Beef with Broccoli

1 egg

7 {( e# u- G/ Z5 V3 B1 Tbsp (15 mL) cooking wine4 N; @& W# o' G. s6 p* X, c9 h
1 Tbsp (15 mL) cornstarch4 W) x# z& v6 t
2 Tbsp water

1 1/2 Tbsp (20 mL) oil

: a! ], j' W2 n7 M/ z$ |" ]1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
0 N  t5 L6 e7 A1 cup (250 mL) cooking oil. R& u0 `* d! L2 O
2 1/2 Tbsp (30 mL) oyster sauce7 z5 o! U; I( X* f8 F" H
2 Tbsp (25 mL) light soy sauce
: N5 D0 `! o& ]  I* R3/4 Tbsp (10 mL) dark soy sauce
- i1 P) j; j' O1 Tbsp (15 mL) sugar
" c* |1 g" @0 u5 Ya few drops of sesame oil
" ?; t3 i/ |$ n/ V2 cloves garlic, crushed7 A/ E5 E& \* f& q/ Q7 `5 i
1/2 cup (125 mL) chicken broth" @! {# V) X  K! s( B0 e
2 Tbsp cornstarch (if desired)3 n% g' E$ w6 b% d) n4 C1 @4 E

' f0 n% l! ?7 o. b) `2 kSlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. & t1 D' R/ L. ?0 d' L0 K$ S
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
0 H" g2 x3 v) }; _% Q. I' tAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
6 D1 X' h5 c& ]* pHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

% C7 K) l* C$ q( X( L! F, t' E*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
