Beef with Broccoli

3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces# g6 N5 K: b$ {9 k
" z  ~! i" O: ]6 S' N/ g& ~8 ~) Y
Marinade for Beef:
7 O5 K- c3 P# k  b  f, ^: y1 egg 0 ~7 q& j5 T4 l% ?
1/3 tsp (1.5 mL) salt: Z. S- X' B- s& a) k
1 Tbsp (15 mL) cooking wine
$ ]  I9 e7 s8 M' G4 P/ @6 y/ F1 Tbsp (15 mL) cornstarch
8 _* r( G. n+ `1 q3 x/ t: n' H4 y$ o; t2 Tbsp water0 n4 s3 Q# ]# x% q

& ?9 k, A' t# E3 H( z, X4 t& E- z. V# a1 1/2 Tbsp (20 mL) oil
5 k5 k# H. }3 Y1 {& [0 e) z) m1 b2 G( @
1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
0 ^# V+ S: Y! X1 cup (250 mL) cooking oil
9 V0 _& d2 p/ |  s( z, L2 r2 1/2 Tbsp (30 mL) oyster sauce
* b( @. m, b9 \+ y2 Tbsp (25 mL) light soy sauce: L' {7 l* P2 u2 \
3/4 Tbsp (10 mL) dark soy sauce
" Y, n' i6 G4 c- l1 Tbsp (15 mL) sugar
! i. H: k8 X" N5 x/ E- Q" e! Ca few drops of sesame oil
0 g6 A7 }! {/ U2 cloves garlic, crushed7 n3 B& g& f, ?" a2 ]) X
1/2 cup (125 mL) chicken broth  e% H2 F! i! g/ Y
2 Tbsp cornstarch (if desired)
9 ?- y: }' |( C) ]% a2 k3 _" X, |$ f7 c8 K# o
Directions:  v4 B. f' n( D
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. - M4 D1 T* \6 H8 b7 w$ A- q
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
! r# y7 L& q& L$ P* p! XAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
; B2 G% w5 d2 }' THeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.  b+ G; O; Q/ ]1 v

Variations
! `* x/ ^- f1 r* l8 U; F*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
