Beef with Broccoli

Beef with Broccoli

Ingredients:! M9 v3 u! }0 R/ ]1 ]2 n# n/ _
3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces

9 {- I- p$ ^. x5 kMarinade for Beef:
" u, r- {+ _" H3 R' Z8 U' A1 egg
# K  [8 \4 d: {! O; m9 O! d1/3 tsp (1.5 mL) salt
6 N. x  Z% L% _+ a. y1 r1 Tbsp (15 mL) cooking wine+ x  T  F' f% c6 O! v4 M
1 Tbsp (15 mL) cornstarch
' K8 S4 f& _- ~$ E9 J2 Tbsp water& ?0 a5 x7 L  Z1 ^
! V& |$ v7 Q; Z! C! M# b: A
1 1/2 Tbsp (20 mL) oil0 T% m1 W" j3 ]5 V  E* V. y

  R- k2 ~- D0 W. F. c+ S: w1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices9 s, m: f+ U0 d2 q
1 cup (250 mL) cooking oil
0 l* K$ P' T! F( [3 U, R2 1/2 Tbsp (30 mL) oyster sauce3 i) F! G5 a* o- Z
2 Tbsp (25 mL) light soy sauce
: z% h  F. ^! r2 ?3 V, _3/4 Tbsp (10 mL) dark soy sauce
, i. J* X8 Q+ R% v+ I- C1 Tbsp (15 mL) sugar  y) m8 b" Z6 S$ e: e4 g% Y
a few drops of sesame oil
1 R' w8 M& s4 z" F  m1 F2 cloves garlic, crushed
1 @! i. m' A  B1/2 cup (125 mL) chicken broth* A" }/ g/ v8 L
2 Tbsp cornstarch (if desired)& |- J% {$ ]" }3 d' I; Q

Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. - B4 w$ Z" ?/ v) @- t
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
  V1 U& y( D/ Y( ?" KAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
3 o; \  R3 K" O4 L; ]Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

6 S, F2 U3 F/ m$ K3 [3 l+ W*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
