烤蛋糕
INGREDIENTS:

• 1/2 teaspoon vanilla extract (if you like the flavor, otherwise, none)& u# ?% V$ b2 _, Q9 f( i) s
• 1 1/2 cups sifted flour or all purpose flour (former is better)

• 4 eggs, well beaten4 ?( R3 z, {$ i/ {. J: {

$ M6 J6 c$ S2 Y3 M# T A( JBeat butter; gradually add sugar, beating until light and fluffy. Beat in vanilla. Sift together the dry ingredients; add to cream mixture alternately with beaten eggs, beating well after each addition. 2 G1 U9 [$ M6 U/ A1 q
Turn into greased and floured 8-inch tube pan or 9 x 5 x 3-inch loaf pan.
8 }/ l H# l OBake in a preheated 350° oven for 45 to 50 minutes. Cool for 5 minutes in the pan then turn out onto a cake rack. Cool and glaze or frost as desired. Store tightly covered.* O5 |$ }4 D X$ c

这是yellow cake,我最喜欢的,又简单。ingredients 我一般比较严格执行,否则变味,但是我通常要把糖的用量减至3/4到2/3,洋人用糖量太大,太甜了。但如果你认为cake mix的甜度适合你的口味,就用上述的量。
" z/ b1 A: z, Z" Ibeating,要用mixer, 一般的$10左右的hand mixer 就可以。烤蛋糕,面包,或做土豆泥等都用得上。

检查是否烤熟的办法: 用牙签插一下cake中间,若没有什么粘在牙签上就熟了。 |
