Beef with Broccoli

Beef with Broccoli

3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces5 Y; m+ v) ^. y) r& z

Marinade for Beef: 5 e3 _4 A1 c* G# y2 Q
1 egg
) W4 H5 w1 z( E- {1/3 tsp (1.5 mL) salt
0 K* M/ ]: }8 s6 Y1 Tbsp (15 mL) cooking wine
" p0 ]: B! _# w! {# B5 G5 ?5 B1 Tbsp (15 mL) cornstarch

) p2 P. t! r. {1 1/2 Tbsp (20 mL) oil+ C  |, n9 P& B4 a

1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
* V* X# o) F# s& ]; n1 cup (250 mL) cooking oil
7 U+ m4 _# h( r/ b) I  a2 b6 ^; d2 1/2 Tbsp (30 mL) oyster sauce8 m8 e) p. Y: l4 E# t; y
2 Tbsp (25 mL) light soy sauce
( L  n4 F/ e$ o; Z& m9 r3/4 Tbsp (10 mL) dark soy sauce
0 F. M1 K- U3 N% R7 H1 Tbsp (15 mL) sugar
6 [8 x1 Y7 R1 z' i5 h" oa few drops of sesame oil4 T* c% T( ?: v3 }& |! R. D8 s
2 cloves garlic, crushed1 m* O& e+ X4 B8 Z) c
1/2 cup (125 mL) chicken broth; _1 V. x  j( R* M. u
2 Tbsp cornstarch (if desired)$ u! [& m3 |9 k8 H4 O; x: Z

3 y! v; [$ ]/ {; C# [( h  oSlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. , P; V3 g' i1 q' }, {
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
$ P$ R/ Y! c9 T5 e" I+ SAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  ' s, i0 i1 I( ~8 _* w0 m) I5 Q) n
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
