Beef with Broccoli

3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces

1 egg
! T  Y- ~; c5 I% p* M" q9 Z. X1/3 tsp (1.5 mL) salt! I% F/ s: M# h8 }4 o
1 Tbsp (15 mL) cooking wine
. U9 p, o# S* ?8 ?) H, e4 U) u1 Tbsp (15 mL) cornstarch
7 N8 P1 {- W. ]6 l2 Tbsp water
4 T9 i; z# |* N1 y; N3 V7 G3 ^, s8 C9 i+ n  V
1 1/2 Tbsp (20 mL) oil
" O4 M" d6 d: H8 i: c- k3 i, Q
& E1 ?2 T# g3 I& q- ], g# h1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
1 o! g$ P( ^. m  W# f: `, P6 c$ @1 cup (250 mL) cooking oil- e# G4 J; w1 {- k; c( l; H( R
2 1/2 Tbsp (30 mL) oyster sauce5 F+ S9 p& Z9 Y
2 Tbsp (25 mL) light soy sauce
* w8 D6 X. a$ \3/4 Tbsp (10 mL) dark soy sauce5 m" J; h% X6 X
1 Tbsp (15 mL) sugar4 H, w1 d" u9 d1 s# _
a few drops of sesame oil
" h. u6 R" C' t6 l' X; B' }/ u+ ]- @2 cloves garlic, crushed
8 o7 r  a/ d+ ]* g6 z6 u1/2 cup (125 mL) chicken broth
2 f4 k/ ^1 a% T, B' f( d: X. Q  a2 Tbsp cornstarch (if desired)
% J- u5 _& _# e7 q2 h

Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
2 Q) ~/ V1 T9 \6 a- q3 k0 B8 dHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.2 V& m" ^( r, C. p) c
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  1 w% l5 r; f, Z; e/ o
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.- Y% \$ y8 j6 Q/ z$ v9 r5 J. k

# t/ ~/ U- R6 `# X3 c) Y*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
