Beef with Broccoli

Ingredients:) e0 n1 e' D& E
3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces
* o& W) v& @2 V# Q; f9 d
: Q$ E# c$ U& U8 ]! t; \. @Marinade for Beef:   r$ f$ r3 |, g
1 egg
  v* `/ y" q6 y- ]( I- H1/3 tsp (1.5 mL) salt
* [/ ], N& K9 P4 S; A+ V1 Tbsp (15 mL) cooking wine
* R' c- Y4 E# |- T* z, I8 Z1 Tbsp (15 mL) cornstarch4 D5 ?; `$ x' V% o7 X
2 Tbsp water
" B6 ^, Q* x/ R+ o
9 U3 Q! V3 B3 \) k9 N. @1 1/2 Tbsp (20 mL) oil
/ h8 m8 u* |& V5 y1 r* m; L) ?, o7 S5 d2 J- f9 c1 Q' }
1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
( v2 V! b" M5 H0 K9 K) r1 cup (250 mL) cooking oil. M8 h4 S+ ?' a1 |( V! N3 b" \
2 1/2 Tbsp (30 mL) oyster sauce+ Z$ m, E6 M! y" x+ l0 |6 @8 T, W
2 Tbsp (25 mL) light soy sauce
5 {: Z& T% Z$ V  d5 p- @3/4 Tbsp (10 mL) dark soy sauce
6 y  ]# W( |- T0 `7 N2 V1 Tbsp (15 mL) sugar
  L3 ~3 w' P0 Z" `) U  V7 e* Q8 x  ta few drops of sesame oil, U* g+ e% J2 Q, q' ]  Y" w1 K
2 cloves garlic, crushed2 U$ ]! |1 B: Y1 {! H' y8 u" t( [2 C
1/2 cup (125 mL) chicken broth6 \# l4 G7 ~5 b
2 Tbsp cornstarch (if desired)

- a! I$ d+ H4 T' v) `) PSlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. " S9 m( f  A: L( S6 }0 T
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
' s- [3 y* s( B( b0 j* BAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
) a+ s$ a2 K  QHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.# S9 m  l# U* V1 w

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
