烤蛋糕
INGREDIENTS:

• 1/2 teaspoon vanilla extract (if you like the flavor, otherwise, none)
& l4 t; t6 k1 q+ l• 1 1/2 cups sifted flour or all purpose flour (former is better)7 J" J1 G1 X O, g$ C
• 1 1/2 teaspoons baking powder : q6 b9 C. A! ~5 h6 ?
• 4 eggs, well beaten

) w4 l8 O, I! U0 RBeat butter; gradually add sugar, beating until light and fluffy. Beat in vanilla. Sift together the dry ingredients; add to cream mixture alternately with beaten eggs, beating well after each addition.
O7 y. s$ A* x6 r: v0 sTurn into greased and floured 8-inch tube pan or 9 x 5 x 3-inch loaf pan. ( z5 c( C- [; [$ u, s
Bake in a preheated 350° oven for 45 to 50 minutes. Cool for 5 minutes in the pan then turn out onto a cake rack. Cool and glaze or frost as desired. Store tightly covered.

这是yellow cake,我最喜欢的,又简单。ingredients 我一般比较严格执行,否则变味,但是我通常要把糖的用量减至3/4到2/3,洋人用糖量太大,太甜了。但如果你认为cake mix的甜度适合你的口味,就用上述的量。6 \2 P2 l3 S" ~7 o$ K
beating,要用mixer, 一般的$10左右的hand mixer 就可以。烤蛋糕,面包,或做土豆泥等都用得上。
