Beef with Broccoli

Beef with Broccoli

# a1 X9 z( I" r2 c9 _8 a" \2 M5 o3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces
+ j, y/ u- M$ Y  @8 {/ A6 \# a1 Z. R! s: c* ?4 h/ a/ ^
Marinade for Beef:
& ~; b. O* Z5 C/ C: Z1 egg
" z, z9 e: X4 s4 b/ a' I5 A1/3 tsp (1.5 mL) salt
0 ?1 g& L% @* q; v; S1 Tbsp (15 mL) cooking wine
) [/ z9 K% Y3 z& R2 g4 w1 Tbsp (15 mL) cornstarch! |0 V6 x- t4 y( ^4 O# P
2 Tbsp water
! y% x4 ^! ?  v" r6 p1 s. Y* T. N: g/ z5 ]
1 1/2 Tbsp (20 mL) oil
4 u% ~% g) U4 w* x, Q! {1 x" g5 d6 m, d: R. J+ q* w; [+ ]6 i
1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices1 B+ }% s3 i; n: O5 H
1 cup (250 mL) cooking oil+ L  _& p" B  v3 S/ F$ b1 d, D( j
2 1/2 Tbsp (30 mL) oyster sauce% M$ G" i8 ?( s3 U# o5 U8 }8 h" h
2 Tbsp (25 mL) light soy sauce
$ i6 W5 ]. J! H+ a" o( f& i3/4 Tbsp (10 mL) dark soy sauce/ J- G- N1 F& m& y1 l: q+ `- C
1 Tbsp (15 mL) sugar
, h! W( a- h& X  qa few drops of sesame oil
2 w8 c, n, j. \! Q5 W0 r2 cloves garlic, crushed
, B. i6 E( C( P6 S1 g! Y. k$ h( O! O1/2 cup (125 mL) chicken broth1 M9 O5 p4 V! i& V, v' B
2 Tbsp cornstarch (if desired)+ o' s- o# O+ h8 }

+ b# q9 m' i: u5 s: H0 zSlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
, t' n: I  @, E! h' fHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
& A) I2 ]" k7 m  z% W! fAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
5 o+ N! O0 p# f9 j5 h( SHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.1 a2 x6 i* \! y$ E0 h

Variations
( D" ~' Y& ~; Z' B*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
