Beef with Broccoli

Serves 3 to 4) y3 k# Y% S: _+ I  S0 h

Ingredients:% e# b8 e$ s. _/ U; F* |# F2 T
3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces
3 F9 [3 r* G; q+ \4 V+ J9 d' g% T% a" _: v2 S* m3 c" T3 g. L& n
Marinade for Beef:
/ S+ U- Z! B9 q1 k* B/ h' P* T1 egg - Z+ r: Z$ T: {: l( `- Z5 D/ W3 `
1/3 tsp (1.5 mL) salt
5 R  L5 @! A1 g9 J* `. R6 s' q# z1 Tbsp (15 mL) cooking wine4 D) }+ V1 |3 S
1 Tbsp (15 mL) cornstarch+ x% p% \) e7 d2 S$ q, z
2 Tbsp water
* N2 x; C" C! `1 Y/ V' e
" G5 W7 K/ F- f. c1 @8 j3 h0 F: @1 1/2 Tbsp (20 mL) oil5 t; ]: N( W9 j+ G% ]+ A0 O6 b3 [6 N
  h3 B- x0 H! j1 Q& ?
1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
! f0 B" _. z2 F. Y- a8 L3 H1 cup (250 mL) cooking oil. M7 W: O( g4 \6 ?
2 1/2 Tbsp (30 mL) oyster sauce/ ~- G; \9 k) ~& ]+ ]+ H9 i
2 Tbsp (25 mL) light soy sauce
% Y4 r3 H" ~  S3/4 Tbsp (10 mL) dark soy sauce
9 i% q. `. i% z) M9 X" o" F/ x1 Tbsp (15 mL) sugar
' f$ f+ `4 A% N/ |3 B4 |a few drops of sesame oil
+ g9 O6 ^. n& U# o$ L4 O5 _" X- v' K2 cloves garlic, crushed' a. v% J! H! k( z" G
1/2 cup (125 mL) chicken broth5 g$ I' ]: {+ h' T
2 Tbsp cornstarch (if desired)' M4 T- C4 h- w! i4 ~

5 N8 Z7 h) O6 m  K( ADirections:
0 `0 a  k& N8 @Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
# m: W  Y6 `" K3 M( j9 ~6 yHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.( s& ?1 k5 d$ Q
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
8 k. t* X3 k$ V9 bHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

- y5 F- Y5 W$ C) g! i  \7 ?" ^*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
