Beef with Broccoli

Beef with Broccoli

3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces  W. S, b* @6 X
! W6 Q* \4 l/ I9 r, Q  v3 l
Marinade for Beef: 9 @( P# r% |2 F
1 egg
8 A" [" _2 r3 @& |4 o/ O1/3 tsp (1.5 mL) salt
: D+ {$ Y+ ^$ B9 I8 R1 Tbsp (15 mL) cooking wine+ ~2 {* x# B7 r4 b6 O5 ]
1 Tbsp (15 mL) cornstarch
9 T5 _4 G6 z( Y) d$ \2 Tbsp water* R4 K6 @3 a3 J" o9 ^1 j2 F2 ]

  x( c8 d' _8 R- A9 S1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices# s6 \& Y; H, V3 }2 F2 G8 c: D% Q, E
1 cup (250 mL) cooking oil4 o/ u9 ~* o5 a2 @3 W8 X4 C6 P! t
2 1/2 Tbsp (30 mL) oyster sauce
" _  K# Z4 G  f- ^- j9 M2 Tbsp (25 mL) light soy sauce
1 @' ^; X9 ^/ P) b3/4 Tbsp (10 mL) dark soy sauce
% z9 s, e9 F# Z( |# s0 l1 Tbsp (15 mL) sugar3 t1 e% Z5 K0 P% {
a few drops of sesame oil) P. G% g$ e3 v9 y
2 cloves garlic, crushed
8 a6 d; n- G0 o+ T- [. a1/2 cup (125 mL) chicken broth
& _0 b6 u' n6 q8 l- i' \2 Tbsp cornstarch (if desired)
+ y, w8 r. O9 K7 N" c. e' H+ e
+ }  ?- o3 j6 ?$ GDirections:
: E, Z# d; B: k4 ~7 |Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
& ^* S7 |8 z3 x9 q( l- `% |Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.4 ?3 D* S5 O( L4 v
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
1 |3 B! {2 ]5 AHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

Variations
+ E9 X& ~0 `4 {/ [$ R*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
