Beef with Broccoli

Serves 3 to 4

Ingredients:
6 b- |' _+ y4 _: o. R3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces% U  x7 W& v# L4 l3 U3 e

1 egg 7 A( G  H  I/ P' D7 K. e1 i
1/3 tsp (1.5 mL) salt* Z& }7 h% i, I& v
1 Tbsp (15 mL) cooking wine5 O8 ^% e4 E, x! p
1 Tbsp (15 mL) cornstarch
5 U+ q# `. {1 t: S2 Tbsp water
0 _8 W$ O4 J+ O( o* `& I* A6 B/ o+ J: K, N* i
1 1/2 Tbsp (20 mL) oil( _1 ]2 D' O* f7 e8 n8 q6 j5 z

5 `: a$ s9 o6 H5 S1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
8 u, Q1 c4 c- G3 `7 Z' Q( Q1 cup (250 mL) cooking oil1 y- a8 {; ?# f! e
2 1/2 Tbsp (30 mL) oyster sauce
2 [5 w, v- p& T. B: f5 {2 Tbsp (25 mL) light soy sauce
% a* j6 a& e! d7 b- c- `3/4 Tbsp (10 mL) dark soy sauce  F* ~# ~2 q- ?; |, P% e/ z
1 Tbsp (15 mL) sugar, K* ]. y9 O- ~
a few drops of sesame oil
5 p" E2 ~: j- c3 P1 f2 cloves garlic, crushed" s1 u4 r1 r( Z5 x6 h7 T3 |
1/2 cup (125 mL) chicken broth' f0 h! s; S( ?5 F6 S9 f
2 Tbsp cornstarch (if desired)1 m, @( c- {2 x6 m4 e$ g

% `$ v- ]' r5 s3 S9 YDirections:3 r7 v: B+ b( F; j0 X, J8 o8 f- l
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. 7 {+ n! _0 [; M( Q" @  e( n1 L
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.2 g. @5 Q: }5 q$ d3 K
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
( B5 O, L7 \! C" J1 Z$ UHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.3 w# ]. |* R1 q2 J# u9 ^

6 \- E- S* {# J& ?2 U8 c2 I*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
