Beef with Broccoli

Ingredients:8 u4 m" ?" e* z9 Y- C8 [
3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces2 r  ^2 J. f' o+ R) U1 A0 u6 n

) S/ n: k% G1 p% y* }Marinade for Beef:

1/3 tsp (1.5 mL) salt
2 a$ Z2 J8 J) p# A! @; s6 K- e. d1 Tbsp (15 mL) cooking wine3 n8 F3 v1 l- U
1 Tbsp (15 mL) cornstarch6 O4 A+ ]9 \$ {' s. r) X
2 Tbsp water
* |0 {! y* H0 p; p" {3 K/ B" a+ I( ^2 c& e
1 1/2 Tbsp (20 mL) oil
) C/ t" o# p* _4 c, `# c
  @' e$ M) I$ E$ a6 C/ n1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices* ^. V. v2 C: |+ B
1 cup (250 mL) cooking oil% ]7 [; L. T! [9 d8 g; |
2 1/2 Tbsp (30 mL) oyster sauce
9 t2 k/ r. [) Y4 j7 I2 Tbsp (25 mL) light soy sauce
! z- A) h: u) Y: O, G3/4 Tbsp (10 mL) dark soy sauce
; [: I" h$ c$ w) D* `1 Tbsp (15 mL) sugar3 y- T* M! |3 p, d& p. ~7 {
a few drops of sesame oil* f; Z5 q) r1 G( |$ [. c4 W; s' E
2 cloves garlic, crushed% N, ]( R. T* l( I
1/2 cup (125 mL) chicken broth
: P2 R2 N# V, _9 h" C- Z/ L2 Tbsp cornstarch (if desired), V) @, U" j3 v1 x' t
+ Q5 r8 X" ^  J  _
Directions:  P* G, W# k/ T# h) M1 z- B& d
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
. c9 q/ X% j: b1 P( AHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
1 L. \; N5 a# q! e/ J+ VAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  ' ]3 }' U5 N& J. y) b! K
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.( ~- g5 J3 g! S* n4 o' x' h) T

  m9 V; S4 g* ?# p. F% y% s* ^*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
