Beef with Broccoli

Beef with Broccoli

Ingredients:  V& L$ I$ C5 V* g+ c( k
3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces8 _, U* f( L4 Q7 E  c

, Q9 @  X+ H, C" Q3 a2 b& y* ~& AMarinade for Beef: ; P7 M( J, Y! T! k6 y3 J
1 egg 1 w3 D1 f) l' O8 G0 P) ^, k
1/3 tsp (1.5 mL) salt9 ?6 l" M! c/ ~7 U
1 Tbsp (15 mL) cooking wine% k) r0 }' {8 x' k. ]7 h+ Y# a
1 Tbsp (15 mL) cornstarch
' {' u# u% I( ]% p. a# B' e2 Tbsp water
8 V9 R( D8 V$ X) ]# T2 n
/ N  i) H/ H8 T  j6 i1 1/2 Tbsp (20 mL) oil
! p, b1 @6 }$ M2 _' s* e1 l+ e' t' C5 d+ F1 @( \* _
1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices: _  g4 K4 s' O9 Z  ~
1 cup (250 mL) cooking oil1 J3 P+ T% x- W8 a  c4 P+ O5 I1 H* O
2 1/2 Tbsp (30 mL) oyster sauce
  f' I/ o* V) Q, r6 y2 Tbsp (25 mL) light soy sauce; X, I5 ~# p+ Y$ q- ?: U7 s
3/4 Tbsp (10 mL) dark soy sauce5 {6 p  G2 o' P" d
1 Tbsp (15 mL) sugar
, T- G' J$ K& J; M1 g. A4 ~0 O# ca few drops of sesame oil
1 m& }. z. r; R1 d2 u- }" b2 cloves garlic, crushed
' B, P/ G* Z' j: {1/2 cup (125 mL) chicken broth( W- d5 {" h" g) S- M! F
2 Tbsp cornstarch (if desired)
" E: b9 v# C4 O) t0 M7 J1 C& e' R$ \. ?; F$ }
Directions:" X! S+ B% Z4 O, M5 q. b& y( B
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. ) K) @) U1 P4 H* O- N' E! h, E: E
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
+ U& ~5 y- D9 p6 ^Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
; y' G  }  _1 c; J/ |+ SHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

Variations
6 o1 v) F& L# Z: z! I*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
