Beef with Broccoli

1 j# f# N) Q! _, t7 x0 T3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces) `0 h* v* \) y* Y; \( {0 c% h

! U( }6 I4 u7 r/ H& s8 w, q1 egg
+ o9 P: b' q- @1/3 tsp (1.5 mL) salt9 N8 L0 d( |0 ?& O
1 Tbsp (15 mL) cooking wine0 Y% q9 s% K/ }0 M" u3 ]
1 Tbsp (15 mL) cornstarch
' m0 Y9 j; {# f- p) A2 Tbsp water
1 b, b( s. w4 m3 \5 ]) F/ c
" ?2 g# o; K- W' W$ Z1 1/2 Tbsp (20 mL) oil' i, [, k1 ?: x  W
/ x. {1 G% B9 z, Z7 ]+ O
1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
' y  r. ?8 L( r; S2 x1 cup (250 mL) cooking oil
5 p& R+ X, p7 ?& [2 1/2 Tbsp (30 mL) oyster sauce9 S! t% a) T$ ^0 @& w% ?! V
2 Tbsp (25 mL) light soy sauce" Y3 C, l! P; i6 |( R4 q0 r$ j
3/4 Tbsp (10 mL) dark soy sauce
# O( y' X0 O( [5 p* {- G0 c1 Tbsp (15 mL) sugar
& Q! }4 [7 [5 q" Ha few drops of sesame oil' F2 t. e* R7 v1 S
2 cloves garlic, crushed
/ ]# ]1 U+ O+ Y" k2 q& F1/2 cup (125 mL) chicken broth0 ]: e3 Q3 k3 M( |# p, k$ v
2 Tbsp cornstarch (if desired)+ g) p9 ^, T9 X/ W- S( A
: n% P* q* B8 Q4 S# f- x9 Y$ F2 W3 M
Directions:
$ x) {, B; k$ h: pSlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. ) e* J3 P# P: U0 c5 u
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
4 N* l4 q- ^  k4 k# X4 EAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
5 ^- h6 [5 q" M; g( V0 t! k* JHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.2 ^9 W" v3 Z9 o  h7 W; J5 N: Z

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
