Beef with Broccoli

Beef with Broccoli' X% I3 c6 D- v9 B2 c5 O& A
Serves 3 to 46 B3 B* \/ F/ }4 J% y

Ingredients:' V. v/ G- b8 d% _
3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces
4 j; H- |3 k( W; b
2 Z* t8 o' u0 p, E6 ?% P* x9 wMarinade for Beef:
+ Y) F+ v; L8 d+ F1 egg + Z# J1 \' L: J) B! W- p7 I2 e9 q
1/3 tsp (1.5 mL) salt
; M; W" l7 Y4 |& f1 Tbsp (15 mL) cooking wine
3 o1 d, |/ w1 d( C! H: A# D1 Tbsp (15 mL) cornstarch4 |+ w8 S! b! N# D, ?( C* p  o
2 Tbsp water
" h- P, Q5 Q* U
" I/ ^( s! p  i( w1 1/2 Tbsp (20 mL) oil# N: P6 [- G7 _' _% t, L

$ I" a/ y) U0 ]0 T2 z( ?( {1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
+ L) V9 e' ]5 f& ]1 e2 {) q5 @1 cup (250 mL) cooking oil
& c  }; Y7 B9 |3 m! K5 Y2 1/2 Tbsp (30 mL) oyster sauce0 \1 A/ V$ _- f& t, S2 e5 j0 G
2 Tbsp (25 mL) light soy sauce( `. d4 |2 {* _5 Y
3/4 Tbsp (10 mL) dark soy sauce
- w4 w# H- Z+ l: b) A/ E1 Tbsp (15 mL) sugar
! L2 {0 h; [* b$ a, Ya few drops of sesame oil
& y( ]' K' b  U5 j: I9 C2 cloves garlic, crushed
: K6 P, e$ o: e4 Y1/2 cup (125 mL) chicken broth
8 }4 p- m* `0 A2 Tbsp cornstarch (if desired)
" W! F4 C( o- m( |! f) N2 B' |. O! g1 n) o6 }- X+ U
Directions:# _3 |0 w  e  j
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
4 v+ m- C* D/ S( a& b' zHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
! e, q" J5 c) E# R3 QAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
/ z. @$ l/ c% P2 O' @8 Y4 F9 s/ yHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
