This grilled halibut steaks features the mild, meaty fish on an earthy, turfy, subtly sweet chanterelle mushroom and corn base.

Ingredients

* 2 big halibut steaks0 N: N2 |) M k! L/ G6 s! ?
* 2 tbsp olive oil! B6 e- o! t) i8 ?, |5 k2 W; K
* 1 tbsp butter
& | S! g9 X5 Y% T * 2 cups sliced chanterelle mushrooms2 f7 v# ?6 }* D2 d% J
* 1/3 cup diced roasted red pepper" w1 B3 o% Z) F4 u
* 1 cup fresh corn kernels8 ]1 Z0 [) |/ z T* j
* 1/2 cup water! ?# B7 M9 d- d
* 1 lemon, juiced
2 J7 ?7 }7 g: c: s o * salt and fresh ground black pepper
* L# g; c! V. R! B" l: O$ ` * 1 tbsp minced fresh tarragon+ ^- M# O/ e2 J' S
* micro greens for garnish- V& i7 x8 i5 Y% } A( y4 z, S5 Q
* lemon wedges

Step 1 - J4 S$ ~! C- i9 u( D" M# V/ x% |
Slice the chanterelle mushrooms into nice big and thick slices. Add 2 tbsp olive oil in a saute pan over medium heat. Add the mushroom slices and a pinch of salt in the pan. Give it a stir. Cook for 10 minutes or until the mushroom slices are lightly browned.

Add 1 cup fresh corn kernels,' j- e) k3 }' E
and 1/3 cup diced roasted red pepper or 1/2 red bell pepper, and 1/2 cup water in the pan. Bring it to a simmer, and simmer for 5 minutes. Add 1 tbsp butter and the juice of 1 lemon. Give it a mix. Turn the heat to low. $ e$ o6 _, Q+ o* |) U
Step 3 2 b7 ^* f8 O/ a- q
Season the 2 big halibut steaks with salt and pepper. Grill for 4 minutes per side.

Transfer the mushroom and corn mixture to a serving plate. Spoon over the sauce. Add 1 tbsp minced fresh tarragon.
