Beef with Broccoli

Beef with Broccoli

, P; D3 e) X0 h& H+ v' E3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces

Marinade for Beef:
' ^$ J" y8 A6 g% C1 egg ! m2 l3 U9 D+ E. d- U5 Z* X) N
1/3 tsp (1.5 mL) salt
6 d; `- w* x7 d7 k' R1 Tbsp (15 mL) cooking wine
/ u  E, f. v- ~; S9 d. [/ J2 [* r1 Tbsp (15 mL) cornstarch
, O+ Q, T6 H8 E$ L/ A- }; |2 Tbsp water
' S1 S  F6 S2 y. h4 z; E3 B: D) D4 ]" V% p0 B" W
1 1/2 Tbsp (20 mL) oil6 J+ l( P4 o% `, o9 M

; y/ Q5 S' |2 a* z$ D' `1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
! e8 [5 c1 X. h+ F1 cup (250 mL) cooking oil, J8 x2 w+ V1 V6 m
2 1/2 Tbsp (30 mL) oyster sauce6 K/ ]5 ], ?9 V( C
2 Tbsp (25 mL) light soy sauce- E$ I+ s4 T6 Z6 m% l; P0 i
3/4 Tbsp (10 mL) dark soy sauce
0 D! N! x$ P' \$ P1 Tbsp (15 mL) sugar3 H. ^; g4 Z- R4 T7 N$ d6 e1 x8 Q
a few drops of sesame oil8 i/ T1 w8 G2 y
2 cloves garlic, crushed
( G+ t& F, m7 y* b7 o1/2 cup (125 mL) chicken broth( [( ]- |$ `5 m, U
2 Tbsp cornstarch (if desired)1 o/ Z7 p" C4 _6 s' V. A" E

Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. 0 b) C3 D" }; n, @+ H( [
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
' l; u  t: ^3 \8 F8 E- VAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  1 M2 a  ?: C, X
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot./ h: ^7 m. L- l+ x* }) g1 ~

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
