Beef with Broccoli

Serves 3 to 4

3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces

Marinade for Beef:
- s5 p) R, R; T$ q1 egg
; j% D  j! F: t, b1/3 tsp (1.5 mL) salt& J, N% u" l8 ^4 T  Y: a3 f
1 Tbsp (15 mL) cooking wine# }. I) I/ r3 r3 J
1 Tbsp (15 mL) cornstarch1 J- F  B# j8 c( I$ n* A5 y
2 Tbsp water

8 P! W- h) \' |/ f# Z3 A4 ?1 1/2 Tbsp (20 mL) oil
7 j% d0 |9 X5 g( v! U) z& p! g5 c' V" ]
1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
) u4 g% ^" X# v" G0 }1 cup (250 mL) cooking oil/ l9 [3 l6 o* f1 a
2 1/2 Tbsp (30 mL) oyster sauce
3 w- [. u: t& a3 ]+ n2 Tbsp (25 mL) light soy sauce
+ E- l; n1 F) C* K3/4 Tbsp (10 mL) dark soy sauce
# n2 @1 d, v+ f! G$ M7 B( Q1 Tbsp (15 mL) sugar" ^7 H2 P9 i) I1 u8 V% r; v# k
a few drops of sesame oil* n3 W7 i( m4 ~) L
2 cloves garlic, crushed5 o+ h  a+ w: _, o1 T
1/2 cup (125 mL) chicken broth
: L; I) l6 L. |% q" ]8 M2 Tbsp cornstarch (if desired)# K; o; L5 y2 |6 w8 |% v

Directions:0 o2 `9 X6 t# q( @4 I; ^( `: K
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
! L" v. N' r0 k6 NHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.) P: ?. P% F8 ~) F2 w8 j7 e
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
& O3 s3 h. R$ U/ B# K" p9 AHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

& e) E- A1 b3 L*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
