Beef with Broccoli

Beef with Broccoli

Ingredients:& O1 L" Z3 q# n# R+ G& v* x& s
3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces. l# G4 l- f9 g) K/ W: K

Marinade for Beef: 5 B# b) t! V' C( ~2 O  e4 P# g  E- }
1 egg
; u6 m0 v3 O3 ^/ K0 c# Y1 Q1/3 tsp (1.5 mL) salt
( T: z- U& J9 r( i- h: d1 Tbsp (15 mL) cooking wine
1 b1 @! S, N# O3 b, z1 Tbsp (15 mL) cornstarch5 T6 x" M/ k$ [
2 Tbsp water

1 1/2 Tbsp (20 mL) oil* K2 t" Y7 [/ k! }% A

1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices( V: Y3 l# j  N2 F5 `1 T" [" y
1 cup (250 mL) cooking oil( h, R3 e! v3 [7 g' m$ t
2 1/2 Tbsp (30 mL) oyster sauce" n' a8 A1 S5 F, }* h5 l8 X
2 Tbsp (25 mL) light soy sauce
1 F* y; H7 E, P2 f" G$ i3/4 Tbsp (10 mL) dark soy sauce/ o) \- T; L# m6 T5 _$ L
1 Tbsp (15 mL) sugar( y0 V  d8 U1 g' I/ L$ _
a few drops of sesame oil1 P* M2 S$ J3 T" N4 k1 `
2 cloves garlic, crushed( L0 `3 H. r# X( |6 z2 Q2 t; A* W+ e
1/2 cup (125 mL) chicken broth& k, k- e, h/ i
2 Tbsp cornstarch (if desired)
1 Q" {; R6 q( z) K& b9 Z; y! [0 |( n& o2 ^3 y& A) {8 m
Directions:
( E7 ]4 _; x2 u0 N2 O6 E0 ASlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. / e0 f+ h7 G" C2 a1 ^% x# }5 K
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.2 J& U* e: O3 M, N
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  ( f& z( P. f  }6 V. t& y( ?, W
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

+ R/ @' U; g4 v! L, Z*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
