Beef with Broccoli

Serves 3 to 4

4 V" J" ?) {7 s5 H3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces- ?6 S1 K- @, q$ u, L- I

1 egg
4 Z/ {$ o3 G; k  Z; ^4 u1/3 tsp (1.5 mL) salt
+ N: U# X, u; K, N# f7 z% i5 _" ?: W1 J1 Tbsp (15 mL) cooking wine+ N: A  M8 M' w! J
1 Tbsp (15 mL) cornstarch- X7 \* e" {: l: O7 b
2 Tbsp water
5 x8 G, X& k* \0 O, A0 `/ b) y+ a. j5 {) B, P
1 1/2 Tbsp (20 mL) oil
- G( J! ^' l" X: T: ^1 _: H1 S/ q5 E' o, s1 `
1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices9 S3 F/ u7 Z$ A3 ^' _$ r* e7 x/ s) Q
1 cup (250 mL) cooking oil
6 ?% _3 @* o1 P* {! g/ l, ]4 Z) g2 1/2 Tbsp (30 mL) oyster sauce
, h" b- m- u" C3 e2 B4 P* z2 Tbsp (25 mL) light soy sauce
) f+ w& x! X3 r, v+ s3/4 Tbsp (10 mL) dark soy sauce/ \* s' ?2 |# J: O' e/ V
1 Tbsp (15 mL) sugar! @8 H. y7 V2 r% ?- F" `3 S- y
a few drops of sesame oil
4 L( b5 B3 X/ Z" _0 |2 cloves garlic, crushed+ J0 Q6 M; o$ P1 ~* J7 u
1/2 cup (125 mL) chicken broth, V  x1 v( P3 [5 ?
2 Tbsp cornstarch (if desired)* H) D) B: i  g6 ?6 F: I2 `

. w7 o- d, B; S/ SDirections:
2 |4 N! ?  u  J) R2 x4 U; ASlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
) }' F6 h( u5 ?Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
9 i% R; b  U* X' x! _- V: pAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  ; _% U% t. ?9 H! b9 W" _: f
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
