Beef with Broccoli

Ingredients:
* |/ W' s3 t: z2 i3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces. c7 h: a! W+ R+ M# |3 K
! K+ @: w' K' B7 L! O
Marinade for Beef: % y* P1 ]) f+ @! W6 j! U# I" h) G
1 egg
% P7 W: F% k9 |! x% A# [1/3 tsp (1.5 mL) salt
5 B' G( D  E: |; }2 W2 {1 Tbsp (15 mL) cooking wine2 S. _9 l; a& g- x) b+ l
1 Tbsp (15 mL) cornstarch
) V+ n" K& B& ?5 ~2 q4 |2 Tbsp water

1 1/2 Tbsp (20 mL) oil+ h' s2 D* j5 J% s& y- T

1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
9 A; e. o1 _. C$ Y" P6 R1 T/ i5 z+ H1 cup (250 mL) cooking oil
# s3 u8 ~* p* e: T! [' [, j7 V2 1/2 Tbsp (30 mL) oyster sauce
) A' U$ A8 c+ o" c/ G2 Tbsp (25 mL) light soy sauce1 ]; k  N4 {* k. |
3/4 Tbsp (10 mL) dark soy sauce
' G6 Q9 E0 b9 n  Q1 Tbsp (15 mL) sugar
" {" f2 g1 k8 [7 `4 I! Ea few drops of sesame oil$ m3 C# r/ n! s$ f& d, s- s
2 cloves garlic, crushed3 O; C( H, v8 g  a+ S6 S
1/2 cup (125 mL) chicken broth
: ~. ^$ u& ]' T: B; q) L2 Tbsp cornstarch (if desired)/ ?( |2 Q) v9 A2 G
! _6 r& }) G. i* X' x
Directions:
9 b3 l' {7 o2 U, `' V. Y3 G. F5 pSlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. 3 \3 K: k. m7 }8 Z% M
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
, T. l7 ^+ {; z; u. F8 VAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
+ D1 W- `6 B4 h( I6 p9 y9 X! kHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

, r  v, Y, L+ J& V5 h*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
