Beef with Broccoli

Beef with Broccoli& x" U2 ~* v$ s: X
Serves 3 to 4

6 c3 A) y3 V% e# N3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces

Marinade for Beef: " {) c. X) l1 f# @. D" I* F
1 egg
2 Q4 Z% E2 G3 y' G% _0 i1/3 tsp (1.5 mL) salt
  S! f5 y5 ~5 M" O) O1 Tbsp (15 mL) cooking wine2 X% O% {' W' S( h* X% z' o8 E9 b0 R
1 Tbsp (15 mL) cornstarch5 r6 ~# x4 ^3 g' a
2 Tbsp water5 a& V7 F% o, q$ n
$ J9 Z# [& u/ Y; p0 q# W/ z4 X
1 1/2 Tbsp (20 mL) oil* a3 Z8 }  q. M) Z

1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices6 b! D2 n% R/ s
1 cup (250 mL) cooking oil
1 y6 A+ j; N0 Q+ U+ s4 D3 C* o# w2 1/2 Tbsp (30 mL) oyster sauce+ s, Y, M$ [. v; E" g
2 Tbsp (25 mL) light soy sauce
4 J; y& z, X, F$ Q. L' U, D$ n3/4 Tbsp (10 mL) dark soy sauce
, E1 ?5 [! T$ }1 Tbsp (15 mL) sugar/ t3 M5 J9 A4 P" u' i
a few drops of sesame oil
- B* d$ d8 J8 C# }+ q2 cloves garlic, crushed$ e8 w1 j& b* U1 G5 a# n
1/2 cup (125 mL) chicken broth
$ t& [& y) I' t  M, R" z2 Tbsp cornstarch (if desired)

Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
) ?3 U% j) B! @; OHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
" I# u3 S" C& v4 {1 f! JAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
. C* [4 ^8 ^, |0 D- Y8 R9 T; aHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot./ y  b0 q( N3 M, V2 K! p! l: b1 ^! L

Variations
: z& o2 L/ y5 `4 @*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
