Beef with Broccoli

Beef with Broccoli

1 egg
  v7 j& d4 C, L, L# a1/3 tsp (1.5 mL) salt5 k; R5 s! d" @& w" n5 Y
1 Tbsp (15 mL) cooking wine( O; a% ]' \% w
1 Tbsp (15 mL) cornstarch
" T8 ?0 P1 j; l& ]' Y  q2 Tbsp water

. ]3 ]. k. q, i2 f1 1/2 Tbsp (20 mL) oil

1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
7 a/ y  h6 ~. _! L& @1 E$ d' x1 cup (250 mL) cooking oil3 s( _$ `0 k" N
2 1/2 Tbsp (30 mL) oyster sauce7 Q% b5 B3 X+ Z% s
2 Tbsp (25 mL) light soy sauce
. Q0 l0 ^0 b% t( R3/4 Tbsp (10 mL) dark soy sauce
4 b! {7 @/ w) D5 r* d1 Tbsp (15 mL) sugar( {8 H/ U6 M' X* y4 p" o1 V( g
a few drops of sesame oil
: y  ^/ r) v8 g! `! D2 cloves garlic, crushed9 p/ y2 l7 p8 H, V$ K; ~- c
1/2 cup (125 mL) chicken broth
% L) E1 f, T. T% Q& c2 Tbsp cornstarch (if desired)2 v, I# \3 ^0 m- P; B& |

Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. ( K+ {! ^, N+ l  ^5 J; v
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
# N( }( u( X% \. f! U/ zAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
( x: D: S" a4 B% jHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

3 D9 ~. {- r1 ^+ i6 q$ L*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
