Beef with Broccoli

Ingredients:' l( K6 g  V7 W& _0 f
3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces% [3 @0 C( E4 j) P

* Y3 r" ~+ w: C2 N) YMarinade for Beef: . X9 y: M5 h: `* C6 K6 x
1 egg
7 u$ N# t) L, R1/3 tsp (1.5 mL) salt
$ J; O& O( s3 r* L1 Tbsp (15 mL) cooking wine& l+ s# m1 N6 r; \) Z1 C
1 Tbsp (15 mL) cornstarch
' b* z7 g* G. L2 Tbsp water2 @& z4 Q+ S! E  B3 V" O8 h! A
( W) e+ m% B: Z$ x' b: n
1 1/2 Tbsp (20 mL) oil
7 l- c0 v* `4 @& u
6 ?; R; }2 J$ P6 N1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices! n) k7 q& r" n  T' b. f
1 cup (250 mL) cooking oil5 |; x2 C1 \: e1 u
2 1/2 Tbsp (30 mL) oyster sauce
( ?8 d/ P* Y3 {2 Tbsp (25 mL) light soy sauce
4 D" s7 D0 W, h; X3 s# k" M  K7 Z, j, P3/4 Tbsp (10 mL) dark soy sauce  `% W/ t8 x6 Q- e7 ]2 t. K
1 Tbsp (15 mL) sugar' i( o1 g7 @- d9 G, ^3 }$ }3 D7 e
a few drops of sesame oil
6 E7 K- M! M/ n/ G7 \2 cloves garlic, crushed# S, ^3 O/ T! u5 d! C, l
1/2 cup (125 mL) chicken broth
) c$ i& Y. ]+ J6 t& Q* u7 J2 Tbsp cornstarch (if desired)
" d7 g" m1 Q$ b. D+ t/ a
# Z) @* ~0 Y! h/ |8 XDirections:
6 V% c1 n' A! A3 ]5 k. K* ]) dSlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
5 \7 F( Q; V$ J% ]Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.& m- T: X  O, s9 M3 G
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  # `2 Z4 B! ~; a; O+ D; M1 N
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot." U/ s! X- A7 a  ]

2 v+ V9 ~# H6 j, U/ x& c/ v( B- v*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
