Beef with Broccoli

Beef with Broccoli

/ h$ }: I' }' X' V" n  B# m5 ^% V( A3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces. R" D9 N4 F- E  C

* D6 m1 ]- m- r1/3 tsp (1.5 mL) salt' y( Y# X( }; e2 E) ^
1 Tbsp (15 mL) cooking wine
/ N  B- C; U* K( P1 Tbsp (15 mL) cornstarch( A! c  G! ~( A& K( n1 k
2 Tbsp water
3 ?: l3 |4 ~- Q; h) s3 V' o, H7 T2 J1 u
1 1/2 Tbsp (20 mL) oil
9 t0 x0 T# F# i: a7 S
) m: O# H8 M/ F- _+ l! y1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
/ L1 p; f" |8 r4 q1 cup (250 mL) cooking oil
) i  A" N, h, Q5 G7 I/ o6 O2 1/2 Tbsp (30 mL) oyster sauce6 v+ q; A: E, {- Y& e
2 Tbsp (25 mL) light soy sauce, F$ L& q: D4 ?) _4 U5 w
3/4 Tbsp (10 mL) dark soy sauce
; j8 A* P2 H$ m" w) h/ z& K* }6 @- X1 Tbsp (15 mL) sugar! s8 ?* r8 ~+ H) J; F
a few drops of sesame oil) Y- y1 r8 C0 Z- r" Z
2 cloves garlic, crushed
) ~0 r/ A* ^- f+ ^1/2 cup (125 mL) chicken broth
% |# E1 X# f9 L. B2 G- h" _2 Tbsp cornstarch (if desired)) p6 @/ I8 k# U1 ^9 g
/ C# `+ a- C, L1 y3 A8 T4 m. I
Directions:
3 P' r, }% ~8 K& YSlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. . {& V5 _' u' p- r7 T. ^/ I
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
0 d5 A$ [* O" cAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
) ?0 J4 P/ l/ }$ E6 I. PHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot./ M) M, E0 z, u( I2 w" X6 W

# f! }7 K; c+ g6 R! N' F*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
