Beef with Broccoli

Ingredients:
+ u# U' U9 e3 P2 T- ^3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces

Marinade for Beef:

1/3 tsp (1.5 mL) salt
& U, n/ L y# `/ Q1 Tbsp (15 mL) cooking wine; E; H9 D( \5 {, _' Q! W" m$ l
1 Tbsp (15 mL) cornstarch2 i+ r. @- z) S# e1 n; P4 S
2 Tbsp water

V. W# K, l* i1 ?1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices( o/ }$ ?6 C7 x/ C$ [
1 cup (250 mL) cooking oil( k4 E* J# K- _5 T
2 1/2 Tbsp (30 mL) oyster sauce' C/ t, ^8 s% J% D$ o5 G
2 Tbsp (25 mL) light soy sauce6 B9 d/ I& b* X! m0 Q/ @
3/4 Tbsp (10 mL) dark soy sauce
2 c8 l5 [4 G; q. C; A* X' x1 Tbsp (15 mL) sugar. h O' ]# f9 D
a few drops of sesame oil
: w' A, P) l5 d* b* i3 M r2 cloves garlic, crushed
; e I. Q+ |4 `1/2 cup (125 mL) chicken broth! ]* h2 d5 E& J I. D- s5 N- P
2 Tbsp cornstarch (if desired)

Directions:
$ V, y* U7 ~* f* A$ PSlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. ' U/ l* P) ]0 o: m% Z& `
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.& M" V9 Y7 X# F- E- o; V2 u
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.
3 V Z8 v w7 H: K6 B, XHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients. Serve hot.
