Beef with Broccoli

Beef with Broccoli

Ingredients:
, M. I% m2 q* M* C1 e3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces

Marinade for Beef: 8 R& k* h8 B# O0 y3 r
1 egg
; y# m, z* w% ^8 h+ v1/3 tsp (1.5 mL) salt3 z9 S6 P# Y' v$ |+ M" f. F
1 Tbsp (15 mL) cooking wine+ t8 i8 c& ]. Y9 ~5 S$ v, x( M% G8 [
1 Tbsp (15 mL) cornstarch
4 P. _( X7 m% P2 A; K3 ?* d! B2 Tbsp water! w% W3 `+ K8 [
' h1 B, B/ o+ B( J5 L' U/ ?/ e
1 1/2 Tbsp (20 mL) oil* _) }' q' f' d" v
* G" z2 y5 M7 l+ \) t
1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
; ]" N5 ]( ^9 @( m  ]& @0 q1 cup (250 mL) cooking oil; P; W4 Q! {/ \* P' ?
2 1/2 Tbsp (30 mL) oyster sauce3 y' M/ k! H/ J: n
2 Tbsp (25 mL) light soy sauce
  D7 \7 L# g& F' }% R3/4 Tbsp (10 mL) dark soy sauce
& Q" F4 b& @6 q  {1 Tbsp (15 mL) sugar
9 ^" ]+ p, ?/ ~" d; z7 C, da few drops of sesame oil( C" n1 S  \, \" T+ A. X1 [
2 cloves garlic, crushed
, `0 r* v: T* A% C: N& s2 D4 u2 P6 r) ]5 P1/2 cup (125 mL) chicken broth
0 \$ O  h/ U9 m: [( a. c2 Tbsp cornstarch (if desired)

Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
& R# z( H( M! X; `Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
2 L$ ^% s0 K8 B' SAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
& P6 X; ?2 G/ J; kHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
