Beef with Broccoli

3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces" S; k/ M  V% n/ o, V0 t! u

Marinade for Beef: ) u3 w3 w# v9 k, n9 C
1 egg
) z" Q$ Y8 R8 N6 o: @3 p4 Z1/3 tsp (1.5 mL) salt
' X4 [5 p, }  Z9 U1 Tbsp (15 mL) cooking wine% ]: t1 Z! _& ~5 i, Q
1 Tbsp (15 mL) cornstarch5 C: d, n8 C4 D+ w$ {% y' f
2 Tbsp water: x( k6 i6 o0 E; s+ g+ y
2 P2 Q" N, ^! z5 S+ M- z9 _; P6 d
1 1/2 Tbsp (20 mL) oil
. T# q+ U5 W) _! P8 w1 R6 Q- I  Y/ H) A6 p, @- k+ q
1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
+ M* W" i  ]2 ~1 cup (250 mL) cooking oil
+ Q# y3 J# u" N/ x0 T7 M2 1/2 Tbsp (30 mL) oyster sauce6 ?- Q) x; E$ V2 ?& ^2 W) \
2 Tbsp (25 mL) light soy sauce
$ J' _: c' k, U0 p- y4 h3/4 Tbsp (10 mL) dark soy sauce
  y! n) e! t$ n9 _1 Tbsp (15 mL) sugar
5 e- `, h! M% Z8 l8 I. ga few drops of sesame oil
" J* O' d( }+ A$ G1 \) {" z' e2 cloves garlic, crushed
. m4 U) n) D# Q. D( C- p" X5 o) C) P1/2 cup (125 mL) chicken broth
3 w) H/ d; Y. u4 t; Q/ B! a2 Tbsp cornstarch (if desired)

Directions:
, d% y  i/ J3 W, l& e3 [8 gSlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
1 m# c) p& N: y1 r$ i# ?2 [1 S, UHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
" u, O7 G1 A9 l7 _Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  ' O" X4 n4 x* Z) a. |: o
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.  G9 U4 |3 g' V' @  v

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
