Beef with Broccoli

Beef with Broccoli

Ingredients:
2 e9 F0 R5 V! y: L3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces

, a, I/ `+ J- F, aMarinade for Beef:
5 d  k- f1 H) V& R1 egg
* x; M- k( f/ [1 L6 D, Q1/3 tsp (1.5 mL) salt6 Z+ K6 }8 ^. K; B7 }
1 Tbsp (15 mL) cooking wine  ?& c. |: P8 ]9 z' N, E
1 Tbsp (15 mL) cornstarch
1 p% w0 H* p6 F# W2 Tbsp water
9 w. U" o' j4 |1 o7 L, c5 B% K" K# e5 S' k
1 1/2 Tbsp (20 mL) oil
. }4 y1 v5 X4 W4 R+ S
& j; S% g$ Y' S: y) N+ B2 Y7 K1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
+ N& f0 p9 j  a, E% w- @, |1 cup (250 mL) cooking oil
9 q) T, D9 U. u2 1/2 Tbsp (30 mL) oyster sauce9 q( S: {6 k/ m% a. G  O# A
2 Tbsp (25 mL) light soy sauce0 B, V% Q  G, J8 x& A" f
3/4 Tbsp (10 mL) dark soy sauce
, d7 u; X& ^& o# h" u" c) `$ c- m8 h1 Tbsp (15 mL) sugar
$ c, l% C  y4 @+ d0 \a few drops of sesame oil: ^, O7 c9 M, Q
2 cloves garlic, crushed7 p' x* V  T/ i/ c& s, E  ?% z
1/2 cup (125 mL) chicken broth
2 P5 {& f( B+ ]8 u( [3 r2 Tbsp cornstarch (if desired)

Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
4 ^0 Z: O0 E1 R+ ZHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.3 O3 Y: G! A' D( k
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  % X; N. M7 }$ l% U* e( I
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.: n+ }. P1 F. g+ Z

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
