Beef with Broccoli

Beef with Broccoli

& ~' m3 P  f% S1 y* F$ f3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces

1/3 tsp (1.5 mL) salt% T9 j3 F0 U; ]
1 Tbsp (15 mL) cooking wine8 o! x1 k7 b5 `: n7 _# g( t+ I4 z+ _
1 Tbsp (15 mL) cornstarch
3 M7 v3 f9 ^4 G2 Tbsp water. t/ k% L7 i$ t+ ]

3 v" w7 q3 W0 S. B+ c1 1/2 Tbsp (20 mL) oil% y" ^7 C2 i' \0 C! ^8 N: R" X* d1 S) W
1 S2 g5 ?9 D$ X$ D4 ~/ Z  x
1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices7 N( Q. k5 h8 _# f( @7 Y- b9 I
1 cup (250 mL) cooking oil
! h( f  Q- z7 T  p) }) ^4 {0 M2 1/2 Tbsp (30 mL) oyster sauce
! l: Q2 i2 A5 e/ x' ]0 O2 Tbsp (25 mL) light soy sauce4 @5 F/ f* J4 I8 W
3/4 Tbsp (10 mL) dark soy sauce) b- `  u. t  X: ]/ Q! A
1 Tbsp (15 mL) sugar# x; }/ ^. e* F' c% Z$ n, e9 Y
a few drops of sesame oil
- u% @3 H, L' r( \4 F2 cloves garlic, crushed5 h) ^$ ]! x: }. G: I  I
1/2 cup (125 mL) chicken broth9 G  q$ d* L+ x( o
2 Tbsp cornstarch (if desired), o7 i' M  V0 x& J, O  k$ i* y

Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. 2 q2 B. A6 V5 Q0 l4 ?
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.2 y) O/ j& q: J# g, H
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  ; d8 w( ?; _! w% S9 B
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
