Beef with Broccoli

Serves 3 to 4

Ingredients:
% _8 B' H6 Q# k3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces  K5 _9 C/ y8 r) T" P6 {% ?

/ h" E' E  c$ w9 \Marinade for Beef:
: U1 n1 Q, \& g  f1 egg ' g" R5 M" F. n" p
1/3 tsp (1.5 mL) salt
- D" L) s5 _- X' ?9 J* M1 Tbsp (15 mL) cooking wine
. Y* z0 q* m9 _1 |5 Q; l! E& N$ r1 Tbsp (15 mL) cornstarch) E' E/ n; F4 u: }
2 Tbsp water
; U8 ^0 ~- k- d/ }3 S# J! }% n) j6 F! I5 J6 m% M/ s3 o
1 1/2 Tbsp (20 mL) oil2 u: F# z# C" @. T* i" F: f

0 J9 E" O  I+ T; P! V# G% B2 V# f1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
2 V& l9 @6 t8 S1 x1 cup (250 mL) cooking oil
4 I1 A* @. D2 g: Z1 @* W/ k; W2 1/2 Tbsp (30 mL) oyster sauce
7 |0 h" ~3 k! p$ `' `9 Q& ^9 I; r- L2 Tbsp (25 mL) light soy sauce
" _1 M4 d7 o; o+ ^$ i& V3/4 Tbsp (10 mL) dark soy sauce+ T* C0 `  M& y4 h+ Y' ^! ?
1 Tbsp (15 mL) sugar! U! F) f( G( ?( G1 E  T/ O8 V# F8 U, Z
a few drops of sesame oil
: s% X6 c4 x* W& q0 n6 f* T2 cloves garlic, crushed' v6 D4 k- \5 G- F5 O+ m7 Y  u+ }
1/2 cup (125 mL) chicken broth, Q  c8 X. J8 I* ?& ]- g
2 Tbsp cornstarch (if desired). ?0 |) K' Y4 s, \, d; ~( @6 A
( g6 L+ ], A# W
Directions:6 T: Y" B" S/ i' G
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. ! Y4 G* V. N0 F' V5 C% d
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
9 s; f! I% \1 VAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  # X& h8 y& r9 @9 |* M  e) V8 i- \
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.2 p3 }' a4 g# \- g

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
