Beef with Broccoli

$ f) w+ j: G, |! F- F3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces

Marinade for Beef:
- ^" a" v, K1 d0 K: F, E1 egg ( f6 Y" c) i& L4 w6 X' F( _, @2 b
1/3 tsp (1.5 mL) salt* j+ w1 z! g( L/ P# l3 O& {9 H5 ^
1 Tbsp (15 mL) cooking wine
# r) u1 w; v! Q/ J7 T1 Tbsp (15 mL) cornstarch' l; v- w. R* X' W
2 Tbsp water4 }9 r" O; u! G; Y- n2 I

1 G, J9 o# I# z) S0 ^+ R' ?1 1/2 Tbsp (20 mL) oil3 v4 n) n0 h6 t9 w% L7 ^

1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
2 [* b' x6 v% [6 H, A$ H1 cup (250 mL) cooking oil7 H' e# [" e7 T( u" l) Z" e
2 1/2 Tbsp (30 mL) oyster sauce: J' G2 v  }( M. p" B$ Q* @
2 Tbsp (25 mL) light soy sauce
; @7 t4 W! N1 a; q$ \/ @& l4 O8 W3/4 Tbsp (10 mL) dark soy sauce
$ c  T2 {" _( z- Z: D1 Tbsp (15 mL) sugar
3 A1 w- p  n$ |/ p1 ja few drops of sesame oil% Z2 d( c' p8 R! O9 d
2 cloves garlic, crushed+ M9 b6 U6 g* X3 h# j* v4 e2 h. d4 e
1/2 cup (125 mL) chicken broth, F- W7 [, u9 F. I" S% w
2 Tbsp cornstarch (if desired)

$ ?. J( p% f: pDirections:
9 D* T* y( i7 ]' Q: K3 \% HSlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. 6 z) c$ U3 X. l2 p1 v0 ^% C
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
* }) F9 L; d, @8 p; b: u' d* k) ]Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  : F% I( s. Q/ F
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.7 z& q) t5 ^. j9 ^

9 A6 y- V2 g0 F$ K/ N& @% B*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
