Beef with Broccoli

Beef with Broccoli

Ingredients:
( ?! I" }4 ~5 U4 w& F3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces

Marinade for Beef: ; K0 n2 N! R6 ?/ S+ Q6 q
1 egg
) z' _, Z5 s- C; o( C1/3 tsp (1.5 mL) salt$ ~" S* b+ }8 t. M# {) B( I
1 Tbsp (15 mL) cooking wine
! a! G* D- D! U# I' A' z  t1 Tbsp (15 mL) cornstarch* Q8 Z( F$ @9 z8 ]& a
2 Tbsp water- k$ a  I# I- J  R% m& D+ D' b5 h
+ x0 Y: k' v; h7 h1 ?  O# H( }
1 1/2 Tbsp (20 mL) oil' r! j6 f. E2 {) q$ ^) Y

1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices- ]% g/ o! q9 z  Y& M* P
1 cup (250 mL) cooking oil, c3 I% ^+ l) n( M
2 1/2 Tbsp (30 mL) oyster sauce
  [* `4 `, Z; G+ S& E2 Tbsp (25 mL) light soy sauce$ l& Q# b0 T7 |4 N0 `: q
3/4 Tbsp (10 mL) dark soy sauce8 Q  u5 V: z2 h( P8 Q6 d+ B  S+ o$ C# |% r
1 Tbsp (15 mL) sugar1 X8 m* R0 f. k6 D9 ]+ ]
a few drops of sesame oil& }# m' v) G2 a/ u; E6 h7 L
2 cloves garlic, crushed( P- Z: E/ T  z' Q' t' o2 u& W1 A
1/2 cup (125 mL) chicken broth; g+ o/ [: s( K% |
2 Tbsp cornstarch (if desired)7 X3 \# k5 `: w: H1 ]( V

7 O0 l: ~* I0 P5 W+ B8 H# CDirections:
; b. _% ]0 |/ f5 W) V, Y3 FSlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. ( y, h7 I0 }. c' |  f; i
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.( a) M% y' [1 c! R8 n/ V- e
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
! J; I4 Z# \, s4 ]+ a: wHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.6 y; I' x3 X4 m5 E% R

Variations
# Z0 h8 }- R# R& u- P5 |: P*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
