Beef with Broccoli

Beef with Broccoli

Ingredients:
* f9 o" l5 j. [- I3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces9 J/ z: j$ r. |- C' n% d  ]

1 egg
  {  y" h' Z9 ?1/3 tsp (1.5 mL) salt
1 z! s: u1 _: w( K+ ]- @1 Tbsp (15 mL) cooking wine
& z2 g. J- r$ @! M1 Tbsp (15 mL) cornstarch

1 1/2 Tbsp (20 mL) oil' y2 {( q( o7 v( Y. p" I7 w3 A5 L

1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices8 P* N3 _! y, H+ z# Z
1 cup (250 mL) cooking oil
, S* ~5 a7 `, q5 X7 [2 1/2 Tbsp (30 mL) oyster sauce  T1 w( n4 P3 w
2 Tbsp (25 mL) light soy sauce- N2 u5 A* r( H. o
3/4 Tbsp (10 mL) dark soy sauce
6 c% ^0 @: {( p  W1 Tbsp (15 mL) sugar
) K4 [6 G8 C% _' B1 c/ q- E6 y6 ma few drops of sesame oil
7 a( k5 u  h( O# H; P2 cloves garlic, crushed
. s1 ?- |8 a- v- D; b9 M1/2 cup (125 mL) chicken broth* n7 \: K' \) \9 P3 P) }
2 Tbsp cornstarch (if desired)  {5 S; O) v3 V' A# t+ w

Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. 4 ?# ]3 |( V6 i: h  z
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.) J, S9 H& K0 V7 h
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  3 A: p! j+ i+ Q5 C2 R( C
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.' a' G  t( V- N( a4 |
