Beef with Broccoli

Marinade for Beef:

1/3 tsp (1.5 mL) salt" f, r: _3 \7 d* G0 @% e7 C e
1 Tbsp (15 mL) cooking wine
( Y0 w" F: V$ G; B, Q' I1 Tbsp (15 mL) cornstarch: v+ K+ `$ o6 g. u
2 Tbsp water( s- K q1 S/ `8 ~& n& s

5 n! K2 C& S3 m3 x) e/ I1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices6 r! P) v% } |# j1 V0 O; e! O' z
1 cup (250 mL) cooking oil8 w) [# b9 H4 b0 K/ s
2 1/2 Tbsp (30 mL) oyster sauce

3/4 Tbsp (10 mL) dark soy sauce
9 o" f( K- _" f, U1 Tbsp (15 mL) sugar

2 cloves garlic, crushed3 d2 l8 w9 J3 V9 e
1/2 cup (125 mL) chicken broth% \# C$ y1 E( }
2 Tbsp cornstarch (if desired), j$ C4 L9 v; b7 Y# m7 Q

Directions:
- G, H. Q; h$ {7 y" FSlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. 5 z# N, f3 `! Z3 l. `- j9 k0 _8 ^
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.% Y+ G. {; K* W( ]/ S! a
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.
3 r& T; q( M6 AHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients. Serve hot.0 J. M8 a: k+ ]" P, d( I! u
