* 2 big halibut steaks
+ l! k1 V% W6 ~% F* l * 2 tbsp olive oil
5 E5 T1 H4 ~* S * 1 tbsp butter$ w# G* I6 h" N4 K! I4 b
* 2 cups sliced chanterelle mushrooms
& e7 A4 t. ?: Y: s, B3 _ * 1/3 cup diced roasted red pepper
# r# Q+ D2 y# @6 D' D * 1 cup fresh corn kernels
& J) O# W& G8 C; v/ @& R x; j * 1/2 cup water

* salt and fresh ground black pepper' k! e$ E( ?. \9 I
* 1 tbsp minced fresh tarragon

Step 1
: a" N0 w; H8 |Slice the chanterelle mushrooms into nice big and thick slices. Add 2 tbsp olive oil in a saute pan over medium heat. Add the mushroom slices and a pinch of salt in the pan. Give it a stir. Cook for 10 minutes or until the mushroom slices are lightly browned. + S; q0 f& H1 a/ F* e0 o
; n# b8 B5 b" C- P& IStep 2 * n6 B0 y8 H# F' O
Add 1 cup fresh corn kernels,
8 n E! f- G+ n! nand 1/3 cup diced roasted red pepper or 1/2 red bell pepper, and 1/2 cup water in the pan. Bring it to a simmer, and simmer for 5 minutes. Add 1 tbsp butter and the juice of 1 lemon. Give it a mix. Turn the heat to low. " i4 ^9 c6 N9 h; Y- F$ F. R
Step 3 4 \* ?- |! U+ y
Season the 2 big halibut steaks with salt and pepper. Grill for 4 minutes per side.0 Q* \1 h. e" Y6 @% a4 P

Transfer the mushroom and corn mixture to a serving plate. Spoon over the sauce. Add 1 tbsp minced fresh tarragon.& t; D# F, _; {: E _
Place the grilled halibut steak on the top, add some lemon cubes beside it, some micro greens on the halibut steak. Enjoy! |
