Beef with Broccoli

Ingredients:, _( [0 E; G% y7 T
3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces

1 egg
, O  J4 }* k" Z8 E5 t: {1/3 tsp (1.5 mL) salt
+ U$ C4 L1 R' w0 j9 l0 P9 G1 Tbsp (15 mL) cooking wine! v2 U/ V# g' a3 u& Z/ d* U6 @
1 Tbsp (15 mL) cornstarch; E) b! M7 i! L" U9 b  V
2 Tbsp water' ~- j. y% M( H8 l0 \# M
+ q$ L' @. `2 F" }, h( }
1 1/2 Tbsp (20 mL) oil

1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices9 \! o: I' X, L* F' ?
1 cup (250 mL) cooking oil: _0 r7 k+ L2 O
2 1/2 Tbsp (30 mL) oyster sauce0 J/ [2 {  Z% Y0 {: v$ W% v& ~
2 Tbsp (25 mL) light soy sauce+ R* P0 K3 K* m" @! C
3/4 Tbsp (10 mL) dark soy sauce& U  L2 n, {; `5 m0 ]
1 Tbsp (15 mL) sugar
+ K2 B& F6 S; i! ?1 V+ ja few drops of sesame oil7 S- t9 |. C1 r/ f, e" v1 V/ F
2 cloves garlic, crushed9 o+ |+ E% F2 F' F' ~  i1 d
1/2 cup (125 mL) chicken broth, J' e2 v8 C" x* m9 q* P
2 Tbsp cornstarch (if desired)7 L! a" V& E  g2 g7 Y: C
+ a8 n- I- }; i4 k4 T
Directions:5 r4 [, k0 o/ a6 C* f! b
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
+ R1 g8 W% r4 W9 bHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.* ]1 `9 |( j! ?6 r
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  . P5 P. F# w) J7 ~2 N3 U
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.* S6 d8 f* R" V% D/ d

" O3 l8 a# V& w8 M2 C. B% b) Z*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
