Beef with Broccoli

Beef with Broccoli

Ingredients:% {! B) T& \( w# A  c/ y: |
3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces
" W. G" X6 H  @( g$ J; W" ~
% F' }+ B: X" U9 @Marinade for Beef:
5 p: P/ k5 T8 d0 ~$ O. \1 egg
! p5 Z+ P; G+ K  k1/3 tsp (1.5 mL) salt
4 s0 W( U. g" L1 Tbsp (15 mL) cooking wine/ J% k  k! l( W3 ?: T( E1 x
1 Tbsp (15 mL) cornstarch
" Q- j% M0 k& g$ M- N2 Tbsp water8 n+ C. i& I/ u- m
( V3 m4 u0 e( r+ E
1 1/2 Tbsp (20 mL) oil' \! P" Z) J) Q7 f& N2 e  P6 V

* V+ W& C0 o* d8 g0 O1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
' M' q" I: K& t( ]1 cup (250 mL) cooking oil
# S' t5 {  x; [7 Z3 C) y8 [- E2 1/2 Tbsp (30 mL) oyster sauce
% Z5 g0 @) \3 I1 o" h( c3 H2 Tbsp (25 mL) light soy sauce
% L- ?5 B" p& w/ Z2 C, y3/4 Tbsp (10 mL) dark soy sauce
# {5 w. }1 w. ~, `5 Z3 x. V1 Tbsp (15 mL) sugar
$ |4 D: s6 W) |' [a few drops of sesame oil: O2 M3 G5 b5 d
2 cloves garlic, crushed  r4 ~4 ?9 M( z7 y2 [8 O+ x, e
1/2 cup (125 mL) chicken broth$ y* B' C. O, e& w6 u  x# ^2 t
2 Tbsp cornstarch (if desired)

Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. 8 f$ z. O- u2 Z- i
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.9 D! [% w7 s+ H( K
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
8 q, k* u, A$ Q5 ]/ zHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

( F. ^( v8 a' `0 N3 k3 ~0 u5 t  M& U: t*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
