Beef with Broccoli

Ingredients:
2 |; O! x/ T4 D3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces2 ?7 j% _! H9 I7 }

Marinade for Beef:   p6 x! [2 A4 _, F. h
1 egg
4 z2 H% V. M* r+ |( ]1/3 tsp (1.5 mL) salt% F( Y& k* U5 \  j6 F
1 Tbsp (15 mL) cooking wine6 f, S4 T; o+ @& `% h6 d
1 Tbsp (15 mL) cornstarch

5 j" X0 L$ k8 Y! b( H  W1 1/2 Tbsp (20 mL) oil, C0 j9 i1 z7 p# f* M+ }

1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices0 z5 D  C  j. M
1 cup (250 mL) cooking oil
1 S8 R6 Y" Z# k- s* C2 1/2 Tbsp (30 mL) oyster sauce) a! B* m4 W  L7 n* J
2 Tbsp (25 mL) light soy sauce
6 P6 N' w  b) P( J: V3/4 Tbsp (10 mL) dark soy sauce$ l+ [# v$ c9 _( f6 g
1 Tbsp (15 mL) sugar
3 h# o2 a0 Q7 X, {2 z( ^' v6 a3 Ra few drops of sesame oil+ L' [6 @. U" W% C- N* m2 l
2 cloves garlic, crushed
/ \6 d4 r* T3 A& |/ F1/2 cup (125 mL) chicken broth/ t" C/ D* h8 S# |9 W7 f
2 Tbsp cornstarch (if desired)

Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
1 p3 Q- B! e3 IHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.1 _8 z* x8 F; \
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
; S/ J) I5 X( u( EHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.
