Beef with Broccoli, @. N! E% Q: r

1 Tbsp (15 mL) cooking wine

1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices& X7 s" }1 P3 Y3 _* }1 B1 M
1 cup (250 mL) cooking oil
" c8 n8 l H% X: l7 w, D! D! B2 1/2 Tbsp (30 mL) oyster sauce
# J+ t2 | K5 J1 e& |: `2 Tbsp (25 mL) light soy sauce! h, b& n- K2 b9 l
3/4 Tbsp (10 mL) dark soy sauce
4 p9 {) B0 M) W% w2 s' O1 Tbsp (15 mL) sugar
5 u9 @( j: b' ja few drops of sesame oil
; Q" o# o4 H4 W p% `2 C' M2 cloves garlic, crushed
) V5 j! a" W* j* g$ k2 N1/2 cup (125 mL) chicken broth/ v+ G( h: A! ]5 H! Q) }
2 Tbsp cornstarch (if desired), r+ R( S! k& Y1 ^

) t7 N& R& q% p2 `9 J, ^* D$ i1 `Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
1 j8 f* Q% [- ]% X! X6 U& kHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.8 k: Z& q7 |/ g0 `- _8 M
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.
+ @" k: A4 a/ W' f% T- l! j8 IHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients. Serve hot.
