Beef with Broccoli

Beef with Broccoli

3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces
1 }2 v/ W6 O  D" u  R6 f2 I5 h1 p0 J2 v4 e2 R. @' K. x
Marinade for Beef:
, w. G6 s) G% ~/ b0 P" z; P1 egg ' h& }8 g( z* o+ S  W* E$ ?) R
1/3 tsp (1.5 mL) salt: E* ~8 z+ c% x; ?( {
1 Tbsp (15 mL) cooking wine
1 B- b! T3 |) f$ b/ A  V/ [- m0 M1 Tbsp (15 mL) cornstarch% E/ t9 x9 {- M, z+ Y/ A1 t
2 Tbsp water
/ }. S$ _1 S+ c6 V) ?/ W4 t& J- V1 x$ Q% d6 K: k2 r
1 1/2 Tbsp (20 mL) oil
; y9 v/ O. \. d+ O/ h3 Y. s, N% w/ q5 Z2 m
1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
) Q" u4 p) E) D. [* l1 cup (250 mL) cooking oil
$ q; s/ S" C, M. |7 A$ S2 1/2 Tbsp (30 mL) oyster sauce
. l; W6 b8 j4 `$ K2 Tbsp (25 mL) light soy sauce( [1 ]0 Q. m: Y9 y
3/4 Tbsp (10 mL) dark soy sauce5 Q% @% ]3 R; |8 l$ }4 V9 H
1 Tbsp (15 mL) sugar
- w+ S$ U) C3 s. t  d  ^6 b. ua few drops of sesame oil' c) b5 F* f" M. _# ~
2 cloves garlic, crushed% y! _0 V2 I7 W" E9 [* x* L
1/2 cup (125 mL) chicken broth* `9 r9 W  u0 q1 w8 e, c
2 Tbsp cornstarch (if desired)

$ o; z+ u6 T* c( UDirections:5 [/ z' u# ]6 K( p: q0 z5 Q
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
% M: I0 v- H9 mHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
3 h5 N$ T4 s9 I# g/ T/ J1 WAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
; [6 c  `2 |1 F) e& O5 K0 ]Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.7 {  A; r& N+ ?: }! }4 ^

' v- t$ d6 D( D/ `( ?2 j1 K! A0 a$ _*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
