* 2 tbsp olive oil& j: L' e6 }7 z
* 1 tbsp butter/ X* Y# i( \1 b, T/ s4 p, _+ ^$ O; K
* 2 cups sliced chanterelle mushrooms9 k5 O" L5 @0 V4 S7 y. T
* 1/3 cup diced roasted red pepper5 \, e% w5 i5 _
* 1 cup fresh corn kernels

* 1 lemon, juiced

* 1 tbsp minced fresh tarragon

Instructions
; I' R$ ]3 S0 HStep 1 ' d. e' j+ ~# n* y
Slice the chanterelle mushrooms into nice big and thick slices. Add 2 tbsp olive oil in a saute pan over medium heat. Add the mushroom slices and a pinch of salt in the pan. Give it a stir. Cook for 10 minutes or until the mushroom slices are lightly browned.

Add 1 cup fresh corn kernels,3 X, F* M2 X/ K t0 R" ^5 h- K
and 1/3 cup diced roasted red pepper or 1/2 red bell pepper, and 1/2 cup water in the pan. Bring it to a simmer, and simmer for 5 minutes. Add 1 tbsp butter and the juice of 1 lemon. Give it a mix. Turn the heat to low. + s6 B. G3 m' |7 a: C
Step 3
7 o: N7 d4 ^; V5 R8 FSeason the 2 big halibut steaks with salt and pepper. Grill for 4 minutes per side.

Transfer the mushroom and corn mixture to a serving plate. Spoon over the sauce. Add 1 tbsp minced fresh tarragon.9 q2 I7 ?, d, x, t/ A* x! p, _
Place the grilled halibut steak on the top, add some lemon cubes beside it, some micro greens on the halibut steak. Enjoy! |
