. v$ S; [ v' X: Z3 r存一个菜谱,调整了好几次,现在做得比较成功,做酸种面包的妹妹们可以采纳。我用的是7 quart 的铸铁锅; y! f8 S+ H, g7 E- @8 w

water: 3,1/2 cup
( G) G$ R3 d0 e- }% Rrye starter: 1/3 cup
) i* h3 z0 E, a' xwholewheat starter: 1/3cup; v+ u5 K% N! C# D. ]; Y
sugar or molasses or honey:4 Tablespoons4 j5 J" D7 ^+ w* r
salt:3,1/2 teaspoons
& _- K4 c4 n/ o% XDark rye flour: 3 cups' x. q! R7 C6 C. { I* [
Wholewheat flour: 4 cups

/ E" t9 i. t* @5 b0 Voptional: (我没有加)5 i/ `9 g% `; J* Z
Fennel Seed 2 Tablespoons
1 Q$ O" `7 F$ yAnise Seed 2 teaspoons7 ~2 b, r: V# w
careway seed 2 teaspoons

搅拌揉好,用保鲜膜覆盖,室温下18小时-24小时
! M2 n: ?: Y& A+ B1 I取出来折叠成型。放在和烤盆同样大的盆里,覆盖,继续二次发酵2小时。注意:发酵盆里要放cheese cloth 上后撒大量的面粉(因为rye的面团非常粘)

& T! K# u3 D4 K& W, G; Mpreheat the ovan and the pot 500 华氏4 H/ [: r. t3 B5 @
reduce to 380 华氏,and bake with lid on for 60 min

测试面包心要91摄氏度以上: U1 u, R# ?3 z7 M4 k
