• 1 1/2 cups sifted flour ( if you don’t like the trouble, use all-purpose flour)

PREPARATION:
# {. d+ B' D6 ]4 n4 f2 jBeat butter; gradually add sugar, beating until light and fluffy. Beat in vanilla. Sift together the dry ingredients; add to cream mixture alternately with beaten eggs, beating well after each addition.

Bake in a preheated 350° oven for 45 to 50 minutes. Cool for 5 minutes in the pan then turn out onto a cake rack. Cool and glaze or frost as desired. Store tightly covered.# {/ M' W! r7 C# G" l" G+ c$ c9 B

. _8 u' q7 r; mI normally strictly follow the amount for each ingredient the recipe calls for, except SUGAR( I prefer to cut it to ¾ or 2/3 of the recipe. It is too sweet for some Chinese. But if you like the sweetness of the Cake Mix you got from super market, you can follow the recipe.* N S+ h2 r- n6 M, A% L2 Q" k

For beating, you can buy a simple Hand Mixer for about $10. It can not only be used for making cakes but also bread, or mashed potatoes(土豆泥)ect. |
