Beef with Broccoli

3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces
6 `5 F# t8 D7 c* B. H( D* R4 z
Marinade for Beef:
3 t& K  d! e/ j$ b7 F. L1 egg
- X# V# A. _  P5 ]* H5 }  n$ i1/3 tsp (1.5 mL) salt
* M' a) I5 \# ]" A1 W6 @- i5 W) \" C* {! R% \1 Tbsp (15 mL) cooking wine4 q3 _. d: u$ V  S
1 Tbsp (15 mL) cornstarch3 ~1 F' C" u3 ~: u) g  y/ K
2 Tbsp water
3 E9 f0 h# o+ C2 t, p, m/ g2 d; r+ X
1 1/2 Tbsp (20 mL) oil0 e. l, h, _4 ?- h8 K* t
1 m8 o) }" w( ]! N! G  q
1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
6 d0 k+ K  [1 Y8 O1 o$ S( `0 e1 cup (250 mL) cooking oil
5 ~) }( a4 u* L; W2 1/2 Tbsp (30 mL) oyster sauce8 o' c3 \, m5 B  Y' o3 p
2 Tbsp (25 mL) light soy sauce! B" j/ b5 t0 l- }% S9 \: q. L
3/4 Tbsp (10 mL) dark soy sauce, C% w0 s4 P" V9 |. w
1 Tbsp (15 mL) sugar9 K8 y& G5 c1 K5 P
a few drops of sesame oil
& |2 l1 C  I3 h; }& Y* d2 cloves garlic, crushed
6 k9 D& \9 \0 N7 F3 ~1/2 cup (125 mL) chicken broth( u1 v7 y& L* c: C+ W0 Y
2 Tbsp cornstarch (if desired)

Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
/ b; P. A- K2 R+ F! L3 pHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.' Z1 ~5 A4 q: A2 M
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
0 F! W# n2 _8 [Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.) p0 c4 \1 i0 @! t8 j  Z" C$ ~2 D" T

Variations
- B# ?. k; x9 _, x" |, g7 u5 o*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
