Beef with Broccoli

Ingredients:( x+ Y+ ]: u# v7 I0 u7 B  j
3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces2 w* M& V, o0 J9 b8 u

Marinade for Beef:
  j; `8 I: [% R1 d$ H1 egg
% U; S2 }' u2 m3 Z0 g1/3 tsp (1.5 mL) salt- t; V' ^3 c% J0 I+ I
1 Tbsp (15 mL) cooking wine2 n) {$ s* T" l$ V0 _/ s
1 Tbsp (15 mL) cornstarch4 O/ H9 v* D' j* U" p9 V6 x1 F
2 Tbsp water
/ c8 t5 L9 F! f# Y/ t1 ^1 V1 V( H
4 k" }" @3 ~$ _; l( U3 z1 1/2 Tbsp (20 mL) oil
2 ^2 M) F5 c* t4 t8 S8 `! e( \/ {) a3 t
1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices3 ?9 h, p0 X' F6 O! C
1 cup (250 mL) cooking oil
5 y9 C, b1 m. {, C# R5 b3 j( p, I2 1/2 Tbsp (30 mL) oyster sauce& ~+ p- D0 h! @5 B- J7 G
2 Tbsp (25 mL) light soy sauce
; |, l* |  ]  c- d; N3/4 Tbsp (10 mL) dark soy sauce
5 p& ?+ y0 k) J" c' K- b7 {1 Tbsp (15 mL) sugar
" e4 D8 @0 e  f* T" L9 ~a few drops of sesame oil
8 n- h) b; `  m: x2 cloves garlic, crushed- h, W; @" S5 z
1/2 cup (125 mL) chicken broth- x9 X; Y2 e0 s" v, F
2 Tbsp cornstarch (if desired)! j+ F. E! c9 `& ~$ m$ [
+ @7 ]% v  T. r2 |) n9 m. g% x1 H
Directions:$ ]: q2 X2 L% k2 ]# i0 }
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
. k' G1 ?1 H8 E& o# N; H/ fHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.9 ]( L5 I' a: S9 Q( A" `& F# ]  `
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
+ R. D% s6 s( z2 v4 [Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.8 e6 _) w; J6 h& L/ I
