Beef with Broccoli

3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces
) e. K3 g- C) ~+ b

1 egg
4 K" [$ m1 j9 ?/ f( F1/3 tsp (1.5 mL) salt
) {9 D/ f. V5 B+ L9 {6 X- Y1 Tbsp (15 mL) cooking wine( }+ C3 W2 A( |$ w- [. R
1 Tbsp (15 mL) cornstarch( H; c: t' |2 w0 i$ e
2 Tbsp water
! S; C- ^% ~& w& s# \. ]  _" J  U& _2 |0 D% z1 z
1 1/2 Tbsp (20 mL) oil
% @& C* u4 E/ ~! C: }' x6 o, ~% u( ~9 S2 O9 K/ G2 ?6 m
1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
6 [1 N. G1 e( a' Q- c1 cup (250 mL) cooking oil
0 Y( W) N0 @0 {* f2 z2 1/2 Tbsp (30 mL) oyster sauce* O* G- u4 b/ Q/ ?: o
2 Tbsp (25 mL) light soy sauce
1 I) D4 R# j" p$ v$ n2 X5 u, Y3/4 Tbsp (10 mL) dark soy sauce
8 B2 H8 J& t: B" ]3 U7 d+ Z# K1 Q1 Tbsp (15 mL) sugar. y1 {+ ^6 S1 G# _3 S
a few drops of sesame oil7 F, ]" P0 P, F
2 cloves garlic, crushed- L: R4 |2 X  z/ O- Y
1/2 cup (125 mL) chicken broth2 u! w: ?$ X; b0 O+ V
2 Tbsp cornstarch (if desired)$ V# r5 i0 |1 a6 t- M+ Y
3 S- w& C1 ?% V9 |
Directions:* _/ ~2 n  ^8 a4 I& x' @
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. 2 g4 k" Y2 t+ T/ H% `! K
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.2 }% j! L' |* f1 `$ w7 ?- B1 F3 M
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
1 p8 E8 @% D5 e2 d5 a3 U" \: @8 MHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.- x4 R. P( u# n& F1 |7 Z! H' S

& X6 l$ c4 h) t*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
