Beef with Broccoli

Beef with Broccoli

3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces
+ [. n1 m5 @7 h" r
$ c: {  O6 q  A" pMarinade for Beef:
  W3 m1 f6 f) i) k- O3 Z, Z  X1 egg $ q  Q* o0 B  i5 u( r* j( _
1/3 tsp (1.5 mL) salt- |# x4 J' ~) S7 c! L# a! _
1 Tbsp (15 mL) cooking wine
1 E" K* b6 l" q, S  ~8 k$ f1 Tbsp (15 mL) cornstarch
' n% m2 m! S2 Z$ w, J2 Tbsp water2 W0 ~& H, N+ U  S; x

0 i) I+ R. X* _& `9 b" V1 1/2 Tbsp (20 mL) oil
+ E! v: x# H" _# s  m/ o: v% Z& |3 x' [2 F9 K& m3 \4 m. Y7 c
1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
) O# S2 \. i0 G  u1 cup (250 mL) cooking oil
- k% i: l7 j& b; O7 U2 1/2 Tbsp (30 mL) oyster sauce  u& ?% t/ ^7 a/ Y3 _
2 Tbsp (25 mL) light soy sauce" p! |$ r# z0 i3 E  L& B. J
3/4 Tbsp (10 mL) dark soy sauce; t% i7 G/ D; R! Z4 C$ ?' \  L) c
1 Tbsp (15 mL) sugar
7 ~; V/ w) [2 ~a few drops of sesame oil5 P) ~- x% Q3 r( E. ^
2 cloves garlic, crushed
$ I) m8 I: v, \) y7 r) y' p2 P8 n1/2 cup (125 mL) chicken broth
0 U6 ^; h8 T; B2 Tbsp cornstarch (if desired); R: G* @* M  f

/ P/ B6 O. M% i) S3 @0 x0 bDirections:
' {6 v, D  v" x" \" sSlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
# D- u0 D- O; n1 _- o% gHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
/ M) [. P5 t8 j' \1 X, mAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  3 j. |% o0 T9 |3 ]. J
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
