Beef with Broccoli

Beef with Broccoli

3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces

  _- E  d4 u6 {- H6 V' hMarinade for Beef:

1/3 tsp (1.5 mL) salt% b; c; m/ r. O, E) K6 S
1 Tbsp (15 mL) cooking wine
4 E* G! D4 R/ A! ]7 v/ V4 M1 Tbsp (15 mL) cornstarch
3 I/ K; i7 i& |+ I) D. P2 Tbsp water8 H) H' M4 E& m2 p0 Q

1 1/2 Tbsp (20 mL) oil
+ L1 m% y( R7 j- M, x; X, ]3 m1 F! ?6 P" e$ c- c0 x
1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices; j6 B- ?5 ~* F4 Z( C
1 cup (250 mL) cooking oil
, l( Y3 y8 {  d" ?1 y  h, \2 1/2 Tbsp (30 mL) oyster sauce0 u4 Y0 b0 w  |* m: y$ u
2 Tbsp (25 mL) light soy sauce
: O: e; u; }- b$ p7 B2 X3/4 Tbsp (10 mL) dark soy sauce
" m/ N# C. B! v! h1 Tbsp (15 mL) sugar0 a9 C8 y6 Z" A" D* j
a few drops of sesame oil
8 K: b: I; Z! y7 l8 Y% u2 cloves garlic, crushed4 c: J7 |% Z4 E9 p: M* o- a6 y
1/2 cup (125 mL) chicken broth7 [5 d  c9 o0 t& A: r( I  `9 I5 o# N) e
2 Tbsp cornstarch (if desired)8 t  m3 F$ X1 [

/ ^% b8 T1 Y+ {/ E6 n4 I# }# [Directions:( g- N: ~7 D; P+ U$ B% ~5 Y- t
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
  f# R; Q' b3 sHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
( \* P/ A" j" y8 h# vAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
7 c: x3 G2 X4 B- {' P% dHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.$ e+ B  Y; }, v& w& O4 A+ j

Variations
2 ^' g5 w' Y) \" k1 e*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
