Beef with Broccoli

3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces
+ M& s. ^6 I& A+ r
4 u! H- @% H% ?1 {% X4 }4 B0 dMarinade for Beef:
# }; o( G2 F/ S  j, T! S$ g4 C1 egg # \- @+ l2 }" z: X+ G$ Z$ w
1/3 tsp (1.5 mL) salt/ l) ?$ A/ \- H1 g/ ~
1 Tbsp (15 mL) cooking wine
9 r; j8 f& Y& O2 M2 X; g, y8 N1 Tbsp (15 mL) cornstarch
  |, s; X. g  s! g6 y; [& k7 Z! D# d9 u2 Tbsp water
9 i7 g, O; V! ]7 O8 A: |' T3 L! M" s6 z- F! d0 g+ F! c7 ^. P; M+ _
1 1/2 Tbsp (20 mL) oil" E6 C) E$ T) T9 G  N& V* v/ ?, P

# ^0 M( }, a8 y% S1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
8 s- D* v  W; U% L* o1 cup (250 mL) cooking oil4 F; E6 o& F0 {# X
2 1/2 Tbsp (30 mL) oyster sauce# Z) ]1 H2 i, W
2 Tbsp (25 mL) light soy sauce/ n5 k. m: P# s. y1 C  Z5 Y! v) _/ d
3/4 Tbsp (10 mL) dark soy sauce
1 p8 X" \- z9 }1 Tbsp (15 mL) sugar- _& K" N6 g' M2 v& S' ?1 E
a few drops of sesame oil
% s- J9 V& y6 D1 y, h1 V6 b) ^2 cloves garlic, crushed0 D6 {* b+ c, N( d1 ^5 E
1/2 cup (125 mL) chicken broth
- S! B. `3 C" m) r2 ^& y2 Tbsp cornstarch (if desired)
; U: l% Y" V4 H3 Q' a- K$ `) C) q, f, J" Y) B' |
Directions:
7 T6 l* c+ t. G8 k9 SSlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
" t, a. h; j2 L3 w$ V+ p2 i9 cHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.% p- O7 k( `# Y# p
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
+ g; D# T7 f& w+ y# Q2 |Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

0 J4 L' `0 M+ v*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
