Beef with Broccoli

Beef with Broccoli

% z, s. u! w; U( t. e& X9 D" q, O* k# E3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces

) ^; u: Z5 V0 Y( [7 o% pMarinade for Beef: 6 ]6 q0 `, y4 H. t* f# p" h, N
1 egg
2 J% V$ G7 m' ^- d( q3 z9 g1/3 tsp (1.5 mL) salt
9 s, i/ M; d0 _9 ^1 Tbsp (15 mL) cooking wine
* ?/ r+ C2 }  \8 }: V8 u1 Tbsp (15 mL) cornstarch" i+ a2 ^+ ~8 X) Q
2 Tbsp water
2 T2 Z6 }& g. C+ R# y% g5 B4 w8 R
7 R5 C$ |5 ~; T& K1 N' A1 w1 1/2 Tbsp (20 mL) oil, x$ [1 l$ V' w' _7 k8 i3 R3 T  }

0 ?# z4 Z) t( L( x1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices/ r) m! a5 I6 \0 B. _
1 cup (250 mL) cooking oil% L# F0 H. _0 B2 |! \9 z
2 1/2 Tbsp (30 mL) oyster sauce4 w/ B- ~6 y5 F4 z% K; q! c% c
2 Tbsp (25 mL) light soy sauce% ~4 s5 i) G0 H, _# {/ r/ Z
3/4 Tbsp (10 mL) dark soy sauce3 H5 p! B; `: H% o* W5 e* ~+ Y1 I9 c
1 Tbsp (15 mL) sugar8 h+ \2 O( H4 c6 B. T( w+ H  U% Y
a few drops of sesame oil7 c+ S5 ]# |9 |+ t% F
2 cloves garlic, crushed
1 k# h5 n+ |0 g# V3 H# q+ {/ \) ?( d" N1/2 cup (125 mL) chicken broth
' k8 y) g& |7 f% @& c2 Tbsp cornstarch (if desired). B% Y; m" U+ |
( r# k) R5 Z- i+ y/ A' q) t
Directions:$ D4 ~" V0 G  n: K
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
5 {! n# z) x* ^: ~Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
* T. {  A, s' s( pAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
, M1 ?1 ~7 l& W4 r- M6 U8 q4 aHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.8 O* j: K6 _, D0 M$ r# @

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
