Beef with Broccoli

Serves 3 to 4

Ingredients:
8 R" j' y% }' j9 Z4 R3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces
1 S: t$ q7 {5 i' |8 M% W: H+ ~! i2 U+ ]7 F0 ~7 z9 v1 ?0 J
Marinade for Beef:
5 P- m; H0 i2 U  C+ F1 egg " t! s# D. [6 \
1/3 tsp (1.5 mL) salt9 ^: l5 Y1 k1 N5 _* L* t
1 Tbsp (15 mL) cooking wine
( L* c! X7 y! \/ d+ O4 l0 j1 Tbsp (15 mL) cornstarch
4 ^' c8 u: p; `1 ]. h7 `# Y7 P2 Tbsp water" q" D9 p) j% Q# q
6 B. |; }% h) }) j
1 1/2 Tbsp (20 mL) oil
, ]1 S! T5 T7 e# l/ p$ {' H  a$ w+ @9 e& m4 T" V
1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
6 W; U0 X* R9 z, e- {0 J5 l1 cup (250 mL) cooking oil
4 P/ z2 F$ ~; K% N# I/ D/ h/ i" I2 1/2 Tbsp (30 mL) oyster sauce3 d& O  v* P! L" t
2 Tbsp (25 mL) light soy sauce
2 s7 l$ p+ }. G" m0 K3/4 Tbsp (10 mL) dark soy sauce
: E/ g0 O- E9 p! y1 Tbsp (15 mL) sugar; r8 F( {( I% m: K# l
a few drops of sesame oil
3 [3 g# N- F  i8 V! U2 cloves garlic, crushed
9 d6 x8 h: Z8 p+ S: p4 T1/2 cup (125 mL) chicken broth
1 t1 b- u, d- V) t; f- `5 ]$ R2 Tbsp cornstarch (if desired)4 R- c0 l: K3 _/ ~( ?
) a8 h. C; T+ P( I3 s6 X. o
Directions:
1 Q* Y3 t% Z/ g; oSlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. " M4 L' |6 R% j. s% A- O' L* w
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.+ t9 [0 D2 U4 ]1 r5 s! T* W
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
% [! R) D! P4 m. ^0 g" m5 \Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.' \4 i, p: f7 Q5 {* V! [; [- F3 P

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
