• 1 1/2 teaspoons baking powder

PREPARATION:1 S! }6 F& g* r( A* `0 O
Beat butter; gradually add sugar, beating until light and fluffy. Beat in vanilla. Sift together the dry ingredients; add to cream mixture alternately with beaten eggs, beating well after each addition. 7 n6 y3 ^( P( f$ g; I5 B7 v8 o
Turn into greased and floured 8-inch tube pan or 9 x 5 x 3-inch loaf pan. + f7 k& \, x& b. M7 E
Bake in a preheated 350° oven for 45 to 50 minutes. Cool for 5 minutes in the pan then turn out onto a cake rack. Cool and glaze or frost as desired. Store tightly covered.4 F: x( ~+ j2 C! \: E

I normally strictly follow the amount for each ingredient the recipe calls for, except SUGAR( I prefer to cut it to ¾ or 2/3 of the recipe. It is too sweet for some Chinese. But if you like the sweetness of the Cake Mix you got from super market, you can follow the recipe.

For beating, you can buy a simple Hand Mixer for about $10. It can not only be used for making cakes but also bread, or mashed potatoes(土豆泥)ect. |
