Beef with Broccoli

Beef with Broccoli( @0 b3 g% t0 d) t# N9 v* x! _

+ `+ d4 R  W+ ]) [3 X$ |! ]3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces
+ m" E" `, x3 w2 f# }. o3 p8 W/ P
. m3 h1 r5 t" MMarinade for Beef: 7 p4 H, M, X4 y
1 egg
& |. @; n+ V6 g) c1/3 tsp (1.5 mL) salt7 @# `0 \' V0 L" Z/ e
1 Tbsp (15 mL) cooking wine
" l% [1 e; R* z  ^, {/ w+ [" O1 Tbsp (15 mL) cornstarch
0 j( N7 q) H: x7 m* y& V" A# K: a2 Tbsp water
- w5 p7 J) X- m: f5 ~& v) M; t$ `
1 1/2 Tbsp (20 mL) oil
  L' B! o3 R# ]  c" L; E/ i5 |1 j
1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
/ q! `. B7 M/ v/ x7 K# ]1 cup (250 mL) cooking oil
7 S& ]% \6 i! V3 W" r6 k2 1/2 Tbsp (30 mL) oyster sauce
( H5 k& ]: a: o! b$ ^+ w. O2 Tbsp (25 mL) light soy sauce' m- Z6 S8 `: F: C7 ~
3/4 Tbsp (10 mL) dark soy sauce
1 N! j( [, A4 J- f  t1 Tbsp (15 mL) sugar
9 A- e9 u8 W' \: ra few drops of sesame oil; o( p0 p; L; t( O
2 cloves garlic, crushed
5 z9 d( C5 J: h3 ?8 n8 L1/2 cup (125 mL) chicken broth' A% Q: `/ X$ V4 c; C% u7 {* D
2 Tbsp cornstarch (if desired)9 h, v4 `2 h5 X" W
8 w! r6 m7 t: V% w: ^
Directions:
9 T! l$ Q5 a2 XSlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
# Z2 i8 {9 b; ?( c6 l0 nHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
) l% Z: @$ K" j3 g% DAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  ! d( Q- x+ `1 i9 n
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.  a" e' x+ m5 w; K/ Z

Variations1 f# @7 i0 k& a# M, C" N: _
*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
