Beef with Broccoli

Beef with Broccoli

Ingredients:
: i6 Y0 B. s5 S7 X1 ~+ S' v3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces

Marinade for Beef:
, K7 s) R4 q! T. o3 ?  Z1 egg - k, T- I# z: p, p( _, f
1/3 tsp (1.5 mL) salt: l  G' Q& u/ f7 w$ V
1 Tbsp (15 mL) cooking wine+ h9 m4 J# f1 k9 ]; W  x" U
1 Tbsp (15 mL) cornstarch
( V' M# B7 Q" F; u  r( m% B6 _2 Tbsp water: o5 g! P1 o2 r1 c0 E' r2 D

1 1/2 Tbsp (20 mL) oil) }! O8 G9 r% a' ?  n+ N; ~; H

7 {- ]2 E. a/ f" U1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices. a2 p# |8 ~1 \1 A
1 cup (250 mL) cooking oil
2 y/ V7 v5 n8 X; l. W! l/ b& ~) J! q2 1/2 Tbsp (30 mL) oyster sauce
: w% Q) e5 R) f( }: ~; \3 F2 Tbsp (25 mL) light soy sauce* o$ d* @* y4 A5 F% J- W5 \& h4 _% ^% t
3/4 Tbsp (10 mL) dark soy sauce
  f* D& T* a; k- d6 M- {1 Tbsp (15 mL) sugar
8 D+ }# X2 C  N8 p+ w: e) ya few drops of sesame oil/ s  D9 `; t0 }& m$ T9 i
2 cloves garlic, crushed
4 z5 S, P' @/ h$ C1/2 cup (125 mL) chicken broth
+ b2 K8 i- e  a% o8 X- C2 Tbsp cornstarch (if desired)7 g  Z7 F' ~4 S& k: O; {" S6 b

Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
8 J0 U5 {( Q8 V* B% IHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.' V) Y/ P# W/ l9 T8 a* U
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  ; A- Z+ B; b8 o6 A9 |7 q. \1 v
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.. d8 U. f; \) Y9 a6 I

Variations
  t. p0 t+ `' K2 E, c*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
