Beef with Broccoli

Beef with Broccoli% e" H" U6 c  T- f3 B6 R
Serves 3 to 4

Ingredients:' R* i7 _% w3 Z$ a0 k/ u' [
3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces- Z5 Q# `! E9 I5 R1 X) E4 d8 ~' [

1 G8 j% ?( L" e& GMarinade for Beef: : x! R" E+ n) v' _
1 egg ; W: f$ p$ E' L# d' K. k9 `8 H
1/3 tsp (1.5 mL) salt
% ]  _, F( I: b0 L1 Tbsp (15 mL) cooking wine
( K/ I7 g" \! J( i# T  l% E# {1 Tbsp (15 mL) cornstarch* Q, p+ r: T( r: }' f) s' L, U
2 Tbsp water9 d: q6 O: m! M( h
0 S: p4 ^+ O7 m% s
1 1/2 Tbsp (20 mL) oil" ~' m" Z7 M6 C) k
! ]8 S3 H5 ]* D* u7 g" {6 r
1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
2 t- v9 k8 d8 [+ H/ K1 cup (250 mL) cooking oil" d$ [4 W0 c; U* Z
2 1/2 Tbsp (30 mL) oyster sauce
+ C( h0 s- `- A4 I$ _9 m& g2 Tbsp (25 mL) light soy sauce) e: j; m- p+ A6 p" a
3/4 Tbsp (10 mL) dark soy sauce5 X9 w1 m# G" e
1 Tbsp (15 mL) sugar
5 c5 X1 X' F6 t  da few drops of sesame oil; F1 G8 b5 B- }
2 cloves garlic, crushed
5 K, O6 I0 R( Y1/2 cup (125 mL) chicken broth
6 J. S/ [6 S- Q* I' e2 Tbsp cornstarch (if desired)

Directions:
3 G/ v- ^+ A+ ?8 E5 z& y3 ]+ XSlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
9 ^9 |- N' u+ l1 b( L# b+ Z( c0 }Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel., o' X0 V$ ?& `' k$ `
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
2 T3 w  m% P3 ]/ M- dHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.0 H- r! ]# ~3 a( U; n* O' _9 t1 m* F. B

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
