Beef with Broccoli

Beef with Broccoli

3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces
; n$ B/ {8 q! Z4 `, I" u7 r1 ~' v5 v+ X. z# U8 m# b, _+ x
Marinade for Beef:
5 r7 J6 ^" [/ e9 {0 W1 egg
* W1 T+ [7 R! f1/3 tsp (1.5 mL) salt0 q. Z6 j* r, r: i! j
1 Tbsp (15 mL) cooking wine# l! G+ c( x; r  z( z2 x
1 Tbsp (15 mL) cornstarch8 O$ i, y8 v: t' m1 N- ?% d1 i
2 Tbsp water! v/ Z' P" M, ^6 g; S

" z& N5 u+ }" a- @8 e1 1/2 Tbsp (20 mL) oil
' z! O/ p2 L% U! Q# w. n5 W1 x! N1 q: L) N4 ~3 |+ b* {" j
1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
3 Y( b; k+ B$ x, F& k1 cup (250 mL) cooking oil) g1 N5 E8 Y% I9 l8 B) I7 f
2 1/2 Tbsp (30 mL) oyster sauce
7 Z8 g1 s9 r' C3 ~7 {' d2 Tbsp (25 mL) light soy sauce5 S( ?6 |1 D6 \' b
3/4 Tbsp (10 mL) dark soy sauce
; N3 H- M  _  }8 C7 O+ ?1 Tbsp (15 mL) sugar
% i) |1 M* j' P+ P' j! ]' o! B0 J. j7 Ha few drops of sesame oil
- B7 D5 x* z, I' C; e9 w# A$ x2 cloves garlic, crushed3 u4 Q4 b) Q# }) W  S# j
1/2 cup (125 mL) chicken broth
* ^% h! }' _' G) s' f8 _2 Tbsp cornstarch (if desired)
5 p  X% }# ]8 X" b( d/ l+ ]
! W* H( p1 c; s' w  t6 j9 j+ }) TDirections:
% t! G* ^  G$ M5 W5 i# kSlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. ) M1 l9 n9 k- x; T. \
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
! f& e+ ~1 x6 s) d: D( RAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
  _8 R, n1 h$ g( ^3 `( _( R0 aHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
