Beef with Broccoli

Ingredients:. a" q, m( ^# @! U( v0 P1 Y6 p
3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces: O+ Q5 w# Y0 v9 m' ~7 M9 t
* I5 Q. `8 j, r7 H" p
Marinade for Beef: 8 N% r4 Q6 |% ~% W
1 egg
, o% R+ O& g$ N: |1/3 tsp (1.5 mL) salt  W+ X$ ~, a$ u9 F+ A3 y
1 Tbsp (15 mL) cooking wine
) ]# U2 L5 g# k* h% V1 Tbsp (15 mL) cornstarch! k3 W0 x8 m2 C. _
2 Tbsp water
2 Y; E0 l4 W6 y0 o1 S" _1 g) w3 K/ d8 k# V
1 1/2 Tbsp (20 mL) oil; W+ b  W8 S/ a1 `4 l* `2 r7 h
/ ?! ^/ y$ q3 E$ q
1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices6 \$ l; m) ], t+ ^
1 cup (250 mL) cooking oil' O. W! H$ X; n
2 1/2 Tbsp (30 mL) oyster sauce
/ w4 X3 a1 `4 ^4 ?) s7 r4 Q2 Tbsp (25 mL) light soy sauce8 }) X9 r* f8 v7 I  F# U& h
3/4 Tbsp (10 mL) dark soy sauce
4 q: v" n" E$ H& i0 k$ U, r. P# t1 Tbsp (15 mL) sugar0 y2 x- o9 N& `9 A" R4 @, n: X( L
a few drops of sesame oil/ O9 v6 y; U2 D# p  V
2 cloves garlic, crushed
+ F. r2 h/ O5 g  b" U( n2 \1/2 cup (125 mL) chicken broth
5 Q% E7 D) i2 C2 Tbsp cornstarch (if desired)

Directions:, e& ^. ~( a- w2 e# Q  ]3 e9 H
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
* `* N' Q. ?, {0 W5 EHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
, ~# z% r# z" @  W, u" Z. EAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  ! k8 Y* b  ^5 |  I4 Q
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.% k" g: E* @6 Y2 s: C+ _

Variations
* O: l# W  W2 u' a7 ~- g+ T/ |*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
