ @/ N2 Tbsp cornstarch (if desired)4 U! p% i* ~0 `- E4 N. |+ ~% N

Directions:
" D" e4 Z' [- x# _: e, M, K, ASlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
) p4 M4 I2 t4 V9 M& Y7 X- ?" nHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
# i4 f$ l( Q3 F& L& L9 `Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  # O+ ?  [" }$ t7 a5 _% r
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
