Beef with Broccoli

Serves 3 to 4

. m: L2 @2 y; e+ g5 G3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces

/ N/ X  x8 v0 {9 g3 I/ aMarinade for Beef: - |6 S3 M) Z4 j/ V5 x, p2 o
1 egg % w1 k8 r: {) |4 i3 l2 G. L
1/3 tsp (1.5 mL) salt
1 f( N" b/ {% b" \1 Tbsp (15 mL) cooking wine  w" d, N$ h# E
1 Tbsp (15 mL) cornstarch
' g; x3 r  X5 @. f; s; R& @1 m2 Tbsp water
% b, O/ i0 t2 M: i' h: u( |1 r1 R3 |: B- L3 g% \6 x/ R7 J! `6 i
1 1/2 Tbsp (20 mL) oil
9 b0 v* \4 L$ |3 l
6 N' ^- T& I+ u% H) I  b0 c9 A( g1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
- w! ]- g) s6 J' R) d* ?3 G4 b1 cup (250 mL) cooking oil# P+ M5 O+ R( U; P1 z5 A0 _, R
2 1/2 Tbsp (30 mL) oyster sauce7 C1 T. {! I; C& a6 N- E% s5 ~% H3 S( A
2 Tbsp (25 mL) light soy sauce3 R+ `3 m. _5 n) C
3/4 Tbsp (10 mL) dark soy sauce
& B- d& k8 q3 ~; h1 Tbsp (15 mL) sugar
# {: l6 o5 A( qa few drops of sesame oil
* Q4 G( s; ~  k3 }4 ~2 cloves garlic, crushed
1 U: |: p( s* o5 M3 H& @* r3 u) K; n1/2 cup (125 mL) chicken broth+ f3 c# p) p1 |9 U5 {. A- \5 f
2 Tbsp cornstarch (if desired)! n% i+ w1 D$ o& V5 b3 q
' R9 q- O* p) E2 O! _7 }
Directions:0 |; N0 c* v: [7 Y
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. 5 l- Q; u! I( Z" m. k
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
% i: B; f# e9 H+ qAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  2 g6 Q+ _- _( i8 T- w" I
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.9 x4 D) V* @3 r+ D( T+ k

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
