Beef with Broccoli

Serves 3 to 4

Ingredients:" F! S, }& O! ~/ v! Q
3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces9 H/ x8 Q7 q2 W
  j* s" R4 K' s' ~% b
Marinade for Beef:
2 F( H2 Q6 E. k7 j0 F/ g' [1 egg * h7 o( z/ ~2 }& A: e
1/3 tsp (1.5 mL) salt$ K: W2 M: {, k: r& l; ~
1 Tbsp (15 mL) cooking wine
) d1 q: @7 }9 h# q7 t1 Tbsp (15 mL) cornstarch
$ o) S* r+ C8 h7 P2 Tbsp water- o. M7 d& r0 Y5 M* R+ I

3 P) t1 p% x1 O1 d1 1/2 Tbsp (20 mL) oil7 l; N7 h* H$ ~$ F0 E
) C& h1 i- I! m5 b( p- ?& W. ?
1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
1 L5 U+ y9 V! B1 cup (250 mL) cooking oil3 |4 Y! Y- J$ z4 s+ d* ~3 C# w
2 1/2 Tbsp (30 mL) oyster sauce
- D" Q6 s- e4 c' T( Y2 Tbsp (25 mL) light soy sauce
5 J$ o; y/ ?5 p  f3/4 Tbsp (10 mL) dark soy sauce! S: k8 A6 R+ K. j0 Z- \: y" G* k
1 Tbsp (15 mL) sugar
1 C9 r5 S, B- y. O+ A6 Ya few drops of sesame oil
6 P% J" m! ~- B7 w8 J* `! ]( }2 cloves garlic, crushed. N( V- Q) q  W/ G- J4 ?8 i3 q$ L
1/2 cup (125 mL) chicken broth
1 }+ o8 l& P  B4 l8 w2 Tbsp cornstarch (if desired)
" x/ w! r. N+ {5 p. c+ n- _4 b- l
Directions:: x- K. ~( A  `5 T/ w5 T" `" @
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. ' \( V; E, E4 J
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
/ L5 y$ {1 X" x6 Y. _3 }0 LAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  8 Y( e: a: ?" @+ S$ o1 |5 E* q
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.! E6 E- c' [2 q3 l* d- F9 h
