• 1/2 teaspoon vanilla extract( if you like the flavor)

• 4 eggs, well beaten. D& q: g& g2 o" v( V: j
PREPARATION:
$ S$ _& z! I& h2 m. }5 H4 Z% nBeat butter; gradually add sugar, beating until light and fluffy. Beat in vanilla. Sift together the dry ingredients; add to cream mixture alternately with beaten eggs, beating well after each addition.
$ L) @1 H+ l0 H: _1 L- j! gTurn into greased and floured 8-inch tube pan or 9 x 5 x 3-inch loaf pan.
- i- Z; i+ x( b) ]( }Bake in a preheated 350° oven for 45 to 50 minutes. Cool for 5 minutes in the pan then turn out onto a cake rack. Cool and glaze or frost as desired. Store tightly covered.

I normally strictly follow the amount for each ingredient the recipe calls for, except SUGAR( I prefer to cut it to ¾ or 2/3 of the recipe. It is too sweet for some Chinese. But if you like the sweetness of the Cake Mix you got from super market, you can follow the recipe.; N' V# l5 E G) P
- Y6 ?/ g# D% B' V8 qFor beating, you can buy a simple Hand Mixer for about $10. It can not only be used for making cakes but also bread, or mashed potatoes(土豆泥)ect. |
