Beef with Broccoli

Serves 3 to 4

& w& Y+ S/ ?8 C5 K3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces
1 g( Z; }/ M; L$ }2 c
8 ?. S4 ^5 f1 \! w$ w4 bMarinade for Beef:
0 H( C  a8 \+ i8 }1 egg * m, p% }  A) @! j" o4 t  X$ G
1/3 tsp (1.5 mL) salt
1 g7 v! k+ P: R- V& J1 Tbsp (15 mL) cooking wine
' T8 B+ f, z( h  u& U1 Tbsp (15 mL) cornstarch! }/ v6 A9 P$ H6 R/ H5 s4 n
2 Tbsp water
( G& ?1 E: u' s$ D( y1 H& l+ u$ ]: \& y' o- u8 O- |
1 1/2 Tbsp (20 mL) oil' t0 T" e% k2 m2 C; {/ x2 \8 ?
- C  d! Q; P- ~) N4 _: l' C6 K
1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
7 U. h4 Q9 T# ^1 cup (250 mL) cooking oil% \6 L- o- t  V4 s3 P
2 1/2 Tbsp (30 mL) oyster sauce) \& m9 e* j4 C
2 Tbsp (25 mL) light soy sauce
! m) ]/ _4 B8 W0 M! V( z3/4 Tbsp (10 mL) dark soy sauce9 J2 E; r5 w2 l( S- N9 Z
1 Tbsp (15 mL) sugar
, Z, y- A/ G4 \# D' e+ Sa few drops of sesame oil
+ e$ p6 w% b1 n& q3 D9 a9 k6 t# y3 T2 cloves garlic, crushed
4 Z' h) t0 h( j$ B/ f( A' U1/2 cup (125 mL) chicken broth
0 a$ J. ]: j5 y! o# f2 Tbsp cornstarch (if desired)

Directions:5 I; D9 a8 Y. ?
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
8 s( Y) h! i8 G- A1 X0 t: A2 U0 w: jHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.# {" Y& O# q2 l% ?: @
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  + x5 Q" p+ l) w+ x2 m* @
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
