Beef with Broccoli

Beef with Broccoli# G% t1 F3 D* w! h+ b
Serves 3 to 4/ V! j5 @" x( u6 z! w! C& v, j

Ingredients:
! D9 c( A! \  U# X/ ]( p3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces# G9 s% o& H4 \

Marinade for Beef:
! o( d1 ^# X: M+ S1 egg 7 |( U9 u! [! d" \2 w9 Y1 C2 h
1/3 tsp (1.5 mL) salt
6 _$ W& h/ \; I) e7 P1 Tbsp (15 mL) cooking wine0 Y6 f/ v8 p2 f; _
1 Tbsp (15 mL) cornstarch
- Z2 P" l5 N9 P: [0 m3 V2 Tbsp water7 I# Z7 O# u' F' H4 D' @

+ g7 ?+ ^, b- E) U  W1 1/2 Tbsp (20 mL) oil
! ]5 ?3 Z6 p: i& F% Z) ]; ~5 N$ w5 F# Q& Z- }) M' r
1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices1 J7 Q  g. x5 g  I# B$ R- i
1 cup (250 mL) cooking oil- ?7 L0 F" d2 j
2 1/2 Tbsp (30 mL) oyster sauce
& S  K9 B! t5 U5 A2 Tbsp (25 mL) light soy sauce( d$ w4 @- }' P. I! z! l: o: {* O
3/4 Tbsp (10 mL) dark soy sauce  ~; a2 x. g1 t; }( Q
1 Tbsp (15 mL) sugar
9 d6 s+ }! n9 \a few drops of sesame oil
5 x; F  ]. R% Y7 t; Y1 ~+ l2 cloves garlic, crushed0 F6 P7 M; |3 k6 }/ _! ~
1/2 cup (125 mL) chicken broth% [" l  `( J5 a1 h' d
2 Tbsp cornstarch (if desired)$ a8 D$ Q$ E) O5 U! K" i) i
% W. g  R1 _8 C: x4 }2 V* v) w
Directions:
7 Z% s3 q" J; y- T1 f% s( XSlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. & q" G& H+ u5 k% U5 R1 o0 T  p- P4 s
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.( R: M3 c% ~3 W6 w
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
4 V( |6 d- M5 m' nHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

Variations
3 N; b4 A  @: u( J! y) o2 _*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
