Beef with Broccoli

Beef with Broccoli

Ingredients:
+ Z+ i/ I* c# [3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces
+ t% U+ d. A5 C& e8 p2 R1 ?) E" d; M/ a9 k1 C
Marinade for Beef:
0 E7 |# t' x" D6 V4 D5 [# {1 egg
6 V) o9 Q6 w% d6 G! L1/3 tsp (1.5 mL) salt
# \- ^1 u9 q  U2 y) a& K) W1 Tbsp (15 mL) cooking wine# x3 ]3 T3 _+ p  _' r$ E1 |
1 Tbsp (15 mL) cornstarch
1 v# [& @+ `& P+ \# e; @7 [2 Tbsp water
4 `" ~* v+ r! ?! j
  P# K6 U1 M, p" J$ d1 1/2 Tbsp (20 mL) oil

$ w! c& H1 }& ?1 O! S: e1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices# f0 M2 _5 X" }* D+ J
1 cup (250 mL) cooking oil
8 M. C3 ?; E$ p9 F7 q: P! i2 1/2 Tbsp (30 mL) oyster sauce% j. B, }7 O: R( V; X1 v+ B/ R
2 Tbsp (25 mL) light soy sauce! a7 M! L4 T% d" A8 C1 e7 L
3/4 Tbsp (10 mL) dark soy sauce
. E: Y# j  V+ G8 U1 Tbsp (15 mL) sugar0 O. C+ Q* Q5 k6 y* ^% L- }
a few drops of sesame oil8 R/ w, X9 K6 U* q+ w8 H7 T
2 cloves garlic, crushed5 o; q8 Q# G+ ?# q
1/2 cup (125 mL) chicken broth
- e* w# C8 K6 O2 u2 Tbsp cornstarch (if desired): t5 ?/ ~# U+ i; e- s! K1 P

Directions:
* f/ \+ [$ J/ ]* V6 @: l6 wSlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. % O- a- |* V' d& Y% Q3 P9 j( W& E
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.- k: p+ Q3 ]5 ]% T# B
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  - {% ?4 _- Y% X4 a6 \% D
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.8 _" \1 y2 C$ A' j, F5 i2 z7 w8 R

Variations
1 a1 B; F8 d2 U# {*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
