Beef with Broccoli

Beef with Broccoli

Ingredients:
! n1 R+ z( Z; V' I$ i* _3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces
* g- ?' O% a9 U2 w! l# ?, s; c2 l+ g9 m4 F7 Z
Marinade for Beef: 3 P# u* A% R( `1 B( q; i
1 egg - I- O% s3 l- r/ j0 ]; X: {
1/3 tsp (1.5 mL) salt& N4 U& r1 r0 C8 a8 K
1 Tbsp (15 mL) cooking wine' b2 A+ A- w0 h5 i4 p6 E
1 Tbsp (15 mL) cornstarch
3 B/ T) O0 \. ^0 l2 Tbsp water9 t  r: W4 U/ T; [* U0 m* {

, ~$ J0 z* I0 B5 J/ I# m1 1/2 Tbsp (20 mL) oil& ^; s; F  ]2 I4 X. N
& @+ }  c# w+ S5 p8 g$ `& X
1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices$ w5 l9 \7 a8 @3 `
1 cup (250 mL) cooking oil
9 l8 I- B8 |& N; t. w2 1/2 Tbsp (30 mL) oyster sauce
+ |* ?6 Y  Y; @5 E. s4 K2 Tbsp (25 mL) light soy sauce7 i) p1 u" O+ T% h; h5 m
3/4 Tbsp (10 mL) dark soy sauce/ B+ M1 d) O) h0 v$ ?
1 Tbsp (15 mL) sugar
6 J) Z$ g+ L+ W8 j) w0 y. Q4 y# r4 ]a few drops of sesame oil" h# p/ V* B* L+ V
2 cloves garlic, crushed
" {* D. c3 A' ?# q: j1/2 cup (125 mL) chicken broth
2 H! b/ e" v7 H- J4 Z2 Tbsp cornstarch (if desired)6 m* s8 h; ]5 o
/ g1 v8 N. a5 `0 C) ^3 w* s0 a6 L
Directions:
+ Z5 h. T2 t$ \- t4 T6 w* j$ B" GSlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
' l! M. a% M4 m+ ]& JHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.: E9 p) D+ x9 U7 ]& x3 m
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  ! n! ~8 J+ ]% b  n
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.& L+ o# N' R7 c7 L0 e

Variations
1 h5 M% s& B) i( V) E/ ^" E1 [: u*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
