Beef with Broccoli

Beef with Broccoli

- U" G" P6 ?- J4 W7 {5 w) i; q3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces  X' O/ F2 ^: ^" `& S/ B

Marinade for Beef:
( J% m3 b5 g& \( _4 A) I7 e- E1 egg
* p" l8 z/ w8 }$ j+ _; K! K/ O' M1/3 tsp (1.5 mL) salt9 k, ^: H% n6 E: i
1 Tbsp (15 mL) cooking wine  P8 L& T: l2 W- M
1 Tbsp (15 mL) cornstarch
/ Z/ G, Z2 ^, l# u; t3 ~2 Tbsp water
1 ?3 U$ n4 T; k4 Z; q3 |. j5 U$ `8 N' s( G/ `9 D
1 1/2 Tbsp (20 mL) oil
8 p! F4 ^2 |% z# V: l: R( R% e2 G3 Z: x* L- {# V
1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices/ \1 N8 t4 x: l2 e1 p9 E7 @
1 cup (250 mL) cooking oil1 {, E- H7 g- A5 J, t
2 1/2 Tbsp (30 mL) oyster sauce
6 N2 q; M. g2 g9 Q" F* ~2 W2 Tbsp (25 mL) light soy sauce4 Q7 G' E7 y9 b' K( O: Y/ h1 O  o
3/4 Tbsp (10 mL) dark soy sauce
9 f- q1 O. E) L1 Tbsp (15 mL) sugar- T' U% K( A- |. T
a few drops of sesame oil
$ ?; E7 {0 S, R+ }7 _6 ]2 cloves garlic, crushed! m6 z* K) V3 x; s% p2 M
1/2 cup (125 mL) chicken broth
* ]: C2 w2 n1 [1 Z1 r8 Y2 ?2 Tbsp cornstarch (if desired)9 P+ O8 t: k5 c! C3 U0 @8 K" H- G

Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
  }2 o9 w. C; i$ z; J0 RHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
6 m, Z2 m" s) H+ cAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
4 p4 c1 O8 ^' T4 hHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.3 D! o! l8 B4 w# }/ X. T& P, |/ C

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
