Beef with Broccoli

Beef with Broccoli

Ingredients:
/ {% z: w8 s5 w' z$ }' z3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces. j0 O5 h9 L1 U+ Z4 `  O( X
/ W, k0 L, M+ e8 w( G* d
Marinade for Beef:
5 e5 @6 J/ {0 x! j1 egg # \' i. ^- K1 Y+ Y+ |' I
1/3 tsp (1.5 mL) salt! s& r4 x) z0 X- I
1 Tbsp (15 mL) cooking wine
* \1 j6 d1 ]4 g9 T/ f7 l# l  @1 Tbsp (15 mL) cornstarch8 j' Z4 Q' R) p8 K. Y% G, a
2 Tbsp water- Z) h6 f! O2 \

9 s* }1 t5 O" u1 1/2 Tbsp (20 mL) oil9 l1 z5 x) a/ _& j
* O8 E& e2 v( i) v
1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
5 d) w( }: |3 K0 Y7 R: l2 ~+ L1 cup (250 mL) cooking oil2 S% d" Y5 k) G' _3 C
2 1/2 Tbsp (30 mL) oyster sauce
. V* s, M! a9 k4 ^( U2 Tbsp (25 mL) light soy sauce3 A2 B( [4 c* B
3/4 Tbsp (10 mL) dark soy sauce
* ^7 {# n) ]$ q9 E" d* g! E1 Tbsp (15 mL) sugar
0 a. I( A- \- A9 Ba few drops of sesame oil
% X3 j5 |6 V- ]; [# Q' w# U  p2 cloves garlic, crushed
8 F$ m4 Z" _5 k- i* b6 `' @  I2 V1/2 cup (125 mL) chicken broth
) S- O( ^; f- X# J4 ^2 Tbsp cornstarch (if desired)- a# ]3 Z! d, l1 J1 ]- U8 X

Directions:  R( h2 [( ?. A. Z9 t
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. 2 n" ?+ B. S6 W; e& t# f3 ~
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
) `$ T4 W% E, H9 s" O6 ?Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  ! q. Y8 r  E- F! u
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

' _) G. `- a" y4 g2 ^6 x( x*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
