Beef with Broccoli

Beef with Broccoli

3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces% f# m+ L# `6 }3 S9 E
# K6 Z# y3 s) c; _* m
Marinade for Beef:
) y1 H/ |; e6 t& A6 }8 Q1 egg
9 u8 c: N2 w3 L  P4 w% e2 }- u# G' P1/3 tsp (1.5 mL) salt* [2 W+ p% F6 O
1 Tbsp (15 mL) cooking wine# b# S+ S$ y  O: W3 B9 w, w, h) b
1 Tbsp (15 mL) cornstarch5 @' V; j! E2 Z3 ^6 s8 {
2 Tbsp water
  z8 x/ G# ^6 l% n# R3 R
1 i! O  U& ?! @1 1/2 Tbsp (20 mL) oil( R; Y9 o7 E+ r5 Z$ A* N! A

1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
9 s& ~+ t7 w* }1 cup (250 mL) cooking oil
. N1 K0 n8 U- I9 H0 L8 n2 1/2 Tbsp (30 mL) oyster sauce2 u8 ^# P5 C3 H  L! t: {( A/ d
2 Tbsp (25 mL) light soy sauce
  G0 D/ k/ A. c: @. q: c$ I% X& m3/4 Tbsp (10 mL) dark soy sauce: r" C. O9 R0 w% r1 A5 L
1 Tbsp (15 mL) sugar; w4 U2 h$ V4 r0 W/ \% j, k3 A
a few drops of sesame oil4 z  r) q7 v% l# W  l6 D
2 cloves garlic, crushed# @1 x# w( B' O* O, M! g9 ?" b0 b
1/2 cup (125 mL) chicken broth
1 M# q5 I7 `( P% F2 Tbsp cornstarch (if desired)

Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. $ _, W+ q  h' J  \9 P" R' w
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.3 H. \) ?3 I5 j8 r$ w# o% o
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  9 m+ B; ?& D) }  x- ?( _' h: t
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

& B4 I# T; V3 u7 i2 K*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
