Beef with Broccoli

Serves 3 to 4: ^( s. g* }$ _# Z5 h3 B

Ingredients:% D$ r) J$ @; S  |
3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces& O" K! |. V: X. ]' h! X, N4 U6 v

9 P) {1 D8 B7 [3 b$ @7 U" wMarinade for Beef:
7 o2 l( N+ P' ~1 p- E. }1 egg
+ N2 `0 O; ^3 V  _1 n/ e1/3 tsp (1.5 mL) salt
. m& l1 C' d. ?% w, p. c- X5 G4 e1 Tbsp (15 mL) cooking wine# ?& n1 j8 a! ?" T
1 Tbsp (15 mL) cornstarch8 _6 X4 g7 P2 a
2 Tbsp water

. g% `% L% P+ u% r" r- K. E) o1 1/2 Tbsp (20 mL) oil4 d1 t  j$ t' w

9 y' I% p) ~: v: ~' c" }6 p+ L1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
1 k2 Y$ G& i+ i6 [# I6 s  |: Q1 cup (250 mL) cooking oil
2 k5 R& l& B1 j, E$ |; b2 1/2 Tbsp (30 mL) oyster sauce( j+ a- }8 t1 k) G( |4 P
2 Tbsp (25 mL) light soy sauce: Y+ y* M) L; G5 i7 S7 b
3/4 Tbsp (10 mL) dark soy sauce
  E. k9 q1 n- K; p/ \7 R1 D$ w% Y, }1 Tbsp (15 mL) sugar
  [& X7 M: u) m+ Aa few drops of sesame oil% T1 u: N8 Z' ]
2 cloves garlic, crushed
+ N' z1 r; r* `5 n6 ^9 n- U1/2 cup (125 mL) chicken broth$ R1 ~; U( e6 Q
2 Tbsp cornstarch (if desired)
: s3 T( F" C' X3 x' R. P5 n) t" K1 M- Y2 `
Directions:1 O6 P9 p" X, c3 ]0 v) O
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
' y% c) q8 P# NHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.8 o* r# w9 b( W) _! n
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  ; b9 M  r' _2 i3 W2 b8 }/ `1 Y& H
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.5 T$ \5 @. U. h$ i8 G

Variations
! w+ G/ D' F. z6 j*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
