Beef with Broccoli

Beef with Broccoli

Ingredients:
: a$ V- r; O! J9 k( F, M, k3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces5 {( I: ]8 Q+ S! V

( w- S- X% D' BMarinade for Beef:
" H" }9 T% k- e) w3 [+ b& j6 b1 egg
2 J1 g  X5 X" E1/3 tsp (1.5 mL) salt- R' S+ ]- j: `# {5 U) A# L
1 Tbsp (15 mL) cooking wine1 \- {7 I# _( E% Z+ l
1 Tbsp (15 mL) cornstarch3 _' u) y+ H4 t& k- Q
2 Tbsp water9 y4 s0 P! l5 k5 d" v- o7 x

1 1/2 Tbsp (20 mL) oil
+ M0 i' x; {$ [
5 F2 d; N5 V" g6 T1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
' K( d& w$ G6 Y3 z1 cup (250 mL) cooking oil* X4 m8 M0 K4 v2 F: s6 r, F1 l
2 1/2 Tbsp (30 mL) oyster sauce
# L" g- T) ]; _5 Z2 Tbsp (25 mL) light soy sauce2 D  w: |# L4 `. D* G- P- q; O
3/4 Tbsp (10 mL) dark soy sauce* r, ~6 W7 p! D& e5 n* @* n" {
1 Tbsp (15 mL) sugar8 |( v6 Y1 w, M
a few drops of sesame oil' b! A1 e( s' ?, L
2 cloves garlic, crushed
/ J; R. p& M9 G, r" ?  D6 q; |' @1/2 cup (125 mL) chicken broth
" q. K/ o% @1 N' r3 j: L* l/ M2 Tbsp cornstarch (if desired)

) \+ {* N2 ?2 @9 H' S1 ^Directions:
- _$ I" B( |# lSlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. 2 `  w$ s% }9 C9 n
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
- _* c8 o; `( O/ w/ {Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  ( E; B4 Y: t. v+ O! Q
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

Variations
0 [% c" o+ _6 b( E8 y3 M1 M*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
