INGREDIENTS:

• 4 eggs, well beaten6 {6 Z; B! Q$ j; _
PREPARATION:
% Y. w) P6 h4 u- G* m6 qBeat butter; gradually add sugar, beating until light and fluffy. Beat in vanilla. Sift together the dry ingredients; add to cream mixture alternately with beaten eggs, beating well after each addition.
- q7 D- F5 ?3 L' h; x# \Turn into greased and floured 8-inch tube pan or 9 x 5 x 3-inch loaf pan.

I normally strictly follow the amount for each ingredient the recipe calls for, except SUGAR( I prefer to cut it to ¾ or 2/3 of the recipe. It is too sweet for some Chinese. But if you like the sweetness of the Cake Mix you got from super market, you can follow the recipe.( e$ W4 y: u1 p' W8 s

For beating, you can buy a simple Hand Mixer for about $10. It can not only be used for making cakes but also bread, or mashed potatoes(土豆泥)ect. |
