Beef with Broccoli

Beef with Broccoli

Ingredients:
- B4 u; u2 B' r/ o( x9 F8 U3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces

- ^' m7 C  X8 aMarinade for Beef: . w9 x) U5 |% u+ ]! P" s3 a
1 egg
" e* ~, j, T' s# V8 D3 a1/3 tsp (1.5 mL) salt, M8 Q- n2 q& {+ V
1 Tbsp (15 mL) cooking wine
0 ?5 y9 U! A# M9 x1 P) E' `1 Tbsp (15 mL) cornstarch
  ?* D0 j$ p5 L8 f; F, r' w2 Tbsp water% X( I8 o+ f6 _7 ]; W% x

1 1/2 Tbsp (20 mL) oil

$ Y: c# y9 P3 b1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices! z7 \: }0 }" V9 x$ B# t
1 cup (250 mL) cooking oil# l8 Y6 B- p6 _. l
2 1/2 Tbsp (30 mL) oyster sauce
: l3 E9 P3 n) s& ^2 Tbsp (25 mL) light soy sauce! z, t. ]' C1 h: b9 w/ o) V
3/4 Tbsp (10 mL) dark soy sauce
7 ~6 D3 [8 R2 z" w1 Tbsp (15 mL) sugar
) S4 i. g) x. t3 a# B5 T" Wa few drops of sesame oil( G! ?4 }: ?/ n* ^/ L0 A7 i" B
2 cloves garlic, crushed
+ G" i  @: _! N8 x1/2 cup (125 mL) chicken broth
' B7 y8 }# m$ p, j2 Tbsp cornstarch (if desired)7 B' q& ]' e' j

% a6 h* X9 _, @4 {Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
8 i( r: Q6 B+ R% ?: l+ o2 y. SHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.' ]  Y  U, Z* x' ]) ?. z  o) [
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  ) m2 u" {, D# y) L0 b; F
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.. p0 s( X% V+ l! w- S% o" _

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
