Beef with Broccoli

1 Tbsp (15 mL) cooking wine+ _6 L- ?* L$ y* I- q" _* q3 e7 Q7 t9 X
1 Tbsp (15 mL) cornstarch

* y/ |8 d; R* R; L1 1/2 Tbsp (20 mL) oil

5 ^1 e* c9 p( H8 g* E! {, M1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices

2 1/2 Tbsp (30 mL) oyster sauce
7 Q7 ?/ J, A4 }2 Tbsp (25 mL) light soy sauce
8 p4 L; @9 g8 j0 p* ]3/4 Tbsp (10 mL) dark soy sauce
$ e& o3 [/ @! o" N1 Tbsp (15 mL) sugar
( {( t8 j( d9 I" Z+ fa few drops of sesame oil
1 W7 z6 Y9 T* _2 cloves garlic, crushed+ L6 m( d+ w. O# K8 u
1/2 cup (125 mL) chicken broth7 R2 t/ p' ]/ l, E7 M
2 Tbsp cornstarch (if desired)

Directions:
1 ], X; r# |0 G' h+ o, dSlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. & \9 p) N9 Q' }& C
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel./ i4 _; j6 I: v# O8 g+ ?
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok. 5 Y0 f! T9 @/ \
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients. Serve hot.
