Beef with Broccoli

3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces
6 A/ n2 `; z: \8 D/ i/ e, }( b; f- U+ b. H
Marinade for Beef: 2 Y1 x$ z  b5 |+ ~" N
1 egg ) b5 N6 r! O/ \1 u" b7 V2 I, }: `
1/3 tsp (1.5 mL) salt
' \8 x) V$ S5 `% ~1 Tbsp (15 mL) cooking wine
, W' K# z( A3 Y( M- l# W1 Tbsp (15 mL) cornstarch
5 x9 _! v) v, G! _2 Tbsp water4 A% X( {  e9 m) z$ e
# b& Y/ M% O. q7 d
1 1/2 Tbsp (20 mL) oil
' J4 a* W4 E$ ]9 i# o+ m
$ U" o5 \% a6 A5 X6 i) T1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices; b$ o& f& r: z$ S" }
1 cup (250 mL) cooking oil
) z0 R) b+ ~# M7 U, \( k2 1/2 Tbsp (30 mL) oyster sauce
0 s/ J! ^% |5 m4 U/ d  ^, S2 Tbsp (25 mL) light soy sauce, k7 _, A/ @+ z
3/4 Tbsp (10 mL) dark soy sauce/ {5 S1 K5 F% H- T
1 Tbsp (15 mL) sugar
/ [+ g+ D; d. u3 U2 {& G) Pa few drops of sesame oil( R! d; J% D/ N! p% `+ Q
2 cloves garlic, crushed8 {' p. ]5 t$ f# ~9 v  W
1/2 cup (125 mL) chicken broth) ^2 j4 f8 T+ ~# k
2 Tbsp cornstarch (if desired), W; k" C7 a- H2 o- _, u2 f
* C" m9 F+ y1 }" n) F7 u- q
Directions:
& j; q+ S# D9 J  e/ }% zSlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
) x$ P+ N0 z  y1 v, l" o/ FHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.3 E: U- D! \# T9 @( E
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  7 U3 H$ X" `8 w- r# t( D
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.) K0 k0 @/ @; G. j6 x7 f) A/ P. v

3 [# q& {" E  J*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
