Beef with Broccoli

Serves 3 to 4

Ingredients:
: `7 A, i* ~9 u* P8 E  I0 _3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces
2 t& o1 V- J+ u. z1 Z  u5 T3 @) v8 ~. [, _2 l$ S0 y& M0 q, h8 {0 d
Marinade for Beef: 5 {2 q4 T5 \; w
1 egg
( h9 }* }3 [4 d& B; E+ \. k7 ~1/3 tsp (1.5 mL) salt+ K3 I& p  Z) R' v' ^9 {6 b$ b
1 Tbsp (15 mL) cooking wine8 r( ^/ T5 t$ t
1 Tbsp (15 mL) cornstarch6 S6 q4 w+ q; f7 e$ I+ P9 l9 U
2 Tbsp water9 c7 a7 t: F1 m. U8 f
6 O0 [, r( {& J1 r# r
1 1/2 Tbsp (20 mL) oil
2 ^3 X! a0 O( A0 q
# n7 L( m+ e1 j% d1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
& c2 X; C% M. |' t1 cup (250 mL) cooking oil
! h, }: K8 c) @1 ]* I9 i8 f2 1/2 Tbsp (30 mL) oyster sauce
3 \; i7 i# n- I6 c( H2 Tbsp (25 mL) light soy sauce
0 A  a3 Z" x* i: n2 w0 \$ k3/4 Tbsp (10 mL) dark soy sauce
2 R) p: \& c: n6 ^/ _0 Z1 Tbsp (15 mL) sugar
8 S( K) w1 b7 Ha few drops of sesame oil) [% `$ t8 y- M
2 cloves garlic, crushed# v  C  W4 `/ N
1/2 cup (125 mL) chicken broth3 n5 }! `3 _0 K& O2 Z  \1 M+ y
2 Tbsp cornstarch (if desired)

Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. 1 R0 k& X' x: e0 \" }$ u( j
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
4 Z. }! g6 f2 ]7 y1 ?4 W* gAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  6 r- Q3 Y+ j9 A, I
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.3 s9 E* _" E" s

  \' r5 o4 z* r*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
