Beef with Broccoli

Serves 3 to 4

+ J8 x0 s! n! X3 w* P) y* H3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces
4 ^+ K0 f4 {( l# q( T( T& H8 K3 A  V1 [  p1 |1 Z2 y1 ?/ E* n
Marinade for Beef: $ C% x3 ^# k, i) m! e% k# D
1 egg
' s& i! g: a& K. S+ J1/3 tsp (1.5 mL) salt9 Z4 l  {* q4 l9 i- u" q% f
1 Tbsp (15 mL) cooking wine' e+ u, {6 B5 E2 ~- J+ y
1 Tbsp (15 mL) cornstarch
+ }& O, P$ l; Y! [/ d2 Tbsp water0 F0 t! W' c8 V" _# |5 W9 L  o
2 c- K  D, `6 p. Q( u4 k. {( b/ ^
1 1/2 Tbsp (20 mL) oil" X+ I2 g; Z7 H9 t

. K* v% \4 f- E3 i1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
$ M) n7 J5 b% z6 E! t3 `1 cup (250 mL) cooking oil
4 w- s4 D8 Q1 L; E2 1/2 Tbsp (30 mL) oyster sauce  |8 Y3 z8 Z2 M% E5 `0 S
2 Tbsp (25 mL) light soy sauce( y0 m; V  W; Q5 X
3/4 Tbsp (10 mL) dark soy sauce0 p7 |5 I7 h2 J" g
1 Tbsp (15 mL) sugar
8 g5 d& d# D( P( J7 Pa few drops of sesame oil
% \1 t6 h# o0 j1 c: F2 cloves garlic, crushed: ~1 ~" H! K+ f  G- @5 |; E4 U
1/2 cup (125 mL) chicken broth
5 V' ^9 s, L9 q& d# P2 Tbsp cornstarch (if desired)7 M+ |$ O! I1 g9 k! @
/ V/ X% _& U% m3 {. _" M% _; i
Directions:! g& @$ H  W; I; o
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. ) b9 w" o. n/ X4 m6 b. w
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.  d/ D, W, D+ H1 ~
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
* u& i0 }2 z2 ZHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.5 h+ e, @- X# `! ~; D( c$ r% k

Variations
. v8 ]4 T. {" P; f0 X*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
