Beef with Broccoli

Beef with Broccoli% G/ ?1 g& p8 u/ q8 K2 Y
Serves 3 to 4& c. @2 m0 {0 v

Ingredients:
) a9 v& X5 S2 B! f$ |4 H- H3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces
- f/ W2 [5 Y# ]4 O5 b! ~* \7 W  T  L: k3 l. s+ o* c
Marinade for Beef:
3 x2 n! {" a3 H% ]4 ~8 D" s4 p% n1 egg
3 h) l2 c; D# b& O# N; W" J1/3 tsp (1.5 mL) salt) R  U- F9 b! X0 a$ d9 |/ N
1 Tbsp (15 mL) cooking wine
: f7 Z& I# H" |" c9 A1 Tbsp (15 mL) cornstarch9 g: h$ h9 Q4 y$ J8 d' d& f. l7 h
2 Tbsp water
: S1 g' b7 l- h. e+ C" S- C& i% x' g, A- K- t# Z3 g
1 1/2 Tbsp (20 mL) oil
/ p9 {& j1 V" T! H
. h# b7 ]9 h6 A$ C2 L  U. K1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
/ A0 i5 Y& y) S: c3 d1 cup (250 mL) cooking oil! d, q3 P2 y. a
2 1/2 Tbsp (30 mL) oyster sauce
' J4 e' V+ N+ Z4 W0 {8 K2 Tbsp (25 mL) light soy sauce( y& l# Y3 J+ l
3/4 Tbsp (10 mL) dark soy sauce- X& J4 {7 i' v  A& ~0 o* J; L0 @
1 Tbsp (15 mL) sugar3 {: L0 c7 w$ m, i& l( K' X* G9 q
a few drops of sesame oil2 @. |+ l- W0 ?# s2 v6 Z7 H
2 cloves garlic, crushed& ?- p& J+ H# M
1/2 cup (125 mL) chicken broth
. @/ c! Z8 y" K2 {4 n5 F. |, I2 Tbsp cornstarch (if desired)& e8 Y4 \4 Q2 f- e& r
/ _) f& q1 Z2 x9 I2 r& i/ f
Directions:
6 @& ^) j2 V) m1 g! RSlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.   F9 \( y) n4 w* u8 _
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
8 A" R# G( F% ?5 x. z& x1 qAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
; m; T" i+ v1 ]2 s) B" h7 ZHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.4 q4 N' H% X' M+ E8 h& g1 H

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
