Beef with Broccoli

Beef with Broccoli

Ingredients:
& d& ~! j3 G4 ?# f3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces) l5 ?% r7 W7 G9 d0 g

Marinade for Beef:
: G. p2 V+ L) B! s4 i8 M  S; B9 e1 egg 2 G8 A& z; f$ f3 C
1/3 tsp (1.5 mL) salt0 [/ b0 G! g6 R, M/ z
1 Tbsp (15 mL) cooking wine- k2 x! T0 B: i0 Q8 C
1 Tbsp (15 mL) cornstarch
0 M( {1 i) {  m1 V2 Tbsp water
0 d( Z. p' `0 }/ d% e  V% O5 l" T. U
% p2 K3 s; \8 [6 T( O& n1 1/2 Tbsp (20 mL) oil3 w8 {9 K5 Q# R
. e& E' b5 ]$ T5 Y0 v) E+ b  M9 F
1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
# P. l5 g# A- b1 cup (250 mL) cooking oil
4 u; b" s( d9 R* l* l2 1/2 Tbsp (30 mL) oyster sauce
/ j1 X# x* I. b4 |. O, \- x  @2 Tbsp (25 mL) light soy sauce
; v$ s- T7 R+ g8 {3/4 Tbsp (10 mL) dark soy sauce9 q8 \. A4 J* z
1 Tbsp (15 mL) sugar
0 y0 m& W+ e8 ]% y0 ga few drops of sesame oil" t& w9 @9 \$ x& L. P& R
2 cloves garlic, crushed& I1 x7 B! F/ _3 L9 h  h0 C
1/2 cup (125 mL) chicken broth; U" b6 E$ I2 X; H  X& M0 g$ \
2 Tbsp cornstarch (if desired)
, J+ h* k3 h, n3 ?  c& z5 v/ l  b' l# ~; N' B3 Q, A% `
Directions:" H; M4 p4 x( U" a4 S( ^. `
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
' L6 V! Q! }3 V( bHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
# g6 |8 ]" n) f/ x8 r; t8 yAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
9 i; |$ t1 Q, |Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

Variations
- _, d) ~6 H# c$ L*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
