Beef with Broccoli

Beef with Broccoli

Ingredients:
! S4 S' ~2 l) O2 A3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces
5 X( L* b9 m- n# \7 D( R) j: ~! j9 G4 ^+ L+ w) m  ^. b
Marinade for Beef: 3 C6 n2 o: k* B4 m4 I: ^7 [. s
1 egg
; i! ~# T. L8 @, t# F0 w1/3 tsp (1.5 mL) salt& z: m# G' u* b; s
1 Tbsp (15 mL) cooking wine
2 q( z1 s1 y! N& f6 i6 c, v1 Tbsp (15 mL) cornstarch
5 R" a* a3 C3 Z) U: x/ k9 m2 A2 Tbsp water. ?: ?- e: _5 p; \/ Q

1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices9 S- ^4 b0 U1 ^& g0 H% ?
1 cup (250 mL) cooking oil5 B; g; @9 [6 ?; {, C9 m
2 1/2 Tbsp (30 mL) oyster sauce
! e% d. I4 X: `4 _+ f2 Tbsp (25 mL) light soy sauce. ]4 \$ e0 f; B
3/4 Tbsp (10 mL) dark soy sauce
3 B: b9 L% j7 ]. C5 q1 Tbsp (15 mL) sugar
2 G- |' l; t, |5 W& A2 u1 Ia few drops of sesame oil
; U5 k5 k- N. S1 c- H6 V0 e5 b2 cloves garlic, crushed
5 n* b& w/ J- d5 p0 b6 H1/2 cup (125 mL) chicken broth
, G, F  o! U# B, ^- }( L0 H7 ~" n2 Tbsp cornstarch (if desired)

Directions:
) A% I3 T  x7 u/ I: O3 {Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. 3 B" I2 M" \0 h5 u) D
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
! q: I2 x; D5 Q. k% k1 XAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  ) K& R+ C. i6 [2 p
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
