Beef with Broccoli

Ingredients:
: y' U6 s5 D+ h/ U/ c& `3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces
: s0 D2 y7 |0 x  B4 }) X/ G8 u8 B0 S; e) \  G" |) a
Marinade for Beef: $ Y' ]  `7 i. z/ l- }
1 egg
6 }( Y1 Q6 [6 `" j, K0 }1/3 tsp (1.5 mL) salt
4 j. ?0 V0 N* f6 e1 Tbsp (15 mL) cooking wine
6 V# ?) y$ Q6 |4 {5 T1 Tbsp (15 mL) cornstarch! v; D; @4 V# L' {! ^6 w
2 Tbsp water
. l, @9 P+ U* z0 L8 I/ F4 v& B$ R, [2 V
1 1/2 Tbsp (20 mL) oil. s# K: I4 i" g7 T) u

! F* @( L$ {7 l- i$ s1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
: {! y+ Z  t, F/ G! b8 n1 cup (250 mL) cooking oil
+ d. F" k+ X' e2 1/2 Tbsp (30 mL) oyster sauce! n8 z3 D9 n- }
2 Tbsp (25 mL) light soy sauce! K# X0 k; k2 J2 e. i
3/4 Tbsp (10 mL) dark soy sauce
% n& G0 m  s; `( v1 Tbsp (15 mL) sugar) J% d" Y1 V8 z  |, F
a few drops of sesame oil
6 r/ D& U2 Y: S0 C, V2 X% ^; d2 cloves garlic, crushed
& a" M" ^, B5 S" ?1/2 cup (125 mL) chicken broth2 J2 W0 c, g7 N$ [
2 Tbsp cornstarch (if desired)3 C* w7 I6 G& D7 c" B0 n, `

3 ^; A; v; Y) x1 Q* Y: B1 eDirections:
, n4 b! i* x& [Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
$ `# f7 N2 g8 r" G; OHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
# S$ b2 e4 I. h; k  f3 eAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
( D& N9 B3 d7 _  i0 l/ EHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.6 V+ A4 D9 \( ]1 H2 Q

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
