Beef with Broccoli

3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces4 q1 U, E8 _% O, _5 U4 X7 O

Marinade for Beef:

6 w" ~7 @& l2 [2 z+ `1/3 tsp (1.5 mL) salt
7 c! ]0 \& |: y9 I1 Tbsp (15 mL) cooking wine4 u$ I1 ^0 v% a5 \
1 Tbsp (15 mL) cornstarch7 ?5 U" m( P$ c% d  p
2 Tbsp water. ^3 x( s! k- V& y4 `7 `
) u* t0 l. H/ C, q* ^: k
1 1/2 Tbsp (20 mL) oil
( o8 ]2 o0 [, c6 X* G, x
! }5 o; v  N2 A, C1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices$ T, J' u; K( m( O$ [8 N: R
1 cup (250 mL) cooking oil% F* ?0 [5 N" a" f/ }% w6 o
2 1/2 Tbsp (30 mL) oyster sauce$ x; J/ U% W5 m& r4 ~& }$ H9 `
2 Tbsp (25 mL) light soy sauce
8 d1 T2 O: l( o6 m' Z  }; `* x3/4 Tbsp (10 mL) dark soy sauce* i7 R" n$ G3 }7 Q! t3 T
1 Tbsp (15 mL) sugar

2 cloves garlic, crushed: y/ R" `: v, I# ]
1/2 cup (125 mL) chicken broth6 L7 [+ y  n+ \: l- t+ N
2 Tbsp cornstarch (if desired)0 \! @& K* _. E& |7 }2 f

Directions:& Z7 i4 r* o5 R7 c. l
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
3 [! Y6 f6 L1 l( @1 [Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.4 ^# L6 y. t. f
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
% ?% J- L- d, X1 m8 e' l2 }, kHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

% O1 Y8 L; G5 U*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
