Beef with Broccoli

3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces
! m8 {9 O" L0 @2 y2 o( l% }0 M1 b( n; f' q
Marinade for Beef:
3 Y1 ~% c: I4 L2 W1 egg " |& w- |, _/ H# O5 |5 A
1/3 tsp (1.5 mL) salt
' _/ g. U3 K7 C& \) A; R7 b% l1 Tbsp (15 mL) cooking wine; ~" x2 o7 I) `% R: Z3 A
1 Tbsp (15 mL) cornstarch
6 B% U# v  X: N/ ], Q2 Tbsp water
1 q5 i: _; U) A/ a4 n: g& e: @  p) B5 h& F* }- Q7 t1 H% H4 O  n" a
1 1/2 Tbsp (20 mL) oil
% H$ ]' H8 O4 M3 @0 l' X( L7 Q( A1 w7 f' f+ A, N) G( V# g
1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
4 m0 n1 W, e  A7 g9 o. ?1 cup (250 mL) cooking oil
( y; Q/ S: \6 a: E* C# b2 1/2 Tbsp (30 mL) oyster sauce
9 q- X% t3 R! {2 v/ A  B5 b! Y9 o2 Tbsp (25 mL) light soy sauce
, |( Y& l$ x  ^8 ^  J* C1 y3/4 Tbsp (10 mL) dark soy sauce
# P& g) N& F) q4 |  U4 v1 Tbsp (15 mL) sugar
: O) S) E/ V0 \* _7 t" ?a few drops of sesame oil
9 r% C/ d! i; Y2 A8 U" `: N+ H2 cloves garlic, crushed+ l. J0 h0 {/ R& y
1/2 cup (125 mL) chicken broth" r$ _: ^0 T; ]% u
2 Tbsp cornstarch (if desired)
* t) [/ |: y* m4 r1 E% A
  j4 C* U+ V$ xDirections:( j  z( t8 S/ ?2 Z+ X, X& c
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
, Y* B( T: g2 HHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.; S6 K7 ^! `, n8 G: b8 y6 n
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  $ q! a" m" V3 [6 b/ L$ R& v
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.  w8 b9 C; f- r/ [& b4 A* E! \% w

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
