Beef with Broccoli

3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces
+ |$ B; O; }- G( @5 U
: p" r# T6 T2 s( I1 k- VMarinade for Beef:

* R& g7 f0 W4 L5 m1 `1/3 tsp (1.5 mL) salt9 @$ k/ T8 f1 V
1 Tbsp (15 mL) cooking wine
6 T% X; P4 z; z) }9 Y  y; x1 Tbsp (15 mL) cornstarch& P. a, v- c% {8 ]3 C
2 Tbsp water" C  E3 n( A) S7 G/ l# f' H1 ~

1 1/2 Tbsp (20 mL) oil& F4 g$ g' _: e$ e+ y

4 a/ }; q( ]! V! U( i5 `/ }, [1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices; J  G, z! D; \$ `
1 cup (250 mL) cooking oil
7 C2 {3 {% E  d) x2 1/2 Tbsp (30 mL) oyster sauce
5 F% O2 F- G1 ~% X# j4 ]7 b2 Tbsp (25 mL) light soy sauce
( o, W5 [" G% p; g1 R* W* C* M3/4 Tbsp (10 mL) dark soy sauce
* d. ]+ P) o: Q' q1 Tbsp (15 mL) sugar
+ l) L+ V/ i1 l/ X$ \0 ]2 Ca few drops of sesame oil
" v+ p. L5 A% g$ b2 a2 cloves garlic, crushed
: E4 a. j$ T" Z4 [5 F9 q: ?7 S1/2 cup (125 mL) chicken broth
1 v. k+ w9 P% u8 R9 }/ i- l8 j# P2 Tbsp cornstarch (if desired)
! [" Q$ v) L0 C0 d2 ^6 t' u' p2 C/ q; ^+ S% r* w
Directions:9 |" ^+ l: ]" X
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
2 }6 x/ U5 B+ x; G" v% X, d0 ZHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
" |  O) R  h, P1 `: ~( Y9 yAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  " D! U+ U0 U% j9 k% B# |3 d+ K2 V
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.5 ], t' z8 `0 v" u/ [: L! D9 p9 `* i; p

0 V! Q7 u9 t0 S*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
