Beef with Broccoli

Beef with Broccoli

Ingredients:
: v- P& l. V% q! Y" U. G4 c3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces
: \% P, e' C4 O; E$ H
+ {% A' P2 W) rMarinade for Beef: 4 Z' |5 c  |$ c- C& l
1 egg
  s( h, Z) I0 B. Q. w1/3 tsp (1.5 mL) salt
9 u  [0 ^; k9 M4 @5 ?1 Tbsp (15 mL) cooking wine
0 K! M8 g9 S: `4 Y/ o1 Tbsp (15 mL) cornstarch' Z! _7 g5 c6 U) T8 b! C/ K2 P
2 Tbsp water5 e1 x  d1 `5 s4 j) `& ]5 k; X
0 u: k: v9 `& c
1 1/2 Tbsp (20 mL) oil
! i0 L" |- D: K' ^  F# F( d) `, N% e" ?' I- g  h
1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
5 e. [5 M% n' z5 @1 cup (250 mL) cooking oil
; l) G8 D" L( ?  o$ h2 1/2 Tbsp (30 mL) oyster sauce
* [' i9 C3 _8 @6 H2 Tbsp (25 mL) light soy sauce
; |' F* B) k7 Z' l! V- A3/4 Tbsp (10 mL) dark soy sauce
& h- l6 F: \4 ~1 Tbsp (15 mL) sugar) b. Y' \! ~4 o5 i9 i1 H$ _
a few drops of sesame oil
$ ?% {5 W& J: j  @. M2 cloves garlic, crushed- i$ q: ~+ g" x# T3 [, B+ \, _4 T
1/2 cup (125 mL) chicken broth
4 j/ w8 g1 X* |1 r/ L# \2 Tbsp cornstarch (if desired)
% p+ _5 o3 s& e' [; W
0 l! ~6 ]4 O* ], X" f2 G- c- x3 o* `Directions:9 K+ H  E' P: f5 ^3 |' J
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
) ]2 v( d1 _; k; V% JHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
( K# v, {" I0 F! eAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  0 p, y/ q3 g1 U
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
