Beef with Broccoli

Beef with Broccoli( ?  T4 t; z" k  K
Serves 3 to 4

Ingredients:
2 U' F. {/ i% A4 B' b) x3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces
  \& N0 c/ P9 j' W8 E# [
+ j+ k) Y% v" ~" t/ k3 V5 p, jMarinade for Beef: ( n( [) ]/ v: B2 R+ g
1 egg
" H1 I$ z5 c5 \2 o1/3 tsp (1.5 mL) salt
2 A: _  r( J! Y1 Tbsp (15 mL) cooking wine
& f8 d- s1 V& N% e6 m. A1 Tbsp (15 mL) cornstarch; }( p: _2 T3 R0 F: g
2 Tbsp water* u+ O, ~6 r6 E6 T) h3 \) H
; P. ^" \/ m( b
1 1/2 Tbsp (20 mL) oil

) i" v3 s" _# C* D+ j. O2 j1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
5 _, h: m7 n2 j/ a0 H* i1 cup (250 mL) cooking oil
2 R- Z9 A% u; f1 I: V% M* m2 1/2 Tbsp (30 mL) oyster sauce
$ w5 s# j. l: n2 z+ A# x2 Tbsp (25 mL) light soy sauce
4 F# @: T9 }" d5 G4 l( m9 X/ z4 p3/4 Tbsp (10 mL) dark soy sauce8 ?$ f! H% ]  N; b" c, k8 L
1 Tbsp (15 mL) sugar
5 R7 G. d7 n% F7 ?& Sa few drops of sesame oil
' Y( E6 }. [' C+ A$ D2 cloves garlic, crushed- V3 s; z  ^, J( k5 G
1/2 cup (125 mL) chicken broth8 {+ F# l, h+ R, c0 Y
2 Tbsp cornstarch (if desired)% a2 J' i% y) O1 r6 q% s

* y: Q; F+ ]) p$ W# }" dSlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. 3 u1 h% v6 r- i# a% q
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.! A1 `  Y7 Y9 S! ~9 F' K1 p& k& D/ S
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  8 c& M! v  G" l5 z1 R" p
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot./ Q2 b5 ~) K5 Z+ p

Variations
8 Z# U( Z2 e( j! ]*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
