Beef with Broccoli

Beef with Broccoli% x! B% {# h) ?$ D# q% B: ^* h- X) F
Serves 3 to 4/ v, v8 b9 {7 k8 r" O

3 J# I5 S6 E. uIngredients:3 Q9 D9 x, r" _
3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces: {+ ~3 A% E" \3 m7 X8 M; ^

: B- S8 n! h: d+ _Marinade for Beef: . {! y: _/ S: m. {$ M& s2 F- X2 a
1 egg 6 h/ l4 ~" K3 E2 @- u) q3 `
1/3 tsp (1.5 mL) salt
5 O5 r+ `5 V, l( g  G' _1 Tbsp (15 mL) cooking wine
& w- u" E- C6 e+ y$ C& J1 Tbsp (15 mL) cornstarch
& n. l' p- O0 L2 Q& \2 Tbsp water
- k8 n& g4 n" e  D- A( z4 X- Z7 f; u; M1 n: h9 o( T
1 1/2 Tbsp (20 mL) oil
- K/ {( |; r. X7 O3 Z7 v4 s
% t/ H' X4 E6 `* Y  j+ p; N6 N4 O# m8 K1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
* p# @( w  n, y7 D% m& r* @1 cup (250 mL) cooking oil4 ^2 J+ [4 a3 c3 G" K
2 1/2 Tbsp (30 mL) oyster sauce
3 \. A9 R. R$ I# H2 T" t2 Tbsp (25 mL) light soy sauce
1 v: _# Y; L7 Q5 E7 q  A( W3/4 Tbsp (10 mL) dark soy sauce
! l- K8 n9 b8 i+ b2 f  [. x( c' G1 Tbsp (15 mL) sugar
" k& l! @) _! ~2 G% A4 Ea few drops of sesame oil2 Z. b/ a* t* A( T
2 cloves garlic, crushed
# A" B4 P! I1 [5 Q. g1/2 cup (125 mL) chicken broth
( p/ C9 x* P+ u' C; h( Y; p" }* u2 Tbsp cornstarch (if desired)
' L1 }5 H) m) Y4 H3 s0 u4 F1 a* }, J' A; k( }& p" S
Directions:+ F7 `) j2 j- D$ M
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
3 {0 Q4 ~; F1 VHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
7 s. P% y" r1 [: S. pAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
& z% n, v0 T7 c, ~% U' _2 ]  J9 ~Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
